Japanese radish (non-spicy) recipe is the perfect compliment to any dish because it's salty-sweet, sour, and crunchy.
Use fresh Daikon when preparing pickles. I used purple Daikon which my daughter grew at kindergarten. You can use regular white Daikon radish, too.
You can keep it in the fridge for a week 😉

Japanese Pickled Daikon Radish (Tsukemono)
Difficulty: Easy
Time: 10min
Number of servings: N/A
Ingredients:
250g (9oz.) Daikon radish
2 tbsp. vinegar
1 tbsp. sugar
salt
1.5inch (5cm) Kombu kelp https://amzn.to/3sUAEpR
Directions:
1. Wash and cut Daikon (with skin is ok) into 1/2 or 1/4 slices. Rub with 1/2 tsp. salt and leave for 20 min. Rinse and drain well.
2. In a sauce pan or microwave, heat vinegar, sugar and a pinch of salt mixture until it comes to a boil.
3. Wipe and clean dirts from Kombu kelp.
4. Put all the ingredients in a Ziploc bag and keep in the fridge overnight or more.

酸菜魚:
材料:
鯇魚片一條
酸菜魚湯包
處理:
1. 鯇魚片,切雙飛。
2. 鯇魚片,粗鹽乸1分鐘,去除腥味。
3. 清水沖洗乾淨。
4. 用醃魚包及紹興酒1湯匙,醃5分鐘。
烹調:
1. 中火在鑊中燒熱少量油。
2. 爆香鹹酸菜包。
3. 加入1升水。
4. 滾起後,加入調味料包。
5. 再加入辣椒包。
6. 湯滾起,加入鯇魚片。
7. 至再滾起,試一試味。
8. 如覺得味道太濃,可加入滾水,至再滾起。
9. 放上碟,加入芫荽,完成。
Pickled fish in Taiwanese style:
Ingredients:
Grass carp fillet 1 No.
Pickled fish seasoning 1 No.
Preparation:
1. Grass carp, get it sliced.
2. Sliced grass carp, season with cooking salt and season for a minute to remove unpleasant smells.
3. Rinse thoroughly.
4. Season with the seasoning pack and Shaoxing wine 1 tbsp, season for 5 minutes.
Steps:
1. Heat up little oil at medium flame in wok.
2. Fry the bag of pickles.
3. Add 1L of water.
4. Put seasoning pack after boils up.
5. Add chili pack afterwards.
6. Put fish slices after the soup has been boiled up.
7. Taste it when the soup boils up again.
8. You can add boiled~up water into wok if you feel the soup is too salty.
9. Put on plate. Put coriander on top. Serve.
