堅果杏仁 vs 南北杏
植物奶選擇眾多,杏仁奶是熱門選擇之一,如想自製杏仁奶,購買杏仁時要認清是哪一種杏仁,我們常吃到的杏仁有三種:南杏、北杏及堅果杏仁,製作杏仁奶最常用為啡色皮的堅果杏仁 (almond),又名巴旦杏,是扁桃或巴旦杏的種子,顆粒較大,屬性平和,有潤肺及潤腸功效,多作為堅果零食或食材之用。
而中式甜品的杏仁茶、杏仁豆腐、杏仁霜,則以南杏 (sweet almond) 及北杏 (bitter almond) 製成,南杏及北杏取自杏 (apricot) 果樹的種子,所以又叫 apricot kernel。南杏性平,有潤肺、潤腸通便功效,尤其適合肺氣虛弱人士飲用;而北杏主要為入藥用途,有袪痰止咳、平喘及潤腸的功效,治外感咳嗽、氣喘的功效較強,亦能紓緩便秘症狀。北杏帶有小毒,必須經過處理及烹煮才能食用。如煲湯時使用南北杏,比例至少為一比一。
堅果杏仁 — 又名巴旦杏,是扁桃或巴旦杏的種子,比南北杏較大得多。屬性平和,有潤肺及潤腸的功效,多作為堅果零食或食材之用。
南杏 — 產於南方,又稱甜杏仁,杏仁茶多用南杏。外觀上較北杏大。性平,有潤肺、潤腸通便功效,尤其適合肺氣虛弱人士飲用。感冒未清者、容易反覆腹瀉者都不適合飲用。
北杏 — 盛產於北方,又稱苦杏仁,主要為入藥用途。味苦,有少毒。有袪痰止咳、平喘及潤腸的功效;治外感咳嗽、氣喘的功效較強,亦能紓緩便秘症狀。因帶有少許毒性,切忌服用生或未經處理的北杏。

Almond vs sweet/bitter almond
There are many different types of plant based milk, and almond milk is one of them. If we wish to make our own almond milk, make sure we understand the different types of almonds.
There are three common types of almonds: sweet almond, bitter almond, and almond. Almond, which has a coffee-colored skin, is commonly used in making almond milk. This kind of almond, also known as badam in Persian, is the seed of Amygdalus communis. It is larger and mild in nature. It can also moisten the lungs and the intestines. People would use it in cooking or consume it as a snack.
On the other hand, sweet almond and bitter almond are the main ingredients used to make Chinese almond tea, almond tofu, and almond powder. These two almonds came from the apricot tree, hence they are also called apricot kernels. Sweet almonds are mild in nature, can moisten the lungs and intestines. Hence, it is suitable for individuals with weak lungs qi to consume.
Bitter almond is used as Chinese Medicine, as it can clear phlegm, relieve cough and asthma, and moisten the intestines. Hence, individuals would consume them to relieve cough, asthma, and constipation. Bitter almonds are slightly poisonous, hence, they must be processed and cooked properly beforehand. When making soup with both sweet and bitter almonds, make sure the two ingredients have an equal ratio.
Almonds - also known as baadaam, and they are much larger than sweet and bitter almonds. They are mild in nature, and can moisten the lungs and bowels. Typically almonds are eaten as snacks or used as a cooking ingredient.
Sweet almonds - produced in the south and usually used in almond tea. They look larger than bitter almonds. They are mild in nature and can moisten the lungs and bowels, and relieve constipation. They are especially suitable for those with weak lung qi. They are not suitable for those recovering from a cold or flu, or those prone to diarrhea.
Bitter almonds - produced in the north and mainly used medicinally. They taste bitter and naturally contain small amounts of toxins. They can relieve phlegm, cough and wheezing as well as moisten the bowels. They are effective to treat external coughs and help to relieve constipation as well. Due to the toxins, do not eat them raw or unprocessed.

Dalgona Coffee Recipe Recipe
✎ Ingredients
☞ Macao hand beaten coffee
instant coffee 1 tbsp
granulated sugar 1 tbsp
hot water 1 tbsp
☞ Korean dalgona coffee
instant coffee 2 tbsp
granulated sugar 2 tbsp
hot water 2 tbsp
☞ Crema de Café Mágica
instant coffee 1 tbsp
iced water 4 tbsp
powdered sugar 6 tbsp
✎ Instructions
☞ Macao hand beaten coffee
1. In a coffee cup or a mug, add 1 tbsp of instant coffee, sugar and hot water, or in 1:1:1 ratio.
2. Using a scoop, first to mix all ingredients until melted, then beat until it starts appearing froth.
3. Keep beating for a while until it becomes thick and creamy, then add hot water and milk, mix to combine and enjoy.
☞ Korean dalgona coffee
1. In a large bowl, add 2 tbsp of coffee,
sugar and hot water. Use a hand mixer, first to beat in low speed until all ingredients are dissolved, then switch to high speed and whip until soft peak and frothy.
2. Fill 2/3 glass of milk and ice.
3. Spoon the creamy coffee foam to the top, stir thoroughly into the milk before enjoy.
☞ Crema de café magica
1. Mixing 1 tbsp of coffee, 4 tbsp of iced water and 6 tbsp of powdered sugar.
2. Use a hand mixer to start whipping on medium speed, then switch to high speed to get the frothy mixture of the cream as stiff peak.
3. Spoon the coffee cream into to the piping bag, set aside.
4. Put the digestive biscuit in a plastic food bag and crush to crumbs by a rolling pin. Then add ¾ of the crumbs into a dessert cup, and pipe the coffee cream on top, volia!

We made donuts inspired by Mister Donut's Golden Chocolate Donuts since we cannot get enough of the crunchy texture. It is not as good as the real thing, but you can still enjoy it by adding lots of crunch. But what is the name of this crunchy stuff?
Recipe (Makes 7 Donuts + 16 Donut Pops)
For the textured crunch:
1. Dissolve 50g of powdered sugar, add in 15g of unsalted butter, and heat for 40 seconds in a 600W microwave oven.
2. Mix. (A whisk works better than chopsticks!) Mix while crushing the large grains until the preferred texture is obtained.
For the chocolate donuts:
3. Add 20g of unsalted butter and 30g of milk to 50g of chocolate, and heat for one minute in a 600W microwave oven.
4. Mix and melt the chocolate.
5. Add in one egg and mix.
6. Mix in 200g of hotcake mix. (A spatula works better than a whisk!)
7. Wrap and leave in the refrigerator to rest for 30 minutes to an hour.
8. Sprinkle strong flour and roll it out to a thickness of 6 to 7 mm when the dough becomes easy to manage.
9. Cut out the shape using a glass (7cm) or a plastic bottle cover (a little bigger than 3.3cm). Do not forget to sprinkle the flour. Put the dough in the refrigerator to harden a little if it cannot be fried right away.
For the glaze:
10. Make the glaze by mixing in powdered sugar and milk (or even water) at a ratio of 4:1. We made it by mixing 50g of powdered sugar and 13g of milk this time.
11. Fry for 3 to 4 minutes in oil at 160 degrees Celsius. The cake pops take less than three minutes to be done.
12. Add 10 while they are still hot.
13. Sprinkle with 2.
14. It's complete! Let's brew the coffee now.
あのツブツブのシャリシャリ食感がたまらない、ミスドのゴールデンチョコレート風のドーナツを作ってみました。再現レシピと言えるほどのデキではないけれど たっぷりつけて食べちゃってください。ところでこのツブツブ、名前は何?
*レシピ*(ドーナツ 7個+ドーナツポップ 16個)
シャリシャリしたツブツブ作ります。
1.粉砂糖 50gに溶かし無塩バター 15gを入れ、600wの電子レンジで40秒加熱する。
2.かき混ぜる。(箸よりも泡立て器の方が良かった!)大きい粒を潰しながら混ぜ、お好みの大きさのツブツブに仕上げる。
チョコレートドーナツ作ります。
3.チョコレート 50gに無塩バター 20g、牛乳 30gを入れ、600wの電子レンジで1分加熱する。
4.混ぜ、チョコレートを溶かす。
5.卵 1個を入れ混ぜる。
6.ホットケーキミックス 200gを入れ混ぜる。(泡立て器よりもスパチュラの方が良かった!)
7.ラップに包み、冷蔵庫で30分~1時間休ませる。
8.扱いやすいかたさになったら、強力粉で打ち粉をしながら6~7ミリの厚さに伸ばす。
9.コップ(7センチ)やペットボトルの蓋(ちょっと大きめの3.3センチ)を使って型抜きする。打ち粉を忘れないでね。すぐに揚げられないときは冷蔵庫に入れておくと生地がダレない。
グレーズを作ります。
10.粉砂糖 と牛乳(水でもOK)を4:1の割合で混ぜ、グレーズを作っておく。今回は粉砂糖 50gと牛乳 13gを混ぜて作りました。
11.160度の油で返しながら3~4分揚げる。ケーキポップは3分弱で揚がります。
12.熱いうちに10をつける。
13.さらに2をまぶしつける。
14.おまたせ~できたよ。コーヒーを淹れましょう。
