October is always a busy month for us because of the final year examinations for the big girl and all the party planning I have to do for all three kids. Since we don't go for any tuition and hope to remain tuition free for the coming years, it means I have to try my best in my limited free time to do some revision with the firstborn and hope that she finds her own motivation to keep working hard and strive to do her best in not just schoolwork, but in everything she does.
I can't tell you how many times I wanted to scream out loud or lose my cool, especially when we go through things like oral and compo revision, when she can't seem to read a good number of Chinese words that she has learnt before, when she gives up on a Math question and asks me for the answer before she even attempts it, or when she repeats the same mistakes that we have already gone through. It's not easy, really not easy, trying to teach your own kid and I totally understand the frustration. That said, it's also a learning journey for me because not only have I given back much of my knowledge to my teachers and need to relearn many things, I also realised I have a lot of room for improvement when it comes to being a patient, encouraging and supportive mum. I'm very thankful for this girl who has proven herself to be responsible, mature and sensible and it's also heartening to see how she takes charge of packing her schoolbag, revises her weekly spellings, jots down her exam dates, takes the initiative to do her assessment books in her free time and is always finding opportunities to pick up a book to read.
On the other hand, I'm also planning for the year end birthday parties for each of the kiddos and even though I try to keep them on a small scale, I'm still very much into coming up with themes, doing DIY decor and inventing our own games to play too - and there's always the food and dessert table to think about. For now, I'm in the midst of doing a spy party for the big girl and her friends because she wanted this theme and I must say it's tiring yet very fun to do too! Will share more about that soon!
Like what I always tell her nowadays, you reap what you sow and for all the efforts you put into doing what you do, you will get to enjoy the reward and that immeasurable sense of achievement at the end of the day. In October's "Happiness is...", it's about enjoying the fruits of our labour and looking forward to the exciting year end.

At this point of time, i no longer stop people trying to tell me i’m multi-talented 🤷🏻♀️ You all wanna comment what just go ahead loh. Although i’m trying to stay grounded and humble about the dessert table #QiuGang did for #Thian王SayIDo 😌 I accept anyone who calls me super talented, 人美就算了还这样有艺术细胞 🙂 Haiyah, 随便你们要怎样想啦, 反正嘴巴是你们的 😌😂 But seriously, @michsweets even wrote #QiuGang a complimentary letter 😂 Shout out to @boufesg for the pretty mini Daisy cake and Unicorn cakes!!! Taste great (a lot of guests feedback say very nice!) and looks super presentable! 😍 Thank you @pxdkitty for helping me arrange so last minute 😁 Anyway jokes aside, Mich is the mostttt suibian person i ever known since 16 yro i always ask her 你做人可以有主见一点吗? 😂 I guess she no opinion also very good cox then i get to decide everything 😌😌😌 First, i decided she needs to have a dessert table (although she say no need) next i ownself put ownself as the in-charge for her dessert table instead of asking professionals like @enjoue.sg 😂 Then i decide the theme colour to be gold / white / green. I did pretend to ask for her opinion but actually i already bought all the props to whatever theme colour i want 🙂😂 And then i decide what items goes on the dessert table 😂 It was such a fun interactive and collaborative planning experience for #QiuGang and our bride @michsweets 🙂😂 #OneSided 😁 Anyway, is it i can ownself decide to put myself as in charge for your wedding banquet? @michsweets 🙂

パイシートを使った簡単レシピ♪しっとり濃厚バタースコッチシナモンパイをご紹介します!
芳醇な香り漂うこってりソースとシナモン、そして生クリームのハーモニーが絶妙です。
3層の食感も楽しめます♪ぜひお家で作ってみてください。
バタースコッチシナモンパイ
直径18cmタルト型 1台分
材料:
■フィリング
三温糖 50g
水 大さじ1
無塩バター(角切り) 50g
牛乳 200ml
生クリーム 100ml
卵黄 3個
コーンスターチ 大さじ2
シナモン 小さじ1
■ホイップクリーム
生クリーム 150ml
砂糖 大さじ1
20×20cmの冷凍パイシート(解凍する) 1枚
作り方:
1.オーブンは200℃に予熱しておく。
2.台に打ち粉を振り、パイシートをめん棒で伸ばして型に入れ、はみ出た部分は切り取る。底面にフォークで数カ所穴をあけ、クッキングシートを被せて重石をのせ、200℃で10分焼く。
3.フィリングを作る。生クリームと牛乳は合わせて500Wの電子レンジで1-2分ほど加熱する。
4.小鍋に三温糖、水を入れて中火にかけ、かき回さずにそのまま加熱する。泡が大きく膨らむようになったら弱火にし、バターを加えてゴムベラで溶かし混ぜる。
5.(3)を2回に分けて加え、その都度泡立て器で混ぜる。中火にし、ふつふつとしてきたら火からおろす。
6.ボウルに卵黄、コーンスターチ、シナモンを加えて泡立て器で混ぜる。(5)の半量を加えて混ぜ合わせ、鍋に戻し入れて混ぜる。
7.再び中火にかけ、ゴムベラで底からしっかりかき混ぜ、とろみが付いたら火からおろす。
8.(2)の型にフィリングを流し入れて平らにならし、粗熱が取れたら冷蔵庫で2時間ほど冷やす。
9.ホイップクリームを作る。ボウルに生クリーム、砂糖をを入れ、ハンドミキサーでツノが立つまで泡立てる。
10.(8)にホイップクリームをのせて平らにならし、お好みの大きさに切り分けたら、完成!

Butterscotch Pie
Servings: 6
INGREDIENTS
1 20 x 20 cm frozen pie sheet (thaw)
■ Filling
50 grams Brown sugar
1 tbsp Water
50g Unsalted butter (cut in squares)
200 ml Milk
100 ml Heavy cream
3 Egg Yolks
2 tbsp Cornstarch
1 tsp Cinnamon
■ Whipped cream
150ml Heavy cream
1 tbsp Sugar
PREPARATION
1. Preheat the oven to 200°C.
2. Sprinkle flour on the table, stretch the pie sheet with a rolling pin, put it in a mold, and cut off the extra dough. Make a few holes on the bottom with a fork, cover it with a cooking sheet and put weights on it, bake at 200°C for 10 minutes.
3. Make the filling. Heat the heavy cream and milk together in a 500W microwave oven for 1-2 minutes.
4. Place the brown sugar and water in a small pan, heat over medium heat without stirring. When the bubbles start to swell, reduce the heat to low, add the butter and use a rubber spatula to mix.
5. Add (3) in two portions and mix with a whisk each time. Set to medium heat and remove from heat when it becomes soft and fluffy.
6. In a bowl mix the egg yolks, cornstarch and cinnamon and mix with a whisk. Add half of (5) and mix, put it back in the pan and mix.
7. Reheat over medium heat, stir thoroughly with a rubber spatula. Remove from heat when thickened.
8. Pour the filling into the mold of (2) and level it. Once it has cooled place it in the refrigerator to chill for 2 hours.
9. Make the whipped cream. Put heavy cream and sugar in a bowl and whisk with a hand mixer until it has peaks.
10. Put whipped cream on (8), level it, and cut it to the desired size, and you're done!

おひな様クレープ
5個分
材料:
■クレープ生地
卵 1個
牛乳 100ml
薄力粉 50g
砂糖 20g
サラダ油(フライパン用) 適量
■ぎゅうひ
切り餅(刻む) 2個
水 40ml
砂糖 大さじ2
片栗粉 適量
こしあん(5等分に丸める) 150g
いちご 5個
作り方:
1.ボウルに卵、砂糖を入れて混ぜ、牛乳を加えてさらに混ぜる。
2.薄力粉を振るい入れて混ぜ、ザルで濾す。
3.フライパンに薄くサラダ油を引いて中火に熱し、(2)をお玉1杯分入れて薄く広げる。ふつふつと気泡が出てきたら裏返し、1分ほど焼く。取り出して粗熱を取り、残りの生地も同様に焼く。
4.ぎゅうひを作る。ボウルに切り餅、砂糖、水を加えてふんわりとラップをかけ、600Wの電子レンジで1分30秒ほど加熱する。取り出して混ぜたら再びラップをかけ、600Wの電子レンジで1分30秒ほど加熱し、なめらかになるまで混ぜる。
5.台の上に片栗粉を振り、(4)を置いて丸くまとめ、5等分に切る。
6.手の平で丸く広げ、丸めたこしあんを包む。
7.クレープを半分に折り、中心に(6)をのせ、下、左、右の順に重なるように巻いて包む。
8.上にいちごをトッピングしたら、完成!

Strawberry doll crepes
Servings:5
INGREDIENTS
■ Crepe fabric
1 Egg
100 milliliters Milk
50 grams Flour
20 grams Sugar
1 tablespoon Vegetable oil
Vegetable oil (for frying pan)
■ Filling
2 Rice cakes (chopped)
40 milliliters Water
2 tablespoons Sugar
Potato starch (as needed)
150 grams Sweet bean paste (dividen in 5 parts)
5 strawberries
PREPARATION
1. Place eggs and sugar in a bowl and mix. Add milk and mix.
2. Sift the flour, mix, and strain with a colander.
3. Heat vegetable oil in a frying pan over medium heat. Spread a thin layer of the crepe mixture into the pan and flip over when small air bubbles start to come out and cook for about 1 min. Remove from the pan and cook the rest of the crepe mixture.
4. Make the filling. Add the rice cakes, sugar and water to a bowl, cover it loosely with plastic wrap, and heat in a 600W microwave for about 1 minute and 30 seconds. Take out, mix, wrap again, heat for 1 minute 30 seconds in a 600W microwave, and mix until smooth.
5. Shake the potato starch on the table and pour (4), divide in 5 equal parts and shape into balls.
6. Flatten them over your palm, place a piece of sweet bean paste in the center and wrap it.
7. Fold the crepe in half, put (6) on the center, and wrap it so that it overlaps in the order of bottom, left and right.
8. Topped with strawberries and finished!
9. Enjoy!
