Hello friends! Today we're going to show you how to make the Portuguese traditional classic creamy sponge cake: Pão de Ló de Ovar.
This is definitely one of the most mouth watering piece of sponge cake you have ever seen. Pão de Ló in Portuguese means “Sponge Cake”, it is one of the most popular and traditional dessert in Portuguese. Pão de Ló de Ovar is thought to have originated in a convent in 18th-century. And the sweet is now registered with Protected Geographical Indication by the European Union. Since 2011.
Pão de Ló might have different version, depending on the region of Portuguese, it reflects on the texture and flavor. Pão de Ló de Ovar has unique moist and runny texture, it melts at every bite. How to make Pão de Ló at home,
Portuguese Classic Sponge Cake Recipe
☞ cake mold: ⌀ 18cm Diameter
✎ Ingredients
egg 2, room temperature
egg yolk 5, room temperature
granulated sugar 90g
cake flour 45g
a pinch of salt
lemon zest half
✎ Instructions
1. Wrap outside of pan in a 5 layers of aluminum foil and mold to come up over the edges of the pan.
2. Line with a round baking paper on the bottom and two strips of paper on side. You can also line only one large baking paper as you like.
3. Zest a half of lemon into sugar, rub the sugar and zest mixture between your fingers, working the zest into the sugar.
4. Beat 2 eggs, 5 egg yolks and a pinch of salt on med-speed for 1 minute.
5. Add sugar in 3 batches, and beat for half minute each time. But after adding the rest of sugar, beat for 10 minutes on mid-speed. At the end, The volume of the egg mixture will become 4 times larger, and the texture will be light, pale and fluffy.
6. Preheat the over to 220°C
7. Sift flour into egg mixture. Gently and carefully whisk on very low speed until smooth.
8. Pour batter into prepared pan and bake for 8 minutes and then lower the temperature to 180°C for 5 minutes, or when it golden brown on the top, and the center should shake a little. Cooking time will be different from oven to oven and with the type of pan you use.
9. Let it sit in the pan until cool, then place in fridge for hours or overnight. Enjoy.

This castella pancake is very popular because of a Japanese TV series named "Solitary Gourmet (孤独のグルメ, Kodoku no Gurume) " which based on a bestselling comic. The story is about a traveling salesman Gorō visits lots of places on business, but he gets hungry easiely after visiting customer, so finding a local cuisine to enjoy is the most important thing of his day.
This dessert appeared in the fourth episode of the eighth season. It’s fluffy and smell so good. You can tell it's the one of the most comforting food. In this video, we’d like to share with you how to make it at home, just use a cast-iron skillet. This pancake is a matter of time, so the most important thing is always serve immediately out of oven. :-)

Castella Pancakes/Skillet Souffle Pancake Recipes
Cast-iron skillet size : Ø 16cm
✎ Ingredients
egg 2
granulated sugar 35g (10g for yolk, 25g for egg white)
honey 15g
milk 30g
cake flour 40g
baking powder 2g
butter, powdered sugar for garnish
✎ Instructions
1. Oil the skillet (Canola oil or grape seed oil is ok)
2. Separate egg yolks from egg whites. Place the egg white to freeze for 5-10 minutes.
3. Mix egg yolk with 10g granulated sugar, honey and milk, whisk until well combined.
4. Sift the flour and baking powder into the egg yolk mixture. Whisk until the flour is no longer visible. Set aside.
5. Beat egg whites on medium high speed. Gradually add sugar in thirds, beating until soft peaks form.
6. Add 1/3 of the meringue into egg yolk batter and mix well until the meringue are no longer visible.
7. Pour the batter into meringue, blend with a spatula to mix the batter to be smooth flowing and glossy.
8. Pour the batter into a 16cm cast-iron skillet, knock the pan lightly over the table to remove the larger air bubbles.
9. Preheat the oven to 180°C, bake for 20 minutes in total, at the 9 minute, take it out, use a sharp knife to cut a cross marking on cake's surface. Return into oven immediately, continue baking until cook though.
10. Remove from oven, top with a pad of butter and sprinkle some powdered sugar. The cake is incredible fluffy and delicious, enjoy it immediately.

Dalgona Coffee Recipe Recipe
✎ Ingredients
☞ Macao hand beaten coffee
instant coffee 1 tbsp
granulated sugar 1 tbsp
hot water 1 tbsp
☞ Korean dalgona coffee
instant coffee 2 tbsp
granulated sugar 2 tbsp
hot water 2 tbsp
☞ Crema de Café Mágica
instant coffee 1 tbsp
iced water 4 tbsp
powdered sugar 6 tbsp
✎ Instructions
☞ Macao hand beaten coffee
1. In a coffee cup or a mug, add 1 tbsp of instant coffee, sugar and hot water, or in 1:1:1 ratio.
2. Using a scoop, first to mix all ingredients until melted, then beat until it starts appearing froth.
3. Keep beating for a while until it becomes thick and creamy, then add hot water and milk, mix to combine and enjoy.
☞ Korean dalgona coffee
1. In a large bowl, add 2 tbsp of coffee,
sugar and hot water. Use a hand mixer, first to beat in low speed until all ingredients are dissolved, then switch to high speed and whip until soft peak and frothy.
2. Fill 2/3 glass of milk and ice.
3. Spoon the creamy coffee foam to the top, stir thoroughly into the milk before enjoy.
☞ Crema de café magica
1. Mixing 1 tbsp of coffee, 4 tbsp of iced water and 6 tbsp of powdered sugar.
2. Use a hand mixer to start whipping on medium speed, then switch to high speed to get the frothy mixture of the cream as stiff peak.
3. Spoon the coffee cream into to the piping bag, set aside.
4. Put the digestive biscuit in a plastic food bag and crush to crumbs by a rolling pin. Then add ¾ of the crumbs into a dessert cup, and pipe the coffee cream on top, volia!
