My 7 & 9 year old planned, cooked and decorated this plate of art together without me!
I still remember teaching my older daughter how to cook scrambled eggs when she was 4 and now her scrambled eggs are better than mine! Children are so much more adventurous when you let them take charge of preparing and cooking their own meals. They may even surprise you with the vast array of ingredients they choose!
Do let your kids cook on their own?
Hashtag #leesamantha to share pictures of when your kids takeover the kitchen! I would love to see them! 💙

Somen is perfect refreshing food for hot and humid summer season :)
Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).
Kids requested me to make Edamame and Corn Nagashi Somen (Flowing Somen). Edamame and corn were pretty easy to catch and eat 😉 Kids enjoyed it very much 👍

I used this Mentsuyu (noodle soup base) btw: ヤマサ ぱぱっとちゃんと これ!うま!!つゆ https://amzn.to/3xOqyZq
Dilute with water as instructed on its package.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water.
NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.
((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

Easy Tornado Omurice (Dress De Omelette Rice with Demi-Glace Sauce)
Difficulty: Easy
Time: 30min
Number of servings: 2
Ingredients:
4 eggs
320g (11oz.) cooked rice
150g (5.2oz.) chicken
100g (3.5oz.) onion
4 tbsp. tomato ketchup
salt and pepper
Sauce
* 150g (5.2oz.) demi-glace sauce
* 2 tbsp. tomato ketchup
* 50ml milk
* 50ml water
corn starch
milk
cooking oil
butter
parsley flakes
Directions:
1. In a small pot, put demi-glace sauce. Add water and milk little by little and mix well. Mix in tomato ketchup and cook on low for 3~4 minutes.
2. Dice the chicken and season with salt and pepper. Dice the onion as well. You can add more vegetables if you like.
3. Heat 1 tsp. of cooking oil in a frying pan and cook the chicken and onion until heated. Mix in rice and ketchup, then season with salt and pepper. Put one serving in a small rice bowl then flip it upside down onto a plate.
4. To make one serving of tornado omelette, crack two eggs in a bowl. Dissolve 1 tsp. of starch with 2 tsp. of milk. then add it into the egg. Add salt and pepper, then mix well.
5. In a frying pan, heat 1 tsp. of cooking oil. When the oil is hot enough (put a bit of egg to check) add 1 tsp. of butter. Turn the heat down to low, then add the egg mixture. Wait for 10 seconds, when the edges begin to appear solid, pinch with chopsticks and twist by moving the frying pan until you see a nice drape. You don't need to move too much, just stop when you see a nice drape.
6. Slide it on top of the chicken rice. Put the sauce around the Omurice. Garnish with parsley flakes to finish.

One day I saw Bibimbap on my daughter's elementary school lunch menu and wondered how they serve it. I asked her teacher and learned that they make it in one pot!
It is a great idea if you quickly want to make it in a large batch for your family 😉
