Maria’s soya sauce chicken recipe came from her dad who owned the legendary Lam Thong Tea House which was founded in 1926, in Chinatown. After her father’s business folded, Maria subsequently opened a stall in Maxwell before moving to Chinatown Complex.
Maria’s soy sauce chicken was excellent. Just look at that nicely glazed skin, which has absorbed the colours and flavours of the superior soy sauce dressing. On the first bite, you can detect a subtle fragrance of rose wine, and herbal notes. The meat, which was cooked to the right temperature with the bone hollows still pink, was really tender and springy. Even the breast meat was so juicy!
While you’re here, you must must must order the Signature Braised Beancurd ($1.40 per piece) which comes drenched in a sweet and savoury braising sauce. It’s soft, it’s smooth, it’s jiggly. This one really stole the show.

In this episode, we whipped up a 3.5KG Nuclear Mac’N’Cheese in Neo’s Kitchen using Samyang’s Hot Chicken Sauces. We are all familiar with the traditional forms of Mac’N’Cheese, be it purely cheese and pasta goodness, juiced up with bacon and spring onions or cooked with evaporated milk. Instead of following the tried and tested methods, we decided to spice ours up quite literally with the fiery concoctions made by Samyang. Samyang is a famous brand from Korea that are known for their spicy products.
Hot Chicken Sauce comes in 3 varieties, Original (in black), Extreme (in red) and Cabonara (in pink), and are available island-wide in quaint bottles. Other than the addition of these sauces, we did not veer much from your standard Mac’N’Cheese. Using Gruyere and Cheddar as our cheeses, we tossed 2 bags of elbow macaroni into the resulting Mornay sauce. To the Mornay, we added the Extreme and Cabonara varieties of the Samyang Hot and Spicy Sauce. The Mac’N’Cheese was then piled onto our Giant Plate and garnished with more grated cheddar, spring onions and additional drizzles of the sauces.
The Mac’N’Cheese was deliciously heavy as expected, thick and gooey. The Carbonara sauce was mild and creamy, very suitable for those with low spice tolerance while the Extreme sauce was spicy as expected, but not overwhelming and perfect for Asian palates. Mixing them into the Mac’N’Cheese gave it a distinct red colour and a refreshing kick to the savoury dish. The sauces were slightly salty, so reduce your added salt if you attempt this dish. Our choice of Gruyere and Cheddar came together beautifully, bringing nutty and salty notes to the pasta.
As expected for a heavy milk-based dish, it became a struggle towards the end but I pushed through. One thing about the Samyang Hot Chicken Sauces is that you can customise the spice level simply by adjusting the amount of it you squeeze into the dish you are making. They are also very versatile, especially for spice-lovers and the adventurous, as the food you can use them on are almost limitless. Samyang Hot Chicken Sauce would be a great addition to your pantry to add the perfect flaming twist to your food, so get them at supermarkets near you today!

For this video, we went down to Wow Wow West at Bukit Merah to do a huge Western Food Platter Mukbang. I decided to do a Mukbang and not a speed challenge because my throat is still recovering from the Monster Curry Challenge. Western food served by Singaporean hawkers are generally English and Italian inspired dishes that have been adjusted for local tastes. Wow Wow West is no different, serving affordable but gigantic portions of Fish and Chips, Chicken Chops and Grilled Cheese Sausages among others. Each dish comes with sides of French Fries, Coleslaw and Baked Beans. Wow Wow West has been around for almost 20 years, with their massive portion size never changing.
For my Western Food Platter Mukbang, I brought my giant plate which was loaded with 2 servings of Fish and Chips, a Chicken Cutlet, a Chicken Chop, a Pork Chop, 2 Cheese Sausages and heaps of their sides. The Fish and Chips, breaded and not battered as is the norm here in Singapore, came with a distinctly pink tartar sauce that added a sweet and savoury dimension to the crispy whole fillets of fish. The chops were drowned in a brown sauce that was also sweet and savoury but in a meatier way and complemented the pure unadulterated flavours of the meats, which were grilled superbly. The Chicken Cutlet came as expected, well-seasoned and crunchy, while not dry on the inside. The Cheese Sausages naturally had cheese inside them and were made with natural casings. They were not overly salty nor did they taste like processed meat.
For the sides, the French Fries were crispy on the outside and tender on the inside while being well-seasoned. The coleslaw was unicolour and similarly one-dimensional in flavour, but rounded off the meal as a vegetable dish. The Baked Beans came from a can, so you would either like them or hate them.
It was an enjoyable Mukbang for me to do as it brought back a flood of childhood memories that most Singaporeans would be familiar with. The food was good for hawker fare while being both affordable and large in portions. However, they do not offer this Western Food Platter on their menu for those who would like to try this mukbang, but you can mix and match through their usual menu to replicate it.
