排毒二三事: 排毒食譜 Mix & Match (一)
上次有介紹過肝臟排毒分兩個階段: 第一階段 (脂溶性及較嚴重毒素) 轉換成第二階段 (水溶性及較易分解的毒素), 然後隨大小便排走 (http://bit.ly/2rgYlOt) . 而第一和第二階段的排毒過程, 都需要不同的營養素 (上篇已介紹過), 所以一個理想的排毒餐, 應該同時有齊第一和第二排毒需要的營養素.
以下五個簡單食譜, 含有多種第一二階段排毒所需的營養, 大家不妨輪流多吃.
食譜一:
• 蒜蓉西蘭花 + 香草檸汁焗三文魚柳 配蕃薯
食譜二:
• 薑汁芥蘭 + 三色椒炒雞柳 配三色飯
食譜三:
• 薑黃蝦仁炒飯 (有薑黃粉, 蝦仁, 粟米, 蛋, 三色飯)
食譜四:
• 鮮茄免治牛肉意粉 (有蕃茄, 洋蔥, 紅腰豆, 香草, 免治牛肉)
食譜五:
• 紅菜頭雜菜素湯 (有紅菜頭, 蕃茄, 紫洋蔥, 椰菜, 紅蘿蔔, 薯仔, 粟米, 腰果)
三色飯, 我自己屋企用紅米, 小米, 白米. 以前有用紅米, 糙米, 白米, 但屋企老人家同小朋友都唔易消化, 所以轉小米.
薑黃粉, 可在印尼或中東雜貨店買, 煮咖哩同薑黃飯常用.
薑, 蒜, 蔥 是抗氧化和排毒三寶, 平時煮餸不妨多用.

I would like to introduce you my favourite childhood dish: The Best Minced Beef Rice (Bolognese in old Hong Kong Style) with Fried Egg.
This is not only my favourite childhood dish but also the favourite dish for Hong Kong people who born in 1960s-1980s. Since the chefs in old Hong Kong did not have Italian ingredients and herbs on hand. They used the limited ingredients to create such incredible dish using soy sauce, ketchup and at most tomato paste instead. The taste of this meat sauce was so unique and mouthwatering that every child loves it, or even we adults nowadays. We always love to serve this dish with rice and Fried egg with a running yolk.
Even nowadays, it is still the popular dish served in Hong Kong style teahouses. Let's make one to see the differences between the old Hong Kong Style and Italian style. I am sure it will give you a surprise (of course in a good way )
Minced Beef Rice (Bolognese in old Hong Kong Style) with Fried Egg (for 4 ppl)
Ingredients:
Ground Beef (can be half beef half pork) 375g
1 Onion
1 Carrot
4-5 cloves garlic
4tbsp frozen green pea
Some cooked rice
4 sunny shine up egg (panfried egg)
Marination:
1.5 tbsp light soy sauce
1tbsp sugar
1tsp potato flour
½ cup water
Sauce ingredients:
2 tbsp tomato paste
4 tbsp ketchup
2-3 tbsp light soy sauce
A few bay leaves
700ml chicken broth/ water
2-3 tsp chicken powder stock (if water but not chicken broth is added)
A pitch of salt for seasoning
A pitch of sugar for seasoning

When I was a little Girl. Mince Beef (Bolognese in Hong Kong style) Rice with Fried Egg is my top 5 favourite!
My mum loves seeing me eating this dish too coz every time when I had this dish for dinner, I behaved very well without her chasing me to finish. I cleared all the food up with no complaints. At that time,(around 1985s), I met my Dream Prince: Mince Beef Rice with Fried Egg ( I swear it is the supreme one I had ever have).
The difference between the Hong Kong Style one with the traditional Bolognese is that we only use the ketchup instead of canned chopped tomato and fresh tomato. We also don’t use dried/fresh herbs and only use soy sauce and Chinese seasonings.

第一炮
【泡菜牛肉蓋飯】
食材
奶油或橄欖油 少許
牛肉火鍋片(挑油脂多的),可改用雞、豬或海鮮
菇類 剝小塊(幾乎都適合,看冰箱有什麼)
小番茄 剪小塊
泡菜
葉菜類 剪碎
蔥 剪碎
白飯
做法
1.將小番茄剪小塊、葉菜類和蔥剪碎,牛肉片剪段備用。
2.下油熱鍋,用奶油比較香,橄欖油也行,中大火放入牛肉片炒香,取出備用
*表面上色就可取出,不需要煮熟
3.補點油,用中大火將菇炒出焦香
*喜歡的話可以放點洋蔥絲,蠻適合的,但這集就是怕大家剪到手所以沒放
4.放入番茄拌炒過,然後加入泡菜炒香,湯汁先不用下
5.加入葉菜類,快速炒過後加入泡菜汁
6.試吃看看味道,不夠鹹的話補些鹽或醬油,喜歡也可下點麻油、胡椒粉
7.放在白飯上,撒上蔥碎裝飾,手邊有七味粉的話加一點很讚喔

第二炮
【泡菜牛起司三明治】
食材
吐司
前一天剩下的泡菜牛肉
蛋
芥末醬(可省略)
起司片
1.吐司放入烤箱,烤到上色、酥脆,泡菜牛肉也一起入烤箱加熱
*也可用乾鍋、中小火將兩面煎到酥
2.另外一隻鍋子下點油,用中大火將蛋煎熟,加一小撮鹽
3.芥末醬抹在單片麵包上,如果手邊有生菜可撲點當底,避免麵包被泡爛
但今天沒有,所以先放上蛋,再放上回熱的泡菜牛
4.鋪上起司用餘溫融化,蓋上另外一片麵包,享用!
