“Xiao chi” (小吃), meaning “little eats” aka street food, makes up most of the Taiwanese food culture. “Wah gweh” (碗粿) aka steamed rice cake is a must in Tainan. Soy braised pork, and shiitake mushroom are mixed with the glutinous rice batter, then steamed, and served with a ladle of sweet soy sauce. It’s tender and chewy!

【 白 盒 子 裡 頭 的 早 餐 】
在日本，用餐結束的時候習慣合掌，說一句：ご馳走様でした。身為台灣人的我沒有這個習慣，但當地工作久了，也就胡里胡塗地照做了。ご馳走，指的是東奔西走的意思。除了吃完飯總說的這一句以外很少用到，我也從未想過這句話的真意。
擺在面前的盒子如同一本白色封面的書，書封貼著一張貼紙：招財進寶，還微微飄著冰凍過的寒氣。
鶴宮寓的早餐放在冰箱裡。我起得晚了，十點多餐廳只剩下我一人，和這個剛從冰箱裡拿出的白盒子。
輕啟盒蓋，小缽小杯排列盒中，正中央餐巾用麻繩綁起打了個結，像書卷似的頗具玩心。盒裡有吐司，奶油，奶酪，果醬，蛋糕，另外不知是否為我加菜，還有一碗水果優格。這些小點似的健康食物再配上一瓶放在試管瓶裡的豆漿。
一份出乎意料的早餐(因為官網訂房送的)，對於平日早餐只喝一杯咖啡的我，已過於豐盛。
原來餐巾捲成的書卷裡頭抱著餐具，湯匙與抺醬刀，我喜歡冰透了的抹醬刀沁涼的手感，炎熱的高雄什麼都是涼的好。
吐司當然要烤，烤得焦焦脆脆的，奶油放上去不一會兒就消融了，把果醬抹上，甜甜的原來是地瓜醬，一片腰果增添三種口感，酥脆、細緻與和果醬融合的滑嫰。一口接著一口，胃都醒來了，只想吃更多。
嚐一口奶酪，又嚐一口水果優格，奶酪不甜優格卻甜。優格裡頭的兩瓣橙子甜得好乾淨，像在白色的畫布只灑上兩片淡雅的澄黃。
我的胃袋每個早晨都經過咖啡洗禮當然無礙，但我確信這是最脆弱敏感的腸胃在一早也能服用的溫柔美味。
看似蛋糕的一片原來是英式司康，司康是種硬糕點，一般無味，適合沾蜂蜜楓糖等再搭咖啡食用。拆開包裝時司康的表面閃亮亮的，不知加了什麼。
我從吐司、奶酪、優格一路吃來的順序看來是對的了，嘴裡的香味漸進漸濃直到咬下一口司康，恰巧是板前壽司或法式餐點上餐的概念----開胃後讓敏銳的味覺集中於主菜之上。此時司康鹹鹹甜甜的，配上無糖豆漿剛好。
早餐盒中還附了一張紙，用簡潔的印刷字體寫明食材的各個產地，都來自於南部近郊的農田。敘述的語氣平淡地像是理所當然一般。關於這白色的盒子裡，四個小缽和兩樣主菜與一瓶豆漿。
料理不過就是各種食材的重製組合，有什麼難的。真是如此嗎？
我一邊吃著一邊想像各個小缽裡恰如其分的料理的來歷，地瓜果醬需要地瓜、腰果、也許一點糖，橙子優格需要優格、柑橙，而這個橙子看來是新鮮現切的，無糖豆漿需要黃豆，還需要一台磨豆機來磨…....
腦海浮現一個東奔西跑的身影。
為了晚起的一個住客與書本大的小盒裡頭的料理，某人奔走了許多地方將食材集合，再一一處理，切片，揉捏，磨碎，攪拌，包裝。眼前的一餐需要多少「馳走」呢？
四個小缽空了，吐司和司康也空了，就著瓶口把無糖豆漿喝完時我不自覺滿足地嘆了口氣。一盒令人難忘的手作早餐，一間令人印象深刻的旅館。
我合掌，默默地說了一句：ご馳走様でした。
In Japan when finishing a meal, we always say “gochisosama deshita,” which literally translates as “thanks for your going everywhere.” Although I’ve stayed in Japan for a long time, I never truly understand the meaning of it.
In front of me was a white box. Because I woke up late, I was the only one in the kitchen, with this white box, which was the breakfast Hok House prepared for me.
I opened the box. Inside were a number of small plates and containers. Toast, butter, jam, cake, a bowl of yogurt and a bottle of soy milk were delicately arranged—such big breakfast was something quite unexpected for a man who only drinks black coffee for breakfast every day.
I spread the butter on the toast and then some jam…except it wasn’t jam, but mashed sweet potatoes with cashews. And the yogurt wasn’t yogurt, but part of a tangerine yogurt salad. And the cake wasn’t cake, but a homemade scone.
There was a card in the box specifying the origins of each and every ingredient—they were all from the suburbs and had been taken good care of by dedicated farmers.
An image began to emerge in my head as if I could see a person who didn’t bother going here and there, trying to collect all the ingredients just to make one box of breakfast.
“Gochisosama deshita, ” I said, with respect.

Westerners have one day in a year dedicated to remembering the dead - known as Halloween.
In Chinese culture, we have entire month, which falls in July of the lunar calendar. Today is the July 1st, meaning the door of the underworld opens, and the spirits are out. There are quite a few taboos throughout this so-called "ghost month", such as we can't hang our clothes outside at night, no whistling, can't go near beaches/rivers... There's one taboo that I just found out today and felt quite absorbed, which is that people should avoid eating eggs and tofu! Back then, people think that egg shell symbolizes as kneeling and bowing so low as to have your head touching the ground as an act of deep respect, and the tofu represents the ghosts' brain... Glad that I live in the 21st century, otherwise, not sure if I'll be able to survive a month without eggs! Just look at those golden, perfectly soft-boiled, soy-marinated eggs.. 🤤

My dad said that if you eat leek, you will be very good at math. In Mandarin, leek is 蒜(Suan) which has the same pronunciation as 算 (suan)(calculate or count) in English. So it has an auspicious meaning of counting money, which literally means fortune. But my math hasn’t improved since last time
Ingredients:
1 or 2 stalks Chinese leek 蒜苗
2-3 Chinese sausage 腊肠
2 tbsp oil 油
1 tbsp soy sauce 生抽
1 tsp salt 盐
Sprinkle of water 水少许
OMG! I never thought Roland would be able to replicate the taste of my favourite McDonald's Samurai Burger. Boy I was wrong! Roland's Samurai Burger is so good!! If you're not from Singapore or Thailand (which other country has Samurai burger? - lemme noe if you noe), you may not have heard about this burger before. This is a seasonal burger meaning McDonald's only serve this once a year. I love Samurai Burger because it's so juicy - drenched with the yummy sauce. Ooh Lala!! Next up, I shall get Roland to try and make McDonald's Prosperity Burger. Who here likes that too?

700g ground beef (20% fats 80% lean meat - you can use pork or chicken instead)
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 teaspoon salt
