Using a similar method use for making cantonese roast duck, we created our crispy mandarin peel duck using the Weber Q. We used dried mandarin orange peels in our dry rub and also used fresh mandarin oranges in our sauce, just to go along with the roast duck!
By blanching the skin with maltose and vinegar mixture, we help to firm up the skin before air drying it. This is key to help create crispy skin when roasting the duck in the weber Q in indirect heat with the use of the roasting shield. The best part is that this only takes an hour!
The mandarin orange base sauce, which is made using plum sauce, is sweet and tangy and helps to cut the richness of the roast duck. A tasty recipe for a home brunch of a outdoor BBQ day!

Recipe
Le Jean’s Festive Peking Duck
Ingredients
1 Le Jean’s whole Peking duck, 2.2kg
2 tablespoons butter
1 tablespoon five spice powder
2 oranges, sliced into 1 cm rings
1 pineapple, cut into 2cm rings
1 teaspoon sea salt
For the glaze
100g orange marmalade
1 tablespoon honey
1 tablespoon light soy sauce
100ml pineapple juice
1 tablespoon minced ginger
1. Preheat the oven to 160C/150C Fan/Gas 3.
2. Melt the butter and add the five spice powder. Give a good mix.
3. For the glaze mixture, add all ingredients in a bowl and give a good mix.
4. Score the breasts of the duck and transfer into the oven dish. Rub the butter and five spice mixture on the duck on both sides. Season with salt and stuff the cavity with half quantity of orange slices and pineapple rings.
5. Tie the duck legs. Roast in the oven for one hour then take it out and rub with the glaze mixture. Add the remaining orange slices and pineapple rings and put back in the oven and roast for 30 minutes. Then take it out again and brush the final glaze mixture and put back in the oven to roast for the final 30 minutes.
6. Take it out from the oven and let it rest for 10 minutes before serving.
