【無奶香芒雪糕DIY】
最近熱到一個不行,昨天室外溫度高達36°C耶,所以要想辦法解暑才行!剛好記得早陣子在【Club O 綠色生活】學會了做一款無需加奶的雪糕,非常適合蔬食者喔,而且做法極其簡單!
食材:香蕉、芒果、龍舌蘭糖漿、堅果
做法:1. 把水果切粒冰一冰 2. 把冰好的水果放進攪拌機,再加入適量龍舌蘭糖漿 3. 攪拌 4. 加上適量堅果作裝飾 5. 完成!
在選購水果方面,香蕉是作雪糕必備的,然後再根據你的喜好加入其他的水果。另外,我們很多時候在做甜點時會用到白砂糖,其實很多人不知道白砂糖不是素喔,因為在提煉的過程裡,商家會用到動物的骨骼(一般是牛骨)去加快漂白的過程,所以如果可以的話,我都會盡量避免吃到白砂糖。
而最近我就收到一支【有機龍舌蘭糖漿】,於是就試用一下,好甜點但不好甜的我,覺得這支【有機龍舌蘭糖漿】還不錯喔,直接吃了一口也不會覺得太甜,取適量地加入了這款雪糕,甜味剛剛好!龍舌蘭糖漿除了可以應用在甜點裡,一般做菜啦、飲品或醬汁製作啦等各方面也可以用喔!由於是直接從龍舌蘭莖部榨取汁液,以熱水解方式,再經過多重過濾及蒸發提取,過程中沒有涉及任何動物成份,蔬食者可以放心使用。但記住所有食用產品都不要過量使用喔!
【Banana Mango Ice Cream DIY (non-dairy)】
It's pretty hot recently, it was about 36°C outdoor yesterday, need to think about how to relieve the summer-heat. I learnt how to make a non-dairy Ice Cream in 【Club O Green Living 】a few weeks ago.
Ingredients: banana, mango, agave syrup, nuts
1. slice the fruits into cube and put them in the freezer 2. put them into a blender with a bit agave syrup 3. BLEND 4. add some nuts to decorate 5. DONE!
When you are choosing fruits, banana is the base, then you can add whatever fruits you like. Besides, when we are making desserts, we always use "White Sugar", but most of us don't know it's actually not vegan because producers will use animals' bone to speed up the process of bleaching. So I will try to avoid having white sugar in my daily life.
I received a 【Organic Agave Syrup】recently, I like sweet but not tooo much, the taste of this Organic Agave Syrup is good for me, not too sweet , I added a bit into my DIY Ice cream, it made the taste even better. Besides using agave syrup in dessert, you can even use it in beverage, sauses, cereals and so many.
The process of producing agave syrup won't contain any animal products, it's a vegan-friendly product. But remember not overly use it.

We love sorbet, sorbet is usually made with fresh fruit and sugar, that's all. There's no fat, just use the best and the most fresh fruits you like. It’s so simple but amazing delicious.

Passion Fruit & Mango Sorbet Recipe
☞ Serves 3-4
✎ Ingredients
☞ For mango puree
2-3 large mangos, 500g (peeled and stones removed)
2 passion fruits
☞ For simple syrup(we need 6~7 tbsp)
granulated sugar 100g
water 100g
✎ Instructions
☞ For simpe syrup
1. Add the sugar and water to a small saucepan over medium heat. Stir until sugar is dissolved or the temperature reaches to 105C.
2. Let the syrup cool, then pour into a bottle with a lid. Set aside.
☞ For mango puree
1. Wash the mangos, then peel the mango and cut into small cubes and place in a large bowl.
2. Cut the passion fruit in half , scoop out the seeds and pulp into a fine metal strainer placed over a bowl, use a spoon to push the pulp through the strainer, leave the seed behind.
3. Add the mangos cubes and passion fruit juice into a food processor, blend until completely smooth. Pour into a large bowl.
☞ For Sorbet
1. Gradually add simple syrup one tablespoon by one tablespoon and mix well each time, until it's sweet enough as you like. Sugar plays an important role in the sorbet. Less sugar will make the sorbet becomes icy. Add enough sugar will let the texture of sorbet more smooth.
2. Pour the sorbet mixture into a freeze-safe container. Freeze for 1hr until semi-solid.
3. Stir to break up the ice crystals, and returning to the freezer for another 1hr, totally you might need 4-6 times once an hour to break up the ice crystals.
4. Freeze overnight until firm.
5. Before served, let the sorbet sit for 20 mins at room temperature.
** If you're not sure how much sugar should be added in, you can try sorbet egg float test, the methods can find in video.

做雪酪的材料只有新鮮水果跟糖,就這麼簡單,幾乎任何一種水果都可以做成雪酪;但由於每一次買到的水果的水份跟甜度都會不同,因此糖的用量會是一個關鍵,特別提醒 ,糖在雪酪裡扮演很重要的角色,糖愈少,結冰點愈高,口感亦會粗糙,適當的糖冰點降低,結成的冰晶則非常細緻,可以讓雪酪出現光澤和綿密口感。

Passion Fruit & Mango Sorbet 百香芒果雪酪 怎麼作呢?
下面是百香芒果雪酪的作法與食譜:
☞ 大約可做出3-4人份
☀︎ 片中使用攪打芒果果泥的料理機是 Cuisinart(美膳雅) 四杯的食物處理機,如果家裡沒有這種類型的食物處理機,可以改用果汁機也可以,不需要一定能打冰塊的那種
☀︎ 在打散冰晶的過程中,我們使用的均質機一樣是 Cuisinart 他們家的極輕量多功能攪拌棒,沒有均質機也可以把雪酪挖出來倒入料理機或是果汁機中攪打,或是直接用叉子攪打就可以了,用機器打會比較滑順,同時也可以拌入更多的空氣,讓雪酪輕盈一些些,但這不是必要的,用手是完全沒問題的喔 😋
✎ 材料 / Ingredients
☞ 百香果與芒果雪酪
芒果 3顆芒果,削皮去核後淨重取500g果肉
百香果 2顆
簡易糖漿 6~7大匙
✎ 做法 / Instructions
☞ 簡易糖漿
1. 小鍋裡加入100克糖跟100克的水,以中火煮至糖都溶解,煮滾後再繼續煮2分鐘,或煮到105°C即可
2. 煮好的糖漿稍微放涼後,倒入有蓋可保存的容器裡備用。此份糖漿只會用到6~7大匙,不會全用完,剩餘的糖漿可以用來調雞尾酒或做飲料,請冷藏保存
☞ 百香果與芒果果泥
1. 將芒果洗淨,去皮去核,把果肉切成小塊
2. 把百香果切半,用湯匙挖取果肉,用篩網過濾掉籽籽,只保留它的果汁
3. 在食物料機理裡加入芒果與百香果,把他們打成細緻的果泥,然後倒在一個大的容器裡備用
☞ 做雪酪
1. 用量匙一大匙做計量,在果泥裡一大匙一大匙地加入簡易糖漿,每加一匙都要攪拌均勻,直到甜度適中為止。請留意,糖在雪酪裡扮演很重要的角色,糖含量不足,雪酪的結冰點太高較容易結冰,口感亦會粗糙,而足夠的糖量會讓冰點降低,雪酪質感會更為細緻,若覺太甜也可以加檸檬汁來平衡
2. 將混合糖漿的雪酪果泥倒入金屬的容器裡,送進凍箱冰一小時,若你的冰箱一小時後邊邊沒結冰晶,就再多冰半小時
3. 用湯匙刮取邊緣和底部的冰晶,然後攪散。之後重複此動作約四到六次,每一小時冰凍一次,也可以用均質機、食物料理機或果汁機來代替手動打散冰晶
4. 最後一次打散冰晶的程序完成後,就可以直接冰過夜了
5. 在享用前,將冰了一夜的雪酪放在室溫下約20分鐘,質地會比較柔軟綿密
