This is for all the nut lovers out there! Healthy home made cashew butter
Ingredients:
3 1/2 cups organic natural cashew nuts
2 tablespoons pure coconut oil
Directions:
1) Place nuts in a bowl and fill with filtered water, making sure to cover the nuts completely. Cover and place in the fridge for two hours
2) Once time is up, drain, discard the soaking water and rinse nuts with fresh water
3) Preheat oven to 160C
4) Line a tray with baking sheet and lay nuts out in a single layer. Roast for about 10 to 18mins, making sure to watch it carefully to ensure it doesn't burn!
5) Once done, place in a food processor and grind to a fine powder (2 to 10mins). At this time add the coconut oil.
6) Continue processing until it becomes smooth and creamy, stopping to scrape down the sides every min or two. This may take 10 to 15mins depending on the strength of your food processor.
7) You can add some salt and honey at the end and continue processing for another minute if you want. But I thought it was great without any.
8) Enjoy!! ❤️
Ps: The mixture should turn smooth and creamy and move around easily in your food processor. Feel free to add a bit more coconut oil if needed.
