It was the Spring Festival about 2 years ago when I received a call from a stranger. 揚げだし鶏もも大根
2人分
材料:
鶏もも肉 300g
酒 大さじ1/2
塩 適量
片栗粉 大さじ3
揚げ油 適量
◾︎だし汁
だし汁(白だしめんつゆ使用)
※表示の通りうどんの汁くらいにうすめて 参考:めんつゆ60ml+水320ml
しょうゆ 大さじ1
大根おろし 5センチ分
えのき (根を切り落とし5センチの長さに切る) 小1袋
一味唐辛子、ねぎ お好みで
作り方:
1.だし汁を作る。だし汁、しょうゆを鍋に入れ、煮たったらえのきを入れ一煮立ちさせ、大根おろしの半量を入れる。
2.鶏肉の余分な脂や筋を取り一口大に切って、酒と塩を揉み込み下味をつける。
3.(2)を袋に入れて片栗粉をまぶし、油で揚げる。
4.(3)を器に盛り付け、(1)のだし汁をかける。
5.(4)に残りの大根おろしと、お好みでねぎや一味唐辛子を添えたら、完成!

Fried chicken with dashi broth
Servings: 2
INGREDIENTS
300g chicken thigh
1/2 tablespoon sake
Some salt
3 tablespoon potato starch
Some oil (for frying)
◆Dashi broth
Noodle soup base (dilute with water as a package instruction)
1 tablespoon soy sauce
5cm Japanese radish aka Daikon (grated)
1 packet enoki mushroom (remove the root, cut into 5cm pieces)
Some chili powder
PREPARATION
1. To make dashi broth, heat diluted noodle soup base and soy sauce in a pan. Add enoki mushroom when boiled. Add half of grated daikon.
2. Remove excess fat and tendons from chicken thigh. Cut into bite-size pieces. Season with salt and sake.
3. Coat the chicken with potato starch in a plastic bag, then deep-fry.
4. Place fried chicken (3) in a bowl. Pour dashi broth (1) over the chicken.
5. Put rest of grated daikon. (Sprinkle with chili powder as you like.)
6. Enjoy!

1. 鶏むね肉に酒、塩をまぶし10分ほど置いて馴染ませる。皮目にフォークで数カ所穴を開け、裏返し、キッチンペーパーで軽く水分を拭き取り、観音開きにしたら包丁の背で叩き、厚みを均等にする。
2. (1)にまいたけをほぐしながらのせ、端から丸めて形が崩れないように2重にきつめにラップで包み、端をキャンディ結びにする。
3.耐熱皿の上にのせ、600wの電子レンジで2分加熱し、裏返して同様に加熱する。
4.煮汁の材料を鍋に加えて中火にかける。一煮立ちしたら(3)を加える。
5.煮立ってきたら弱火にし、落し蓋をして30分ほど煮る。(途中で汁をかけながら煮込む。)
6.火を止め、煮汁につけたまま2時間ほど置いて味を馴染ませる。
7.(6)を取り出し、残った煮汁を強火にして煮詰め、タレを作る。
8.食べやすい大きさに切り分け、皿に盛り付け、タレをかけて完成!

1 chicken breast
1 tablespoon sake
1 teaspoon salt
60g maitake-mushroom
Some leek strips (for toppings)
Some broccoli sprouts (for toppings)

300ml water
100ml sake
80ml soy sauce
40g sugar
1 clove garlic (grated)
PREPARATION
1. Put sake and salt over chicken breast and rest for 10 minutes. Poke the chicken skin with a fork. Pat dry with paper towels. Use the dull side of the knife, pound the chicken to flatten evenly
2. Break maitake-mushrooms and place on the chicken, then roll. Plastic-wrap it tightly.
3. Microwave the wrapped chicken on a plate (microwave-safe) for 2 minutes at 600W. Turn over, then 2 more minutes.
4. Heat all ingredients for soup and the chicken (3, remove the plastic) in a pan over medium heat.
5. Turn down the heat to low once boiling. Simmer for 30 minutes with a small wooden/paper/silicon lid resting directly on the chicken. (It’s Japanese cooking trick called “Otoshibuta”.) Spoon soup over the chicken a few times to keep moisturized while simmering.
6. Turn off the heat, rest for 2 hours.
7. Remove the chicken from the pan and cut into small slices. Simmer and thicken the soup over high heat to make sauce.
8. Place the chicken slices on a plate and pour some sauce. Serve with leek strips and broccoli sprouts as you like.
9. Enjoy!

1.レタスはひと口大にちぎる。
2.豚肉を広げて(1)をのせ、手前からきつめに巻き、塩、コショウ、薄力粉を全体にまぶす。
3.フライパンにサラダ油を引いて中火に熱し、(2)を巻き終わりを下にして並べ入れる。時々転がしながら全体に焼き色を付ける。

1. Tear lettuce into bite-size pieces.

INGREDIENTS
1 leaf of lettuce
1 beaten egg
200ml water
1 teaspoon chicken soup stock powder
1/2 teaspoon sesame oil
Some scallion
PREPARATION
1. Tear lettuce. Put water, chicken coup stock powder, and lettuce in a mug. Plastic-wrap loosely, microwave at 500W for 3 minutes.
2. Remove the mug, add beaten egg. Wrap and microwave again at 500W for 1 to 2 minutes.
3. Dress some sesame oil and sprinkle with scallion.
