🚨VHC Grilled Lemongrass Pork Chops Recipe🚨

Ingredients:
6 pork chops bone-in
1 lemongrass stalk - minced
1 shallot - minced
1/4 cup oyster sauce
1 tbsp fish sauce
2 tbsp sesame oil
1 tsp sugar
3 tbsp honey
2 tsp white pepper
1 tsp garlic powder
Basting sauce:
2 tbsp honey
1 tbsp oyster sauce
1/2 tsp white vinegar
1 tsp sesame oil
Freshly cracked black pepper

Steps:
1. Combine all ingredient in a mixing bowl. Mix well.
2. Add pork chops and rub the sauce evenly on each pork chop.
3. Marinate for at least 2 hours but best if overnight.
4. Make basting sauce before you cook the meat. Mix all ingredients for basting sauce and set aside.
5. Bake at 400F for 20 minutes, flipping half way. Add a little basting sauce on top to keep meat moist.
6. Remove and add basting sauce on pork chops. Place them on the grill for delicious charred marks. Or turn on oven broil to high.

🚨VHC Egg & Pork Meatloaf Recipe 🚨

Ingredients:
1 lb ground pork
4 dried shiitake mushrooms - optional
1 garlic clove - minced
1 green onion - chopped thinly
1 shallot - minced
1/2 tbsp fish sauce
1 tbsp granulated chicken bouillon
2 tsp tapioca starch
4 large eggs
1 oz wood ear mushrooms*
1 oz bean thread noodles*
1/2 tsp ground black pepper*
*please note that I do not have exact measurements for these ingredients.

** Meatloaf is baked at 400 F. **

Steps:
1. Soak shiitake mushrooms in hot water until rehydrated (about 15 min). Rinse and drain. Pat dry with paper towels.
2. Remove stems and chop the shiitake mushrooms into smaller pieces.
3. Soak wood ear mushrooms and bean thread noodles in warm water for 10 min. Rinse and drain. Pat dry with paper towels.
4. Chop wood ear mushrooms and bean thread noodles into smaller pieces.
5. Separate 3 eggs - place egg yolks in a small bowl and egg whites in a larger mixing bowl.
6. Beat egg yolks and leave in the refrigerator to chill.
7. In the large mixing bowl with the egg whites, add the ground pork, bean thread noodles, both mushrooms, garlic, shallots, green onions, fish sauce, chicken bouillon, black pepper, tapioca starch and 1 large egg. Mix well. Use gloves (optional).
8. Grease pan. I used a 9” bread loaf pan.
9. Place mixture in the pan and pack the meatloaf mixture down.
10. Bake the meatloaf at 400 F for 15 min.
11. Remove meatloaf and add yolk mixture to the top. Spread evenly. Bake for another 8 min. or until the center is fully cooked. Test by inserting a bamboo skewer in the center. If it comes out clean, the meatloaf is done.
12. Let the meatloaf cool completely before removing. Cut into slices and serve with rice.

【超簡單料理: 越式搖搖牛 - 醬燒牛肉】
※ 以下食材 for 3人份
菲力、 沙朗、肉眼牛排 644g
魚露 2 大匙
醬油(生抽) 1大匙
老抽 (可省略) 1大匙
糖 1大匙 (我用的是木醣醇)
橄欖油 2大匙 (其他油也可)
蘇打粉 1小匙 ( 無可,但有的話肉較嫩)
奶油 1大匙
鹽 、黑胡椒
萊姆 1 顆
洋蔥1顆
蒜 4 顆
蔥 2 根
紅洋蔥 1 / 4 顆 (紅蔥頭也可 )

I don’t know about you but cooking to me is all about quick, nutritional and delicious. And when I do my weekly meal prep., one of my favourite easy recipes is Vietnamese shaking beef. It is so easy to marinade a day before and just couple of minutes of cooking, done!! Love eating them with fresh salads which it is suitable for paleo diet.
【Shaking Beef】
※ Ingredients for 3 people
Rib fillet 644g
Fish Sauce 2 tbsp
Soy sauce 1 tbsp
Dark soy sauce 1 tbsp (Optional)
Sugar 1 tbsp ( I used Xyrital sugar)
Olive oil 1 tbsp
Baking powder 1 tsp ( Optional )
Butter 1 tbsp
Salt & Black pepper
Lime x 1
Onion x 1
Garlic x 4
Spring onion x 2

Preparation:
1. Debone the chicken legs. Make a few cuts on the meat side.
2. Prepare a mixing bowl. Mix the lemongrass, minced garlic, chili, scallion white, shallots, soy sauce, fish sauce, honey, black pepper crush and cooking oil.
3. Marinate the chicken legs for at least 2 hours.
4. Heat up a frying pan on medium high heat, add some oil. Fry the chicken on both sides.
5. Add 1 Tbsp of water into the pan and cover with the lid until cooked through.

【蔥油香茅雞腿】
雞腿........................2塊
香茅(略拍切細)......5枝
蒜蓉........................3瓣
辣椒(切細).............2隻
蔥白(切細).............1棵
乾蔥(切細).............1粒
蜜糖........................1湯匙
醬油........................1湯匙
魚露........................1湯匙
生油........................1茶匙
黑胡椒碎.................1/4茶匙
做法:-
1. 雞腿起肉,然後在肉的一面,用小刀?幾下備用。
2. 將香茅、蒜蓉、辣椒、蔥白、乾蔥、醬油、魚露、 蜜糖、黑胡椒碎、生油混合拌勻成醃料,雞腿加入醃料拌勻醃兩小時。
3. 熱油鍋下雞腿,煎至兩面金黃,可於中途下1湯匙水入鍋,然後蓋半鍋蓋待熟拿出,與蔥油同吃。(如不用煎焗的烹調方式,也可以真接拿去烤箱去烤熟)

Ingredients:
Chicken drumsticks - 5 Pcs
Chicken wings - 5 Pcs
Minced garlic - 1 Tbsp
60°N Fish sauce - 2 Tbsp
Sugar - 1 tsp
Black pepper - 1/4 tsp
Butter - 1.5 Tbsp
Tapioca starch - 2.5 Tbsp

Preparation:
1. After cleaning the chicken wings and drumsticks, dry them with a kitchen towel.
2. Marinate the chicken with minced garlic (1/2 Tbsp), fish sauce, sugar and black pepper for 30 minutes.
3. Coat the chicken wings and drumsticks with tapioca starch. And let it rest for 5 minutes.
4. Deep fry the chicken 2 times to cook through. Using a high oil temperature for the second deep fry.
5. Heat up a frying pan with a small amount of oil. stir fry butter (1 Tbsp) with minced garlic (1/2 Tbsp).
6. Apply butter (1/2 Tbsp) on the surface of wings and drumsticks. Pour the sauce onto them before serving.

【越南魚露牛油雞翼】
材料:-
雞鎚.....................5隻
雞翼.....................5隻
蒜蓉.....................1湯匙
越南60°N魚露....2湯匙
糖.........................1茶匙
黑胡椒粉..............1/4茶匙
牛油.....................1.5湯匙
木薯粉.................2.5湯匙
做法:-
1. 雞鎚和雞翼洗淨瀝乾,然後加入1/2湯匙蒜蓉、魚露、糖和黑胡椒粉醃30分鐘。
2. 將已醃入味之雞鎚和雞翼平均地沾上木薯粉,然後待5分鐘讓雞鎚和雞翼回潮。
3. 把雞鎚和雞翼放入熱油鍋內炸熟拿出;然後調高油溫復炸拿出。
4. 鍋內下少量油燒熱,下1湯匙牛油和1/2湯匙蒜蓉炒香關火;把另外1/2湯匙牛油塗在雞鎚和雞翼表面再淋上蒜蓉牛油汁便可。

生粉 少許
蘸春卷魚露:
魚露 1小碗
甘筍 刨絲
蒜茸 1小碗
辣椒 隨意(切碎)
青檸汁 1小碗
糖 適量
水 適量
所有材料拌勻即可,配青瓜、生菜
做法:
1.豬肉先加入魚露、糖及胡椒粉拌勻
2.雲耳洗乾淨浸軟切細
3.粉絲浸軟擠乾切碎
4.沙葛去皮切細粒
5.所有材料加入豬肉攪勻
6.春卷包好,滾油下鑊先炸一次
7.取出攤涼一會,滾油下鑊再炸一次
Ingredients:
Ready-made spring roll wrappers 1 pack
Half-lean half-fat pork ½ Catty
Black fungus 1 small bowl
Vermicelli 1 small pack (soaked in water)
Yam bean 1 pc
Fish sauce Some
Sugar Some
White pepper Some
Corn starch Some
Dipping sauce:
Fish sauce 1 small bowl
Carrots Some, grated
Garlic 1 small bowl, minced
Chili Some, diced
Lime juice 1 small bowl
Sugar Some
Water Some
Note: Mix all above ingredients together, can serve with cucumbers and lettuce on the side.
Steps:
1. Mix pork with fish sauce, sugar, and white pepper.
2. Clean black fungus, soak until soft, cut into small pieces.
3. Soak vermicelli to soft, drain and dry, cut into small pieces.
4. Remove skin on yam bean, cut into small cubes.
5. Add all ingredients to the pork, mix well.
6. Wrap spring rolls with the prepared pork mixture, deep fry in hot oil.
7. Remove from oil, drain and let cool for a little bit, deep fry the spring rolls again.
