Made with black tea (紅茶)powder from Kyoto and fridge pack sliced pineapples from @dole.singapore which are actually the perfect sizes for such tarts. I once had black pepper in a pineapple pastry from one of the Tokyo patisseries and decided to remake it this time by pairing it with a strong flavored tea which will not be covered by the sweetness of the fruit.

We visited Huat Huat Land at Singapore Chinese Cultural Centre this Chinese New Year to behold their life sized pineapples, beautifully illustrated murals and gigantic mahjong tiles. We were then inspired to create a recipe using leftover ingredients from Chinese New Year like pineapples, Sio bak and bak kwa!

Here's a simple recipe that you can make with your leftover ingredients that tastes amazing! The combination of pineapples and Sio bak is just heavenly as there is a balance of sweet, savoury and tart. The taco shells also add a nice crunch to the texture together with the fried shallots.

Do check out the Huat Huat Land exhibit, going on until the 31st of March 2020

(Eng sub & Tiếng Việt) The crispy buttery shortbread cookies match perfectly with sweet & sour pineapple fillings. It takes some time for the shaping but the results are definitely worth the efforts.

INGREDIENTS

A. Pineapple filling

* Sugar syrup

50 grams granulated sugar
50 ml water

* Pineapple jam

400 grams pineapple
60 grams granulated sugar
2 tbsp (30 ml) sugar syrup

B. Shortbread cookies

150 grams unsalted butter
225 grams all purpose flour
90 grams icing sugar or superfine sugar
2 egg yolks
¼ tsp vanilla extract
