Have to enter an eatery and climb up a few flights of very low and narrow steps to get to this hidden gin/cocktail place which is home to about 100ish gins. It has 2 floors. The one with this full bar and the other is on the rooftop overlooking the church. It's quite an awesome place to chill.
Kim chi - Rosemary & Raisin infused Gin, Poached Pear & Vanilla Shrub, Pink Radish Cordial, Soju Seaweed, Orange Bitters, Egg White. The pear is soooo strong. The combination of flavours is quite a party in your mouth.
Cocos - Cocos-infused Dark Rum, Pineapple Pandan Syrup, Lime Juice, Cherry Bitters, Angostura Bitters, Curry Cocos Soda. Very easy drinking, on the sweet side but refreshing.

Love the vibe, the deco, the drinks.
He had the Dead Poet (twist of the martini with saffron infused gin and addrd licor43). That burnt orange slice somehow reminds me of bakwa. Mmmm.
I had the 55th Avenue (pretty much a new York flip with their own homemade mulled wine and vanilla) which was uncomplicated and yum. Both B340.

1/ 虹吸式浸泡烈酒,是運用虹吸式咖啡壺coffee siphon將液體從下層加以熱至沸點而透過蒸發運用壓力將液體迅速傳送到已放置香料的上層位置,控制好適當的時間後,再將下層降溫,使已浸泡於上層的酒液返回下層位置並已迅速達至infuse效果.
2/ Blue Blazer是調酒大師Jerry Thomas的代表作,從前這杯調酒的材料很簡易,以威士忌,糖,苦精及熱水,將材料燃點後於兩個鋼杯互相交替將酒液來回滾動.發展至現代調酒術有很多朋友將此歸納為調酒型式的一種.燃點的主要功用有兩大重點,第一是為了讓飲者從感官視覺上感受溫暖,同時亦是表演作用之一,固此Blue Blazer亦有"花式調酒的原點"這個講法;第二是運用火燃燒酒精,減輕酒精入口時燙喉的酒精感,同時帶出散發香味.
- 現今調酒技術發展以浸泡Infusion技巧將原材料風味注入液體身上有好幾種不同方法,除了虹吸,還有Sous Vide真空低溫處理,Cream Siphon N2o壓力處理等等. 個人認為運用熱力的虹吸infusion可套用於熱雞尾酒身上,固此選擇了Blue Blazer Style創作雞尾酒 - Flower Thief 為影片示範
