Today I thought I share something different for fun ☺️
I’ve decided to try Ajinomoto #LessSalt #KurangGaram Challenge and cook the MSG king recipe, non other “Uncle Roger Egg Fried Rice”.
Obviously he won’t be impress by my cooking skill 😂 and by his definition - I’m weak 😂
Anyway, I’m sure everyone tau apa tu AJI-NO-MOTO®. But I’m just gonna put some brief info here’s anyway ⬇️
1. It is a pure monosodium glutamate/umami seasoning
2. It has lower sodium comparing to salt
I did a bit of research why people usually put AJI-NO-MOTO® first before other seasoning or sauces…and got to know that by doing so..it can enhance the taste first so that can reduce the usage of total seasonings to achieve even lower sodium.
Also a bit of take out ➡️ The amount of AJI-NO-MOTO® used could be lesser than other seasoning/salt as a little quantity of AJI-NO-MOTO® is sufficient to enhance the taste of the dish & can help to reduce daily intake of salt.
Ok lah, let’s get into Uncle Roger Egg Fried Rice recipe:
5 garlic 🧄
5-6 shallots
1 whole egg, 1 egg yolk 🥚
Spring onion
5 Chillies 🌶
Mix Grain Rice cook with grass fed butter & chicken stock
Soy Sauce (agak- agak)
Sesame Oil (agak-agak)
Coconut oil
1/2 teaspoon of #Ajinomoto

Haiyaa.. Not copying anyone to do fried rice but showing you how my Poh Poh used to show us how to enjoy fried rice, especially for someone who doesn't like rice like me.
I am surely bringing back a lot of childhood memories through my cooking and dressing up videos. Life is cool when we remember the best moments in life.
Ingredients:
. Rice - Multi-grain rice : Black rice, purple rice, wild rice, Quinoa, millet, buckwheat, black-eye peas, mung beans, Sorghum, sesame seeds.. You can also add oat, pearl barley and soy beans. I didnt add these 3 grains as Mika is allergic to Soya and Gluten.
. Diced smoked duck (I got mine from Seafood Maestro +60 11-2302 9399. They are very GOOD!)
. Chopped garlic
. Cut onions
. Minced Ginger
. Cut spring onions
. Shredded carrot (I didn't have stock)
. Cut long beans
. 3 to 4 eggs
. Oyster sauce
. Soy sauce
. Salt
. White pepper
. Oil
. Lettuce leaf for wrapping
If you have a fire stove, your fried rice will be fantastilicious!! Chinese like the WOK HEY- Wok Fire.. Add in fried salted fish and chili padi and more ginger.. Oh My.. I feel so hungry again.
Fried rice is probably the most humble and casual comfort food. It is something you cook when you have too much leftover rice from your meal yesterday or you just don't know what to cook and you have very little ingredients left in your refrigerator. My Poh Poh used to say : 炒冷饭Chǎolěngfàn means fried cold rice. Leftover rice is usually refrigerated overnight, so you take it out and fry it while it is still cold. LOL. But whatever it is, fried rice is definitely one of the best Chinese all-in-one dishes that conquered the world. It is quick, affordable and you dont need to be a professional chef to cook this.

Beef Tartare by Jimmy's Table
If you know me, you know I love my beef tartare. It's something about raw beef that gets me excited, and whenever I see this on a menu, I always order it. This is one of my favorite dishes to eat when dining out. Making this dish is much easier than it looks. My version is a bit elevated with more ingredients to give it more layers. I hope you like it!
Ingredients 食材:
10-16 ounces of raw beef tenderloin or sirloin (沙朗)
2 tablespoons of finely minced shallots (生紅蔥頭)
3 tablespoons of fried shallots (炸紅蔥頭)
1 tablespoon of capers (酸豆)
2 tablespoons of Whole grain mustard (顆粒芥末醬)
2 tablespoons of Dijon mustard (傳統芥末醬)
1 tablespoon of Horseradish (optional) (西洋山葵)
2 tablespoons of Sriracha chili sauce (是拉差香甜辣椒醬)
2 tablespoons of Balsamic vinegar (巴薩米克醋)
2 tablespoons of Extra virgin olive oil (橄欖油)
Black pepper - for taste (黑胡椒)
Salt - for taste (鹽)
Finishing Ingredients 撒料調味:
Arugula (芝麻葉)
Balsamic vinegar (巴薩米克醋)
Extra virgin olive oil (橄欖油)
Parmesan cheese (帕瑪森起司)
Crackers (saltines or wheat crisps) or toasted french bread slices (薄脆餅乾or法國吐司)
Raw egg (yoke only) (生蛋黃)
STEP 1
Prepare the beef for cutting. If the beef is already frozen, then let it defrost a little. If the beef is already defrosted, put the beef in the freezer for 15-20 minutes so that the meat freezes a little and is hard to easily slice. If the beef is too soft (aka defrosted all the way), then it will be really hard to cut the beef into fine slices, strips and cubes. By the time you finish making the dish, the beef will be perfectly cold to eat.

準備牛肉,若是冷凍的稍微解凍一些些,若已解凍則放入冷凍15-20分鐘。解凍的生牛肉較難切成丁狀。不用擔心冷凍的牛肉,當你做完這道菜時,肉也達到可以食用的完美解凍狀態了。
STEP 2
Cut beef slices about 1-2 mm thick. Then take the slices and cut them into 1-2 mm strips. Lastly, turn the beef around and cut the strips into small beef cubes/pieces. Put beef into a large mixing bowl.
步驟 2
將牛肉切1-2公分厚,接著再切成1-2公分的條狀,最後將條狀牛肉切成小丁狀,放入大的攪拌碗中。
STEP 3
In the bowl, add in 2 tablespoons of whole grain mustard, 2 tablespoons of dijon mustard, 1 tablespoons of horseradish, 3 tablespoons finely minced shallots, 3 tablespoons of fried shallots.
步驟 3
接著開始加入調味至碗中:2湯匙顆粒芥末醬、2湯匙傳統芥末醬、1湯匙西洋山葵、3湯匙生紅蔥頭、3湯匙炸紅蔥頭。
STEP 4
Add in 2 tablespoons of Extra virgin olive oil, 2 tablespoons of Balsamic vinegar, 2 tablespoons of Sriracha chili sauce and 1 tablespoon of capers. Add 1/2 teaspoon of sea salt and black pepper. Finally mix everything together evenly.
步驟 4
再加入兩湯匙初榨橄欖油、2湯匙巴薩米克、2湯匙是拉差甜辣醬、1湯匙酸豆。1/2茶匙海鹽及黑胡椒。接著將所有的調味跟牛肉混合均勻。
STEP 5
For plating, start with a bowl of arugula leaves. Add in balsamic vinegar and olive oil. Grind a bit of black pepper for taste.

在碗中放入生芝麻葉,加入巴薩米克醋醬、橄欖油、磨一點點黑胡椒,接著簡單混合。
STEP 6
Drain and lay arugula salad onto plate. Use a metal ring (optional) and lay on top of the salad. Fill in the ring with beef tartare until it is full. Press down on the top to flatten the top. Remove metal ring.
步驟 6
將芝麻葉瀝乾,擺放在盤子中間,用金屬的圓形模型放在盤子中間、生菜上面,將預攪拌好的牛肉填滿模型,接著將模型取掉。
STEP 7
Carefully crack an egg and separate the egg white and egg yoke. Carefully place the egg yoke on top of the beef tartare.
步驟 7
小心地將蛋白及蛋黃分離,將蛋黃放上牛肉塔的上方。
STEP 8
Shred some parmesan cheese on top. Grind a bit of black pepper for taste and plating. Place a spoonful of whole grain mustard on the plate and add a few crackers to the side.
步驟 8
磨一些帕瑪森起司、黑胡椒在整道菜的上面,再放一匙的顆粒芥末醬在旁當佐醬、放上薄脆餅乾或法國吐司當搭配,這道菜就完成了。

みんな大好きなおかず、チキン照り焼き♫

揚げおにぎり
材料
6人分
鶏むね肉 455g (骨なし、皮なし)
塩 少々
コショウ 少々
水 大さじ2
コーンスターチ 小さじ1 ½
しょうゆ ¼カップ (60g)
ブラウンシュガー 大さじ2
生姜 (みじん切り) 小さじ1
にんにく (みじん切り) 小さじ1
ハチミツ 大さじ1
ごま油 小さじ1
みりん 大さじ1
サラダ油 大さじ2
パプリカ (千切り) 1カップ (100g)
人参 (千切り) 1 カップ (120g)
炊いたごはん 4カップ (800g)
溶き卵 3個分
パン粉 2カップ (100g)
青ネギ (薄切り) 1カップ (100g)
作り方
1.大きめの計量カップに水とコーンスターチを入れて混ぜる。しょうゆ、ブラウンシュガー、生姜、にんにく、はちみつ、ごま油、みりんを加えて、よく混ぜる。
2.スライスした鶏むね肉に塩コショウし、味を調え、(1)のソース1/4カップ(60ml)を鶏肉が隠れるくらいまで注ぎ、おいておく。ソースとスライスした鶏肉を混ぜ合わせ、ラップをして冷蔵庫で30分以上マリネする。
3.中火にかけた大きい深めのフライパンに残りのソースを入れ、沸騰させる。沸騰したら弱火にして10分ほど、とろみがつくまで混ぜながら煮詰める。ボウルに入れておいておく。
4.同じフライパンにサラダ油大さじ1を加え中火にかけ、鶏肉を入れて3分ほど炒め、裏返してさらに3分炒める。鶏肉の上にソース大さじ1をかけて混ぜる。フライパンから取り出し、おいておく。
5.フライパンスに残りのサラダ油を入れ、千切りにした人参とパプリカを加える。塩、コショウで味を調え、3~4分野菜が柔らかくなるまで炒める。鶏肉をフライパンに戻し、鶏肉と野菜を覆うくらいの量のソースを少しずつ加える。
6.炊きあがったごはん⅓カップ (約65g)をラップの上にのせて平らにする。(5)の鶏肉と野菜をご飯の中心に重ね、ご飯をラップで包む。四角い形にし、残りのごはんと具材で繰り返す。おにぎりは冷蔵庫で30分ほど冷やす。冷やしたおにぎりを溶き卵に浸し、パン粉をまぶす。余分なパン粉を振り落とす。
7.鍋に1cmほどの油を入れ熱し、180℃になったら(7)を入れ、黄金色になりカリッとした食感になるまで各面約3分ずつ揚げる。冷却ラックに移し、塩で味を調える。
8.半分に切って、残りのソースをディップ用に用意したら、完成!

1 lb boneless, skinless chicken breast(455 g)

1 ½ teaspoons cornstarch
¼ cup soy sauce(60 g)
2 tablespoons brown sugar
1 teaspoon fresh ginger, minced
1 teaspoon garlic, minced
1 tablespoon honey
1 teaspoon sesame oil
1 tablespoon mirin
2 tablespoons cooking oil
1 cup bell pepper(100 g), julienned
1 cup carrot(120 g), julienned
4 cups short grain rice(800 g), cooked
3 eggs, beaten
2 cups panko breadcrumbs(100 g)
1 cup scallion(100 g), thinly sliced
Preparation
1.In a large measuring cup, combine water and cornstarch. Stir until combined and add soy sauce, brown sugar, ginger, garlic, honey, sesame oil, and mirin. Mix well.
2.Season sliced chicken breast with salt and pepper, then pour ¼ cup (60 ml) of the sauce over the sliced chicken just until covered, and set aside. Mix the sauce with the sliced chicken, cover, and marinate in the refrigerator for at least 30 minutes.
3.In a large skillet over medium-high heat, pour the rest of the sauce and stir occasionally as it comes to a boil. Once boiling, reduce heat to low and simmer for 10 minutes, or until the sauce has thickened. Set aside in a bowl.
4.In the same skillet, add 1 tablespoon cooking oil and raise heat back to medium-high. Place sliced chicken pieces in the pan and cook for 3 minutes, flip, and cook an additional 3 minutes. Pour 1 tablespoon of the reduced sauce over the chicken and stir.
5.Remove from the pan and set aside.
6.Add the remaining cooking oil into the skillet and add the julienned vegetables. Season with salt and white pepper, and cook 3-4 minutes or until vegetables have softened. Add back the chicken and gradually add just enough sauce to coat the chicken and vegetables.
7.Take ⅓ cup (65 g) of cooked rice and flatten out on a piece of plastic wrap. Layer the cooked chicken and vegetables in the center of the rice and wrap the rice around the fillings. Form into a square shape and repeat with the remainder of the rice and filling. Chill rice balls in the refrigerator for 30 minutes.
8.Dip the rice ball in beaten eggs, then coat with panko. Shake off any excess bread crumbs.
9.Heat ½ inch (1 cm) oil in a skillet to 350˚F (180˚C) and fry for 3 minutes on each side or until golden and crispy. Move to a cooling rack, and season with salt.
10.Cut in half and serve with the remaining sauce for dipping.
