TAMAGOYAKI is a type of Japanese omelet made by rolling several layers of cooked eggs together.
These are usually prepared in a rectangular omelet bread called Maki Yaki. There are several types of egg oysters.

豆腐魚腩煲:
材料:
鯇魚腩1個
硬豆腐2磚
粉絲2札
薑1舊
蒜頭5粒
乾蔥頭3粒
蔥一條
芫荽1條
處理:
1. 鯇魚腩洗淨,切開幾舊。
2. 豆腐沖洗乾淨,切長條形。
3. 乾蔥頭去皮洗淨。
4. 薑切片。
5. 蔥切段。
6. 芫荽切碎。
7. 粉絲浸軟。
8. 預備芡汁:
a. 生粉1茶匙
b. 糖1茶匙
c. 鮑魚汁1/2茶匙
d. 黃豆醬1茶匙
e. 水350毫升
攪勻。
烹調:
1. 放4湯匙油落鑊,大火燒熱。
2. 放豆腐,大火炸。
3. 蔥段放煲底。
4. 粉絲已浸軟,洗淨,放煲底的蔥段上。
5. 豆腐一面已炸好,反轉另一面繼續炸。
6. 放乾蔥頭、蒜頭及薑片繼續炸。
7. 豆腐及配料,放入煲仔內。
8. 鯇魚,撲上少許生粉。
9. 放鯇魚落鑊炸,每邊炸1分鐘。
10. 魚塊逐件放入煲仔內。
11. 用中慢火,熱住煲仔。
12. 煮滾芡汁。
13. 倒芡汁入煲仔內。
14. 開大火滾起,放上芫荽,完成。
Claypot tofu with grass carp belly:
Ingredients:
Grass carp belly 1 No.
Hard tofu 2 cubes
Vermicelli 2 Nos.
Ginger 1 No.
Garlics 5 Nos.
Shallots 3 Nos.
Green onion 1 No.
Coriander 1 No.
Preparation:
1. Rinse grass carp belly. Cut into several pieces.
2. Rinse tofu and cut into rectangular shape.
3. Shallots, peel and rinse.
4. Ginger, get it sliced.
5. Green onion, cut in equal lengths.
6. Dice the coriander.
7. Soften vermicelli with tap water.
8. Prepare the sauce:
a. Tapioca starch 1 tsp
b. Sugar 1 tsp
c. Abalone sauce 1/2 tsp
d. Soy bean sauce 1 tsp
e. Water 350ml
Mix well.
Steps:
1. Heat up 4 tbsp oil at high flame in wok.
2. Fry tofu at high flame.
3. Put green onion in pot.
4. Vermicelli has been soaked well. Rinse and put on top of green onion in the pot.
5. One side of tofu has been fried well. Flip over and continue frying.
6. Fry shallots, garlics and ginger slices with tofu as well.
7. Put tofu and other ingredients in the pot.
8. Grass carp, put some tapioca starch on it.
9. Fry grass carp in wok. Fry each side for 1 minute.
10. Put grass carp pieces into pot.
11. Heat up the pot at medium~low flame.
12. Heat up the sauce in wok.
13. Pour the sauce into pot.
14. Heat up the pot at high flame. Put coriander on top. Serve.

FYI: Tamagoyaki (dashimakitamago or atsuyakitamago) is a Japanese rolled omelet. It is often served for breakfast with white rice and miso soup. Also, it's one of the most popular dishes for bento (lunch box). My mom makes sweet tamagoyaki, but some people make salty one. The flavor differs from house to house. In addition, to make it colorful, we sometimes add fillings in it.

Mille-Feuille Tamagoyaki (Rolled Omelette)
Difficulty: Easy
Time: 20min
Number of servings: 6 pieces
Necessary Equipment:
18x13cm (7x5.1inch) Tamagoyaki Nabe (rectangular omelet pan)
Ingredients:
2 bacon strips
2 sliced cheese
2 eggs
mayonnaise
1 grape tomato
cracked black pepper
olive oil
Directions:
1. Beat eggs in a bowl, season with ground pepper, and mix well.
2. Cut bacon strips and sliced cheese into halves, and make pairs.
3. Heat olive oil in a Tamagoyaki Nabe (rectangular omelet pan), pour 1/5 of egg mixture in the pan and spread over the surface. Cook until half done then place one piece of bacon and cheese on top of each other towards the end closest to you. Roll up the egg and move it to one end. Pour in another 1/5 of egg mixture and let it flow under the rolled egg also. Cook until half done and again place bacon and cheese on the egg and roll up the egg again. Repeat this until all your ingredients are gone.
4. Allow it to cool and cut it into 6 pieces. Also cut the grape tomato into 6 wedges.
5. Garnish with mayonnaise shaped to look like whipped cream and put a grape tomato wedge on top to look like a strawberry.
