Making a traditional and authentic thosai is a laborious process. The power mother-and-son duo at Rajarani Thosai sticks to the painstaking process of grinding soaked black lentils by hand, and making their own sambars, dhal, and chutneys to accompany the fresh thosai made from scratch daily.
The Masala Butter Thosai had crisp paper-like edges and velvety soft centre loaded with spiced and buttery potatoes. The salty globs of melted butter (not Planta or margarine, mind you) melded perfectly together with the aromatic masala spices, making every mouthful particularly delicious. Served on an Indian Thali plate with 3 sauces — coconut chutney, dhal and chilli and onion chutney.
Another crowd-favorite was the fresh made on-site appams. Using a similar fermented rice batter as thosai but with coconut milk, these UFO-looking pancakes had shatteringly crisp edges with thick and cushiony centres. The Plain Appam paired well with a simple sprinkling of orange palm sugar, which lent a mild sweetness to the savory batter.

Batter:
½ cup + 2 tbsp (100 g) rice flour
½ cup (100 g) leftover cooked rice
2 tbsp (15 g) corn flour
½ cup (60 g) coconut milk
¾~1 cup (180 ml~240 ml) cold club soda
½ tsp turmeric powder
green onion, chopped
salt
Filling:
¼ cup (70 g) split mung beans
1 lb medium shrimp, peeled and deveined
1 garlic clove, finely chopped or ground
salt
pepper
oil
Dipping sauce:
¼ cup (60 ml) fish sauce
½ cup (100 g) sugar
1 cup (240 ml) water
juice from 1~2 lime (to taste)
1 hot chili, deseeded, finely chopped
1 garlic clove, finely chopped

Lettuce, Vietnamese mint, fish mint, etc. to serve

1 cup (240 ml) nước
nước chanh vắt từ 1~2 trái
1 trái ớt, bỏ hột, băm nhuyễn
1 tép tỏi, băm nhuyễn

Rau sà lách, rau thơm.
Cách làm:
Rửa sạch và ngâm đậu khoảng 30 phút. Xong hấp đậu chín nhưng vẫn còn nguyên hạt.
Tôm ngâm và rửa sạch bằng nước muối. Làm ráo nước. Ướp với tí xíu muối, tiêu, và tỏi bào nhuyễn.
Xay cơm nguội với nước cốt dừa và một ít nước soda cho thật nhuyễn.
Trộn bột gạo, bột bắp, bột nghệ, muối. Xong cho cơm nguội xay nhuyễn vào, cho thêm nước soda, trộn cho đến khi bột mịn, không bị vón cục.
Cho hành lá vào, trộn đều. Đậy và để vào tủ lạnh để bột nghỉ khoảng 15 phút.
Bắt khuôn lên bếp, để lửa to vừa. Thoa dầu vào khuôn. Khi khuôn nóng bốc khói, đổ bôt bánh vào khoảng 1/2 khuôn. Cầm tay khuôn đảo cho bột bám vào thành khuôn. Cho đậu xanh, tôm vào. Đậy nắp lại, nấu khoảng 5 phút. Dùng nĩa đảo bánh để làm giòn phần bột ở trên thành bánh. Xong lấy bánh ra.
Ăn ngay với rau sống, rau thơm, và chấm vào nước mắm. Ăn kèm với đồ chua.
Cách làm nước chấm:
Hoà tan nước và đường, nấu sôi. Để nguội. Cho nước chanh vào sao cho khi nếm thấy vừa uống như nước chanh thì cho mắm vào. Cho ớt tỏi vào trộn đều là được.

This is savory vegetables pancake!
Now Sakura (cherry blossoms) are blooming beautifully, so I will show you a great pancake idea ;)
I will use Morinaga's Hot Cake Mix but you can use any pancake mix for this recipe. I just want to share this idea with you.

Sakura Pancake (Savory Hot Cake)
Difficulty: Easy
Time: 20min
Number of servings: 3
Ingredients:
1 Morinaga Hot Cake Mix (flour)
1 egg
100cc milk
2 asparagus
4 ham
50g (1.8oz.) onion
olive oil
black sesame seeds
salad of your choice
mayonnaise
Directions:
1. Cut out ham using a Sakura cutter, and mince the scraps.
2. Slice the onion.
3. Peel the lower section (hard part) of the asparagus with a vegetable peeler, and boil in the salted water until al dente (about 2 minutes). Then chop.
4. Put egg, milk, and 1 tbsp. mayonnaise in a bowl and mix well. Add Hot Cake Mix and gently cut through the mixture until somewhat combined.
5. Add ham scraps, onion, and asparagus, and mix well.
6. Heat olive oil in a pan, turn down to low and pour 1/3 of the batter, and cook for 3 minutes until bubbles appear on the surface. Flip with a spatula, cover and cook for 2 minutes until browned on the other side.
7. Serve on a plate with salad of your choice. Garnish with Sakura (ham) with black sesame seeds in the middle.
