何で香港のローカル食堂茶餐廳チャーツァンテンには羅宋湯(ボルシチ)が普通にあるんやろう?(廣東話在後)と前から疑問に思っていた、最近ちょっと調べてみてざ~っくりと経緯がわかった。
1917年にロシア革命起こる→ロシア系の人々が中国に逃れる→第二次世界大戦勃発→香港に逃れる→ロシア料理香港に伝わる。*上海にも伝わり上海でも独自に発展、上海人もロシア料理を香港に伝えた。羅宋湯の羅宋はRussiaの上海語の音訳らしい。
ボルシチの材料は安く、いろんな野菜も入ってて栄養価も高い、パンを主食にできることもあり、イギリス文化の影響をうけて発展する香港の庶民的な西洋料理として庶民にうけいれられ、根づいたという。
今でもそんな当時のロシア料理のメニューと風情が味わえる1952年創立の皇后飯店にいってきた。創立者の于さんは上海でロシア人シェフにロシア料理を学んだ。
当時、戦乱から逃れてきたロシア系の人々は新天地香港でボルシチを飲みながらパンを食いしばり、おっしゃ!やったるで!と再起をかけて奮起したのかもしれない。
ボルシチおいしかったです。落ち着いた雰囲気もムーディーでナイスなお店でした♪
