京都│神出鬼沒。純素POP UP CAFE
這天吃完午餐後,Imaginary Cafe 的店主邀請我們去他家坐客,本來以為只是聊聊天,殊不知店主太熱情,給我們「隨便」做了個純素下午茶!他可是花了很多年研究料理的,還做了一個很可愛的食譜本子。最意外的是讓我吃到了他自製的純素乳酪,超級好吃!
還有,我發現店主很懂和很享受療癒別人。尚記得我們是在台東認識的,當時他幫我做了一個「完全不碰我身體的按摩」,但我居然覺得身體有得到舒緩,我知道很難想像,有機會你們自己去試試吧!今次在他家發現這雙木屐,仔細看只有一個支撐點,又是他為了能療癒他人的發明。
Imaginary Cafe 沒有實體店,只有當社區或不同機構舉辦活動時,會以POP UP CAFE的形式出現。可是不用擔心,他們參加的活動還挺多的,可以去臉書查看。
PS 我已過了追星的年紀,但現在起,可以改為追 Imaginary Cafe,去日本前,先窺探一下他們的行蹤 😙
After lunch, the owner of Imaginary Cafe ~想像的民族料理店~ invited us to his home, I thought it's just a simple chatting, but the owner is too enthusiastic that made us a "simple & easy" vegan afternoon tea! He spent many years practicing creative cooking, and made a very cute recipe book to record all his dishes. The most unexpected thing is that I had a chance to try his homemade vegan yogurt, which is super delicious!
Also, I found that the owner enjoys healing people so much. I still remember the day we met in Taitung, Taiwan. At that time, he did a "massage that didn't even touch my body", but I actually felt that my body was healed for somehow. I know it's hard to imagine, try it yourself next time! On that day, I found this pair of clogs in his home, and if you look at it carefully, you will find that there's only one support point, this is another thing he invented for healing people.
Imaginary Cafe does not have a real store. It will appear as a POP UP CAFE only when the community or a different institution holds an event. But don't worry, they have a lot of activities, you can check out their Facebook.
PS I have passed the age of chasing celebrities, but now I can chase Imaginary Cafe instead.

Biggest Nutrition and Food Myths Busted
“A raw-food diet provides enzymes that are essential to healthy digestion.”
“Raw foods are unprocessed so nothing’s taken away; you don’t get the nutrient losses that come with cooking,” says Brenda Davis, R.D., co-author of Becoming Raw: The Essential Guide to Raw Vegan Diets (Book Publishing, 2010). But the claim by some raw-food advocates that eating raw boosts digestion by preserving “vital” plant enzymes, Davis explains, just doesn’t hold water. “Those enzymes are made for the survival of plants; for human health, they are not essential.”
It’s true that heating a food above 118°F inactivates plant enzymes, “since enzymes are proteins and proteins denature [break down] with heat,” explains Andrea Giancoli, R.D., a Los Angeles-based spokesperson for the American Dietetic Association. “But those enzymes are denatured—and thus inactivated—when they reach our stomachs. Our stomach acids are designed to break down proteins very efficiently.” If associated with living microorganisms (such as those in fermented foods like sauerkraut), plant enzymes might reach the small intestine intact, adds Davis, “but their overall contribution to human digestion appears minimal.”
What about the claim by some raw-foodistas that our bodies have a limited lifetime supply of enzymes—and that by eating more foods with their enzymes intact, we’ll be able to spare our bodies from using up their supply? “The reality is that you don’t really have a finite number of enzymes; you’ll continue to make enzymes as long as you live,” says Davis. Enzymes are so vital to life, she adds, “the human body is actually quite efficient at producing them.”

✅ Secrets for crunchy cucumber kimchi:
1. choose small and firm instead of big and soft
2. cut off blossom ends of a cucumber
3. pour over salty "boiling water" for soaking
4. drain the water out properly
✅ YOU WILL NEED:
4 cucumbers
1/2 small onion
1/5 carrot
20g chive
4 tablespoons Korean chili powder (고추가루 guchu garu)
2 tablespoons of fish sauce (멸치액젓 myulchi aekjeot )
2 teaspoons minced garlic
1 teaspoon ginger
1.5 tablespoons green plum syrup (매실청 Maesil chung)
*if not available, use '2 tablespoons of grated apple + 1 teaspoon sugar',
or just '2 teaspoons of sugar' instead
1/2 tablespoon sugar
1 tablespoon roasted sesame seed

這是一個似乎沒有很多人注意到的話題,但我想帶起有關這個的意識。我不再用"無油"或"無糖"等這些字眼來標註我的食譜,因為我覺得這是引起現代許多人飲食失調,沉入健康飲食痴迷症的潛在原因。每個人是要去找適合自己的飲食沒有錯,但不要被食物綁架了。我們活在一個充滿 diet culture 、資訊爆炸的世代,重要的是有獨立思考、判斷是非、自行查證可靠來源的能力。希望我們能夠一起朝著沒有利益所造成的傷害、負面影響、與 diet-free 的理智世界前進。
I've stopped using "oil-free" or "sugar-free" in my recipes cus I think it's one of the triggers to eating disorder and orthorexia. Yes, we need to find the right diet for ourselves but don't go down to the "clean" rabbit hole. I feel this diet culture has become toxic and almost out of control in Taiwan. I hope one day we could live in a sensible world without cruelty and diet urges.
