吃甜甜、過好年!剛剛吃完年夜飯的大家,不曉得餐桌上都有什麼菜色呢?也吃了甜點嗎?
昨日去參加 La Maison du Chocolat 的新春作品發表會,真的是大開眼界。「Vegan」果然是近期熱度最高的關鍵詞!現場不僅看到了 Nicolas Cloiseau 主廚(MOF 巧克力職人)精采無比的復活節巧克力創作、品嚐了 #純素巧克力,還搶先試吃到 Pierre Hermé 主廚創作、三月二日才會正式上市的兩款 #純素甜點,且兩位大師本人都在,我一時有點忙不過來,都不知道該先拍、先嚐什麼好!
Nicolas 主廚今年的復活節巧克力雕塑「Les Voyages Extraordinaires」(#非比尋常之旅)靈感來自於他小時候最喜歡的一本書《Vingt mille lieues sous les mers》(中譯《#海底兩萬里》,是法國作家 Jules Verne 在 1869 年出版的科幻小說,描述一艘被誤認為海怪的潛水艇「鸚鵡螺號」的冒險旅程)。主廚精心以純手工打造了一艘熱帶魚型的巧克力潛水艇(美國與法國各僅有一座)、並使用了來自三大洲三個地點的三款風格獨特的巧克力製作復活節蛋,讓所有的消費者也能跟他一起在味蕾尖上環遊世界。三個巧克力分別來自越南、中美洲格瑞納達與西非迦納,其中來自越南的那款批覆巧克力(chocolat de couverture)為純素(végane / vegan),加入了椰奶,在口中香氣迸發時,能瞬間將你帶到藍天碧海白沙灘的熱帶場景,個性極為鮮明。巧克力雕塑本身細節考究,外型充滿童心,是小朋友們看了會非常興奮、大人們也會在心中升起共鳴的作品。
本次一同推出的,還有 #五款水果風味的夾心巧克力,包含覆盆子、黑醋栗、檸檬、柑橘與百香果。有趣的是這五款巧克力分為一般與純素兩個系列,純素系列使用酪梨油取代鮮奶油與奶油等動物性油脂製作甘納許(ganache)、楓糖漿取代白糖。有趣的是,大部分的人在品嚐、比較兩種後,都會驚喜地發現純素的巧克力甘納許水果滋味更為豐富有深度,酸香也更為明亮有層次。
最後一個重頭戲,則是 Pierre Hermé 主廚受邀為 La Maison du Chocolat 設計的兩款 #純素且無麩質的甜點:「Rose des Sables」(玫瑰巧克力酥)與「Fleur de Cassis」(黑醋栗之花)。之前我在歐洲麵包展時遇到 Pierre Hermé 主廚、詢問他對純素甜點的風潮看法,他便向我透露三月會有兩款純素甜點。謎底揭曉,原來就是與 La Maison du Chocolat 合作的最新創作。Nicolas 主廚則告訴我,當他邀請 Pierre Hermé 合作時,其實並沒有「純素」的目標限制,而是大師本人為響應 La Maison du Chocolat 對 #環境永續、#生態平衡 的理念而創作。Nicolas 主廚提到他 #從四年前便開始從頭學習如何使用植物性食材取代動物性食材創作,經過無數次實驗,對他來說是很大的挑戰。La Maison du Chocolat 過去的作品也可見到他 #關心環境與生態的理念,如 2019 年的聖誕節巧克力雕塑以北極熊為主題、品牌也從兩年前開始推出純素的巧克力商品,收到不少消費者的正面回覆。他目前已經開始著手創作更多純素巧克力系列,並認為「#這就是未來的巧克力樣貌」。
繼「無麩質」甜點後,純素風潮看來即將席捲法國,往後吃甜點也能照顧到大眾對環境、動物權的關注以及個人道德觀的選擇,誰說不是一件好事呢?記得點照片看更多細節!

Today is Chinese New Year’s Eve, what did you have on your dinner table? What pastries and desserts have you had?
I got invited to discover the Easter and Spring collections of La Maison du Chocolat yesterday and was really amazed. “Vegan” is apparently the keyword that you can’t miss now. The chef Nicolas Cloiseau presented his Easter chocolate piece as well as a series of fruity chocolates including a vegan version. M. Hermé was there, too, to launch his two vegan pastry creations in collaboration with La Maison du Chocolat.
Themed “Les Voyages Extraordinaires” (“The Extraordinary Trips”), the chocolate piece was carefully sculptured and constructed by hand by the chef chocolatier of the brand, MOF Nicolas Cloiseau. The chef got inspired by Jules Verne's “Vingt mille lieues sous mers” (“Twenty Thousand Leagues Under the Sea”), one of his favourite books in childhood and created this gorgeous work, which speaks to the children as well as to the adventurous spirit of adults. Three characteristic couverture chocolates from Vietnam, Ghana, and Grenada are used to reflect on the chef’s trips discovering great chocolates around the globe, and the customers are invited to enjoy this globe-trotter experience along. Coconut milk is added in the vegan couverture chocolate from Vietnam. While the warm and exotic coconut aroma starts to dance on your tongue, you’d immediately feel that you are transported to an tropical island where the sun is shining and warm wind is kissing your cheeks.
The maison also launches five fruity chocolates in both original and vegan series, including raspberry, blackcurrant, lemon, orange, and passion fruit. Avocado oil replaced cream and butter and maple syrup replaced white sugar to make vegan ganaches, resulting in a much brighter and more intense fruity flavour.
In this Spring collection, the great chef Pierre Hermé is invited to create two vegan and gluten-free pastries, "Rose des Sables" and "Fleur de Cassis”. Chef Nicolas told me that in fact, they didn’t ask Pierre Hermé to make them vegan. The latter made such choice as an echo to Nicolas’ pursuit of a more responsible work ethic and eco-friendly philosophy of creation. The chef Nicolas has been working since four years ago on vegan chocolates by learning how to use vegan ingredients to replace animal products, which is a great challenge as this chocolate, like pastries, are made of butter, cream, sugar, etc. La Maison du Chocolat starts to provide vegan choices since two years ago and the chef’s previous work also shows his constant concern for the environment and endangered animals. For example, his 2019 Christmas chocolate piece featured polar bear and iceberg in a snowy world. The chef told me that the brand has received lots of positive feedback from customer and he believed that “this is what the chocolate of tomorrow going to be”.
Following “San-gluten” (gluten-free), “végane” (vegan) apparently is going to be the next storm sweeping through the French pastry industry. Many might criticise that it’s just another fashion that will soon die out, but Isn’t it wonderful that when you enjoy your pastries and desserts next time, you are also showing your support to environment sustainability and your concern for animal rights?

アメリカカフェ風ベーグルサンド4選
各1個分
■スモークサーモン+クリームチーズ+ワカモレ
材料:
ベーグル 1個
クリームチーズ 50g(50gは目安、あまり少ないと断面に見えない)
●アボカド 1/2個
●玉ねぎ 20g
●レモン汁 1/4個分
●塩 少々
●コショウ 少々
●おろしにんにく 1/2片
スモークサーモン 6切れ
作り方:
1.ワカモレを作る。アボカドは種に沿って縦に1周切り込みを入れてひねって半分にし、皮と種を取り除いたら細かく刻み、みじん切りにした玉ねぎと他の●の材料を全てボウルに入れ混ぜる。
2.ベーグルを半分にスライスして、クリームチーズを塗り、スモークサーモンを並べ、(1)のワカモレをのせてベーグルでサンドして完成!
※ラップや紙に包んでしばらくしたらカットする。
■海老フライ+自家製タルタル+キャベツの千切り
材料:
ベーグル 1個
キャベツ 1/8個
エビフライ 4尾(市販のもの)
●茹で卵 2個(水から13分程中火で茹でる)
●ピクルス 25g
●玉ねぎ 20g
●マヨネーズ 大さじ1
●ヨーグルト 大さじ1
●マスタード 小さじ1
●塩 少々
●コショウ 少々
作り方:
1.キャベツを千切りして水にさらし、シャキッとしたら水気はしっかり切る。
2.タルタルソースを作る。茹で卵は殻をむいて荒めのみじん切り、ピクルスと玉ねぎもみじん切りにしたら他の●の材料を全てボウルに入れて混ぜる。
3.ベーグルを半分にスライスしてマスタード(分量外)を塗り、(1)をたっぷりのせ、その上にエビフライを並べ、(2)もたっぷりのせてベーグルでサンドして完成!
※ラップや紙に包んでしばらくしたらカットする
■オムレツ+レタス+ケチャップ+マヨネーズ
材料:
ベーグル 1個
玉ねぎ 25g
牛ひき肉 40g
卵 1個
オリーブオイル 大さじ1/2
塩 少々
コショウ 少々
レタス 2枚
トマトケチャップ お好み
マヨネーズ お好み
マスタード 少々
作り方:
1.玉ねぎはみじん切りにして、フライパンにオリーブオイルを熱して炒め、しんなりしたらひき肉も一緒に炒めて塩、コショウを加える。
2.卵を溶き入れ、丸く形を整えてオムレツを作る。
3.ベーグルを半分にスライスしてマスタードを薄く塗り、その上に畳んだレタスを置き、(2)のオムレツをのせて、お好みの量のトマトケチャップとマヨネーズをかけてベーグルでサンドして完成!
※ラップや紙に包んでしばらくしたらカットする
■あんこ+生クリーム+いちご
材料:
ベーグル 1個
つぶあん 大さじ4
いちご 5個
生クリーム 100ml
グラニュー糖 7g
作り方:
1.生クリームとグラニュー糖をボウルに入れ、ハンドミキサーで9分立てにする。
2.いちごは洗ってへたを取り、水気を拭き取る。
3.ベーグルを半分にスライスしてあんこを塗り、いちごを最初に真ん中に3ついちごを並べ、残りの2個は空いてる場所に置く。生クリームをのせてベーグルでサンドして完成!
※カットするときに生クリームがダレると切りにくいのでラップや紙に包んで一旦冷蔵庫で冷やしてからカットする。

INGREDIENTS
1 Bagel
50g Cream cheese
1/2 Avocado
20g Onion
A 1/4 Lemon juice
A Salt
A Pepper
A 1/2 clove Garlic
6 slices Smoked salmon
PREPARATION
1.Make the guacamole. Cut the avocado into small pieces, and mix the chopped onions and A ingredients in a bowl.
2. Slice the bagel in half, spread one half with cream cheese, add the smoked salmon, top with the guacamole mix and sandwich it with the other bagel.
* Wrap it in wrap or paper and cut it after a while.
3. Enjoy!
■Fried shrimp and tartar sauce bagel
INGREDIENTS
1 Bagel
1/8 Cabbage
4 Fried shrimp
2 Boiled eggs
Pickles 25g
Onion 20g
A Mayonnaise 1 tbsp
A Yogurt 1 tbsp
A Mustard 1 teaspoon
A Salt and pepper, a little each
PREPARATION
1. Cut the cabbage into thin strips and soak it to water to make it crispy.
2. Make the tartar sauce. Chop the boiled eggs, pickles and onions, and mix all the A ingredients in a bowl.
3.Slice the bagel in half, spread one side with mustard (outside the amount), put plenty of cabbage on it, line the fried shrimp on top of the cabbage, top with plenty of tartar sauce, and sandwich it with the other bagel half.
* Wrap it in wrap or paper and cut it after a while.
4. Enjoy!
■Meat omelet and lettuce bagel
INGREDIENTS
1 Bagel
25g Onion
40g Minced meat
1 Beaten egg
1/2 tablespoon Olive oil
Salt
Pepper
2 leaves Lettuce
Ketchup (to taste)
Mayonnaise (to taste)
Mustard
PREPARATION
1. Finely chop the onions, heat the olive oil in a frying pan and fry the onion, when it softens, add the minced meat until browned, season with salt and pepper.
2. Add the beaten to the pan and shape it into a circular omelete.
3. Slice the bagel in half, spread a thin layer of mustard into one of the slices, place the folded lettuce on top, add the omelet, finish with ketchup and mayonnaise to taste, and sandwich it with the other bagel half.
* Wrap it in wrap or paper and cut it after a while.
4. Enjoy!
■Sweet bean paste and strawberry bagel
INGREDIENTS
1 Bagel
4 tablespoons Sweet red bean paste
5 Strawberries
100ml Heavy cream
70g Granulated sugar
PREPARATION
1. Pour the heavy cream and granulated sugar in a bowl and mix for around 9 minutes with a hand mixer.
2. Slice the bagel in half, spread the bean paste on one half, line up the strawberries, top with whipped cream and sandwich it with the other bagel half.
* Wrap it in wrap or paper and cut it after a while.
3. Enjoy!

⇨ Day 1
☆ Chocolate Protein Smoothie
2 TBS Tropeaka Lean Protein Powder
2 TSP Tropeaka Immunity
1 TSP Tropeaka Maca Powder
1 TSP Tropeaka Cacao Powder
6 ice cubes / almond milk
250 ml of almond milk
20g of Brazil Nuts
Banana (Optional)
☆ Burrito Bowl:
Beef (Porterhouse, Scotch Fillet, or Rump)
2-3 Tomatoes
1 Large Avocado
Button Squash
Sour Cream (optional)
Cheddar Cheese (optional)
Salad Leaves
1/2 Red Onion
1 Lemon
Corainder
First make pico de gallo. Chop up 2 tomatoes, 1/2 a red onion, some corainder. Mix them in a bowl and squeeze in 1/2 a lemon or 1 lemon.
Mash up your avocado and add the remaining lemon or lime. Your preference.
Chop up the steak into small cubes and fry it over stove with coconut oil. Season with salt and pepper.
Then just mix them all together in a bowl. Use your favourite salad leaves, or vegetables. I've roasted some squash here as well.
⇨ Day 2
☆ Matcha Protein Cleanse Smoothie:
1 TSP of Tropeaka Matcha
1 TBS of Tropeaka Vanilla Lean Protein Powder
2 TSP of Tropeaka Ultra Cleanse
Stevia (optional - I use a few drops)
Banana or your favourite fruits (Optional)
1/2 an Avocado
250ml Almond Milk/Coconut Milk
☆ Smoked Salmon Salad
Honestly I just mix everything together. I don't have measurements of this one.
☆ Kale, sweet potato and Roast Chicken
I rarely ever roast my own chicken anymore. I just buy them from the local charcoal chicken store.
I coat my sweet potato with some coconut oil and roast it in the oven for about 15-20 mins in total. Flip the sweet potatoes once.
For kale, i normally stir fry is quickly with some coconut oil and salt so that it's easier to digest.
⇨ Day 3
☆ Matcha Chocolate Truffle
200g of Cacao Butter
28g of Coconut Oil
80ml of coconut Cream
1 tsp of vanilla extract
Stevia/erythritol (To taste - you can add both)
For the coating:
Some matcha powder and erythritol (Swerve) - mix them together.
This is actually quite hard to make.
First melt the cacao butter and coconut oil slowly using a double boiler. Make SURE you don't burn the butter. You'll have to do it VERY slowly. I melt probably about 3/4 of the cacao butter then i chuck all the rest of the ingredients in the food processor and blend them together so that it is like a ganache texture. Not watery, more like creamy! Add your favourite sweetener. You can use coconut sugar, caster sugar, honey, maple syrup, etc. Then pop the mixture into a piping bag or a zip lock bag and squeeze them into an ice cream/ chocolate mold. Then freeze it for about 15 minutes or so, or longer.
Then take it out and let it rest for a while before you coat them!
☆ Prawn + Squash + Salad
I just roast the squash in the oven for about 15 mins. Coated with coconut oil and salt
For the prawns. Just fry it with some coconut oil, some tomato paste, salt, pepper, garlic, ginger and turmeric. Very easy.
⇨ Day 5
☆ Matcha Chia Seed Pudding (SUPER TASTY)
1 tsp of Tropeaka Matcha Powder
30g of Chia Seeds
50ml of Full Coconut Cream
70ml of Almond Milk
1 tsp of Vanilla Extract
A few drops of Stevia or Maple Syrup
Let it set in the fridge!
Taste sooooo GOOODDD!!! I love the pudding!
⇨ Day 6-7 recipes are really basic. I get the fatty king fish cuts from our local japanese grocery. Very GUD!

BREAKFAST:
Banana Strawberry Ice Cream
~ 2 frozen banana
~ 4 strawberries
~ liquid of your choice [I used almond milk]
blend everything together and serve with fresh fruits
LUNCH:
6-inch subway’s veggie delite with
~ honey oat bread toasted
~ NO cheese
~ ALL veggies + 1 scoop of avocado
~ sauces: sweet onion, honey mustard and red wine vinaigrette
DINNER:
Lettuce Potato Wrap
~ Lettuce
~ Cherry tomato
~ Carrot
~ Cucumber
~ Red onion
~ Lime
~ Kettle corn
cut everything to wrap size
Baked potato
~ 1 potato
~ salt
~ sarawak pepper
~ sarawak pepper powder
~ ground chillies
~ rosemary leaves
coat the potato with all the spices and lay it on a baking tray line with aluminium foil
bake at 200 degree celsius for about 30 minutes depending on you oven
Spicy miso sauce
~ miso paste
~ sriracha
mix 1 part of miso paste to 2 parts of hot water, mix well.
add sriracha to the amount of spiciness you desire
