Marinate your chicken wings using this delicious homemade rempah (spice paste) and reducing it into a thick sauce, every bite of your chicken wing will be bursting with flavour.
This recipe uses luscious pandan and coconut infused basmati rice as a base for crispy chicken wings, sambal lady's finger and not forgetting the classics, sunny side up and fried ikan bilis.

2 cups Basmati rice grains
250ml Water
2g dried Blue Pea flowers (green stems removed
250ml Coconut milk
4 pieces Pandan leaves (tear each leaf into half and tie them into knots)
3 slices Galangal (lightly smashed)
1 stalk Lemongrass (white part only, lightly smashed)
Spices for marinate:
8 pieces Large chicken wings
4 pieces Red chilli
2 pieces Chilli padis
2 pieces Candles nuts
1 piece Lemongrass (white part only)
1 knob Galangal
1 knob Turmeric
2 tsp Gula melaka / raw sugar
½ tsp Cumin seeds
½ tsp Fennel seeds
300ml Coconut milk
4 tbsp Tamarind juice (1 tbsp of tamarind pulp to 6 tbsp hot water)
Salt to taste
For frying:
2 tbsp Cornflour
8 tbsp Potato starch
Salt to taste
½ tsp Baking soda
½ tsp Baking powder
Sambal Spices:
300g Lady’s fingers (sliced)
6 Red chillies
3 Chilli padis
3 cloves Garlic
6 Shallots
20g Dried shrimps
10g Belachan
3g Torch ginger bud
1 tbsp Light soy sauce
1 tsp Sugar
Side Condiments:
8 slices Cucumbers
150g Fried ikan billis
100g Fried peanuts
4 Fried eggs
4 sheets of banana leaves for serving

1 Chicken (approx. 800g – 1kg) (chopped into medium sizes)
14 pieces Buah Keluak (add more to preference)
200g Minced meat
100g Minced shrimps
1 tsp Dried sole fish powder
A pinch of salt
Pepper taste
1 tsp Sesame oil
2 stalks Lemongrass (white part only & smashed)
4 pieces Kaffir lime leaves
250ml Tamarind juice
500ml Chicken stock
Rempah:
300 Shallots (cut into small sizes)
65g Garlic (cut into smaller sizes)
1 stalk Lemongrass (white part only, cut into smaller rings)
20g Galangal

Resepi Homemade Seafood Selambak
Bahan-bahan
makanan laut (ketam, udang dan lala)
2 batang lobak merah (dipotong)
1 brokoli (dipotong)
tomato ceri (pilihan)
1 biji lemon (pilihan)
2 tongkol jagung (dipotong 3)
Bahan-bahan (Kuah Seafood Selambak)
2 biji bawang merah
5 ulas bawang putih
1 inci halia
1 inci belacan
1 cwn air
5 tangkai cili padi
3 sb mentega
2 tangkai serai (diketuk)
2 tangkai daun kari
3 sb cili boh
3 sb serbuk kari ikan
2 sb sos tiram
2 sb sos cili
2 sb sos ikan
1/2 sk garam
1/2 sk lada hitam
1 sb serbuk stok ayam
Cara memasak
1. Kisar halus bawang merah, bawang putih, halia, cili padi, dan belacan bersama sedikit air. Ketepikan.
2. Rebus/celur sayur-sayuran seperti brokoli, lobak merah dan jagung sehingga empuk. Ketepikan.
3. Dengan mengunakan air rebusan yang sama, rebus ketam, udang dan lala. Simpan 3 senduk air rebusan. Ketepikan.
4. Cairkan mentega dan tumis serai yang telah diketuk, daun kari, bahan kisar dan cili boh sehingga pecah minyak.
5. Masukkan rempah kari ikan, sos cili, sos tiram dan sos ikan. Gaul sebati.
6. Tuangkan air rebusan dan perasakan dengan garam, lada hitam dan stok serbuk ayam secukup rasa.
7. Masak sehingga reneh dan menggelegak.
8. Susun sayur, tomato ceri dan seafood di atas dulang dan tuangkan kuah di atasnya.
9. Perahkan lemon dan Homemade Seafood Selambak siap untuk dihidangkan bersama nasi panas.

Ingredients
seafood (crabs, squids, prawn, and clams)
2 carrots (cut)
1 broccoli (cut)
cherry tomatoes (optional)
1 whole lemon (optional)
2 corn (cut into 3)
Ingredients (Selambak Seafood’s Broth)
2 whole onions
5 cloves garlic
1 inch of ginger
1 inch of shrimp paste
1 cup of water
5 bird’s eye chili
2 stalks lemongrass (bruised)
2 stalks curry leaves
3 tbsp of chili paste
2 tbsp of oyster sauce
2 tbsp of chili sauce
2 tbsp of fish sauce
3 tbsp of fish curry powder
3 tbsp of butter
1/2 tsp of salt
1/2 tsp black pepper
1 tbsp chicken stock powder
Cooking methods
1. Blend onion, garlic, ginger, birds’ eye chili, and shrimp paste with some water until smooth. Set aside.
2. Boil vegetables such as broccoli, carrots, and corn until soft. Set aside.
3. Using the same boiled water, boil crabs, shrimps, and clams. Reserve 3 cups of the stock. Set aside.
4. Melt butter and saute bruised lemongrass, curry leaves, ground material, and chili paste until oil break.
5. Add in fish curry powder, chili sauce, oyster sauce, and fish sauce. Mix well.
6. Pour in stock and season with salt, black pepper, and chicken stock powder to taste.
7. Cook until simmer and bubbling.
8. Arrange boiled vegetables, cherry tomatoes, and seafood on the tray and pour the sauce on top.
9. Squeezed lemon and Homemade Selambak Seafood is ready to be served with hot rice.

700 gm daging (boleh lebihkan) rebus hingga daging empuk..air rebusan agak 2 utk nasi dan sup..

BAHAN2 TUMIS:-
4 sudu miyak masak
2 sudu minyak sapi
empat sekawan
1 biji bawang besar (yang sedang2)
2 helai daun pandan (carik2 dan simpul)
batang sup
1 batang serai (ketuk)
3 ulas bawang putih (kisar)
1 1/2 inci halia (kisar)
1 biji tomato (buang biji)
3 sudu besar serbuk kurma ADABI
3 sudu besar serbuk sup ADABI

✅Bahan tumis dah naik bau..rempah dah masak elok masuk air rebusan daging ?
.
4 pot (pot yg sama sukat beras) air rebusan
2 sudu besar tomato soup atau tomato puri
1/2 pot (pot yang sama sukat beras)susu cair
1 ketul kiub pati ayam
garam & perasa
4 pot beras basmathi (rendam selama 30 minit..kemudian tos buang air)

✅Beras dah masuk kacau sebati..kemudian tutup terus periuk..pelahankan api yg paling kecil.
✅Nasi dah kering air..masukan daging rebus dan daun sup..tutup semula periuk..matikan api..biar kan selama 10 minit..baru gembur nasi..siap utk di hidang..

✅Bawang besar dan tomato hiris nipis..kemudian ramas hingga keluar semua jus..
✅kisar cili api,cili hidup,belacan dgn sedikit air..jgn terlalu halus..
✅Masukan bahan2 kisar kedalam tomato dan bawang yg telah di ramas awal dalam 1 mangkuk..
✅Masukan paste asam jawa,kerisik,garam,gula,perasa,cili hijau (hiris nipis),perahan limau nipis dan sedikit air..
