我們的女兒住在倫敦,她通常每個月都會回家一次。但由於目前的情况,導致我們失去了這個月的家庭共聚時光。幸而還可以通過每天的短信和每週的 FaceTime 通話保持聯繫,互相發送我們之間的做菜照片。她是一位忙碌的時代職業女性,也喜愛下廚。但是在冠狀病毒爆發之前,她每天的生活節奏有時實在很難讓她好好地準備餐點。
自軟性封城以後,她開始在家工作,節省了往返交通得來的時間,便用來泡製健康美味的晚餐!
有時很希望我們能够在同一個地方分享這些飯菜。幸好相隔雖遠,起碼我們還能在網上連接起來。
昨天她給我發了她做椒鹽豆腐的照片,說:「 這道菜是我一直以來最愛吃的,很高興現在可以自己做!謝謝您的食譜,太好了!這是我這星期吃過最美味的一餐。」
聽後真令我感到開心!
然後在傍晚,我收到了另一個訊息,這次是來自住於北威爾斯一個小鎮 Mold上,一位我們的顧客,可愛的 Rachel Alexander。她說:「嗨,我們今天做了您的椒鹽豆腐食譜,真是太美妙了!謝謝!我們 6 歲的女兒也樂於幫忙呢!」
這樣簡單的一個小菜卻被那麽多人喜愛真是神奇。由此可見食物可以把我們團結一起,養活我們的身體,滋養我們的靈魂。
Our daughter lives in London. She usually comes home once a month but due to the current situation, we’re missing this month’s family time together. Luckily we stay in touch by messaging every day catching up on FaceTime once a week. We also like to send each other pictures of food we've both cooked. She’s a very good cook herself and a busy career woman. Before the Coronavirus outbreak, her everyday routine often made it hard for her to find the time to prepare meals from scratch daily.
Since the lockdown, she has been working from home. The time she has saved by not having to travel back and forth to work she has used to make healthy and delicious dinners to enjoy!
Sometimes we wish we could be together to share these meals. Thankfully due to modern technology, although we are physically apart, we can still connect and be together online.
She sent me the image of her Salt and Pepper Tofu yesterday, and said, “ This has always been one of my favourite dishes of all time, so happy that I could cook it myself now! Thanks for the recipe, it was so good! Best meal I have had all week.”
That totally made my day!
And then in the evening, I received another message, this time from Rachel Alexander, a lovely customer from Mold, North Wales. She said, “ Hi, we made your salt and pepper tofu recipe today and it was amazing! Thank you! Our 6 year old daughter enjoyed helping.”
How wonderful is it that such a simple dish can be loved by so many people. Food can really unite us together, feed our body and nourish our soul.

Spanish Chorizo Clams by Jimmy’s Table
As the first dish for my new travel series recipes, I chose the Spanish Chorizo Clams, one of our favorites and must order tapas when in Barcelona. Please check out the link in my profile for the newest recipe!
This is a such a great and simple seafood dish to make at home. What’s best is it’s perfect with a nice crunchy baguette to soak up the garlic butter wine clam soup! Whenever Rachel and I travel, we plan our days around food. Where are we going to eat? How do we get there? What can we eat as a snack along the way? When I first ate this, I thought, “Should be easy, I am going to recreate this at home!” And it was! I hope you like this recipe!
Ingredients 食材:
0.5-1 kg of Clams - soaked in salt water for 30 minutes) (蛤蠣)
200 grams of Chorizo also known as Spicy Spanish sausages (西班牙香腸)
1/2 cup (15 pieces) of Garlic - sliced (大蒜)
1 cup of Cilantro - leaves only (香菜)
2 lemons or limes - halved and squeezed for juice, seeds removed (檸檬)
1/2 stick of unsalted butter (無鹽奶油)
1-2 tablespoons of paprika (紅甜椒粉)
1 glass of white wine (白酒)
3-4 tablespoons of olive oil (橄欖油)
Salt and Pepper - for taste (黑胡椒)
Finishing Ingredients 撒料調味
1/2 lemon (檸檬)
1/4 cup cilantro (香菜)
Fresh loaf of crunchy french bread (法國麵包)
STEP 1
Start by soaking the clams in salt water to clean the clams. While clams are soaking, start by cutting 1/2 cup (approximately 15 pieces) of garlic slices.

首先將蛤蠣浸泡在鹽水中,讓蛤蠣吐沙清潔。同時準備1/2杯 (大約15顆)蒜頭,切片。
STEP 2
Prepare and cut chorizo slices. First remove the outer sausage skin covering by gently cutting along the sausage.

準備切西班牙臘腸切片,先用刀子將外層的膜輕輕的劃切開,再切片。
STEP 3
Prepare cilantro by removing the stem and using only the leaves. Also cut lemon in half to use for cooking.

STEP 4
On the stove, add in 3-4 tablespoons of olive oil and heat up your pan. I am using a cast iron pan because it cooks at a more even temperature.

STEP 5
When the oil is very watery in the pan and you see a little white smoke, it is hot enough. Add in garlic slices and stir to cook until slightly brown.

STEP 6
Add in sliced chorizo so the olive oil absorbs the garlic and spicy sausage flavors. Cook and stir for about 2-3 minutes. Garlic should not be too dark and chorizo should be cooked so that the fat from the sausage melts into the oil. Adjust the heat as needed.

Drain and rinse the clams in water. Add in clams to the garlic and sausage.

Stir for 2 minutes and add in 1/2 glass of white wine.

Squeeze in half a lemon. Save the other half if you want it more citrusy.

Add in 1 teaspoon to 1 tablespoon of black pepper and salt for taste.

Add in 1-2 tablespoon of Paprika and stir. Taste and adjust flavor as needed.

When 70% of the clams are open, add in cilantro leaves and stir

Add a bit of wine and 1/2 lemon to give it a flavorful wine taste and more lively citrus touch at the end. When 90% of the clams are open, you can turn off the heat.

STEP 15
For plating, you can either serve it in a pot or directly using a cast iron pan. Prepare some sliced french bread for dipping. Add in half a lemon. I used a torch to burn the lemon for a good lemon smell, but it can also be squeezed into the clams.

關於擺盤,可以直接使用烹煮時的鐵鍋,或者準備鐵盤來擺也很有西班牙的風味。準備一些切片的法式麵包。我用噴槍稍微烤檸檬切面,以在這道菜聞到更濃厚檸檬的香氣,也可以將其擠入菜中。
STEP 16
Put in the lemon and top it with more cilantro leaves. Serve and eat hot !

Thai Pomelo Salad by Jimmy’s Table
Sauce Ingredients (食材):
1/4 cup Fish Sauce (魚露)
1/4 cup Vinegar (白醋)
1/4 cup Sugar (糖)
1/4 cup Garlic (大蒜) - minced
2 Red Chilis (小辣椒) - minced
4-5 Limes (青柠檬) - halved and squeezed for juice, seeds removed
1/2 cup Cilantro (香菜) - leaves only, chopped
1/2 cup - Mint (薄荷) - leaves only, chopped
1/2 cup -Basil (九层塔) - leaves only, chopped
Key Ingredients:
1 Chicken breast (鸡胸肉) - boiled
18 Shrimp (虾仁) - boiled
1 Pomelo or 4-6 grapefruit (柚子,葡萄柚) - peeled, fruit removed
Finishing Ingredients:
1/2 cup Cashews (腰果)
1/2 cup Peanuts (花生)
1/4 cup Deep fried shallots (炸小葱头)
1/4 cup Deep fried garlic (炸大蒜)
Steps:
1. Make the sauce by adding fish sauce, vinegar, sugar, minced garlic, minced red chilis and lime juice. Taste for a balanced salty, sweet, sour, spicy flavor. If it's too salty, add vinegar and sugar to dilute and balance. Add limes to make it more sour, chilis to spice it up and fish sauce for more funkiness!
2. Add chopped cilantro, mint and basil to the sauce.
3. Boil chicken breast and hand peel off pieces of chicken into thin strips of chicken. Chicken soup can be cooled and saved as chicken stock for other dishes.
4. Devein and remove shrimp shell. Boil shrimp.
5. Peel pomelo or grapefruit for just the meat of the fruit
6. Mix pomelo/grapefruit, shredded chicken, shrimp. Add in sauce. Add in additional cilantro, mint or basil depending on how much herbs you like. Toss and mix the salad. If you plan to serve today, continue with next step. This salad can be pre-made and stored in the refrigerator. Add in steps 7 & 8 when ready to serve.
7. In a dry frying pan, heat up cashews and peanuts until warm and slightly brown and toasted. Add into salad.
8. Add in deep fried shallots and garlic for extra flavor.
9. Toss together and serve.
