Vegan的概念不僅僅是盡量不傷害動物,還包括保護和維持生態,如盡量零廢棄、自然農法 (無肥料栽培) 等等,至少對我來說是這樣吧 (我也還在努力)。
「菜市場」的理念跟我的很相似,所以特別支持和欣賞,早陣子,他們更休市了一個月,親身去做田野調查、學習有機和自然農法,這次回來,他們重新整理了菜單,真的很期待他們如何用在地食材,呈現那不曾被發現的味道!
回到這次的體驗,食物味道、擺盤和環境都十分滿意,兩位雜食朋友都很喜歡喔!特別喜歡他們的手工意大利麵,還有擂茶豆乳和裸旦糕呢~

The concept of Vegan is limited to try not to harm the animals, but also to protect and maintain the ecology, such as zero waste, natural farming methods (no fertilizer cultivation), etc., at least that's what vegan for me (I am still working on it).
The concept of "Vegan Project" is very similar to mine, so I especially support and appreciate it. A while ago, they have been closed for a month, and they went to field research and learn organic and natural farming methods. This time, they reorganized the menu. I am really looking forward to how they use the local ingredients to present the taste that has never been discovered!
Back to this experience, the taste and display of the food, the environment, everything are very satisfied, both of my omnivorous friends like it too! I especially like their handmade pasta, as well as soy milk with Hakka mix nuts and raw cakes~

要不要施肥呢?

最近,有人推薦一種肥料給我,他説這種肥料有特殊的營養成分,人吃了施放這種肥料的農作物,身體會變健康。
這幾天,我一直在思考是否要測試這種肥料,想了很久以後,還是放棄了。
因為以前我做過實驗,把慣行,有機,和自然三種小黃瓜加水放置,經過10天以後,慣行與有機的小黃瓜,外型都糊掉了,而自然農法的小黃瓜還很完整。慣型和有機小黃瓜的味道都很臭,而自然農法的小黃瓜,則是酸酸的,猶如酵素的味道。
有個朋友也實驗,把慣型與有機的小黃瓜切片放置,幾天以後兩種都腐爛了。慣型的小黃瓜,味道猶如化學物質,很刺鼻;有機的小黃瓜,發出有機肥的味道。
肥料再怎麼好,還是人為的操控,不可能做到像大地的營養成份的均衡,所以我還是堅持不施肥。
Recently someone recommended a kind of fertilizer to me. The person told me the fertilizer consisted of special nutrition ingredients, making people healthy after eating the crop fertilized by it.
I have been thinking these days whether testing this fertilizer on my farm or not. After a long period of consideration, I decided not to use it.
The reason was I made an experiment long time ago, putting three kinds of cucumbers in water: a conventional-farming cucumber, an organic-farming cucumber, and a natural-farming cucumber. After ten days, the conventional-farming one and the organic-farming one were rotten while the natural-farming cucumber was in good shape. In addition, after soaking in the water for ten days, the conventional-farming cucumber and the organic-farming one smelled stinky, but natural-farming cucumber smelled as sour as the enzyme.
A friend of mine experimented as well, cutting the cucumber into pieces and putting them in the air. After a few days, both of them were rotten. The conventional-farming cucumbers smelled as chemicals and very pungent; the organic-farming one spread out the smell of organic fertilizer.
No matter how great the fertilizer is, it is still manipulated by human. It cannot balance all the nutrients as the Mother Earth does. Therefore I still insist on not using any fertilizers.

Today, we would like to introduce our second finalist for “Who’s the Next Boss” – Senna Kong, a Scenic Designer. Her business proposal for the contest is Urban Rooftop Farming.
The whole idea of the concept is to create green lungs in the heart of the city by growing vegetables hydroponically on the rooftops of high rise buildings. Living on the top floor of a service apartment, Senna finds that most of the time, the rooftop is left vacant. Hence, the thought of putting good space to use inspired her to come out with this proposal.
In her opinion, the concept of urban farming not only “greens” the environment, but can also produce organic vegetables at the same time. As for the financial part, she mentioned that in order to keep the cost low, she would apply the natural way of farming, that is, to cultivate fish at the same time and to use the excrement from the fish as fertilizer for the vegetables.
Besides helping clients set up their urban farm, she will also provide management expertise. “Of course, it would be best if the clients can get themselves involved along the process too, ” she said.
With regard to Senna’s business concept, one of the panel judges, Bryan Loo commented: “Besides selling organic vegetable, she can also consider opening a salad bar and café. This will provide value added services to the consumers, and to further promote the concept of healthy living.”
今天,我们的节目迎来了“我要做波士”的第二位入围者,她的名字叫江宜霏,是一名景观设计师。她参与竞赛的企业模式就是建立城市空中菜园。
这项计划的旨意,就是在一片钢骨水泥中开发出一片绿意,在天台中进行水耕蔬菜种植。本身居住在服务式公寓顶楼的宜霏,觉得空着的天台显得浪费,因此启发了城市空中菜园的概念。
她认为,这项概念不但可以绿化环境,同时也提供上等廉宜的有机蔬菜。提到资金方面,她采取了循环式的耕种方式,以将成本降至最低。何谓循环式耕种方式?那就是在水里进行鱼类培植,鱼类所排放出来的排泄物就成了蔬菜的天然肥料,一举两得。
在帮助顾客建设空中菜园过后,顾客可以选择由专人提供的管理配套。“当然,如果顾客本身可以参与整个过程,是再好不过。”她说。
针对宜霏的企业概念,身为评委之一的Chatime首席执行员Bryan Loo就认为,除了售卖有机蔬菜,还可以考虑在天台上开设沙拉吧和咖啡馆,让顾客体验不一样的风景,进一步推广健康的绿色概念。
