To be completely honest, when I first arrived at Samsen, I was not very impressed. It is located on the edge of Wan Chai, so not the most convenient place. It was hot and there was no noticeable air-con and the seating was very cramped even for HK standard. Sure, the ambience is completely on point and totally reminds me of those tiny purveyors of street food in Bangkok but when the food arrived, my first impressions were completely shattered and I finally understood why people would literally line up the hill to enjoy the offerings here. We ordered some drinks to start and while the Coconut & Soy Milk (HKD52) was nice, I highly recommend the Mango & Passionfruit Ice Drink (HKD58). It was genuinely fruity without being overly sweet and the mango and passionfruit tastes are perfectly balanced. The Fried Marinated Pork Collar (HKD68) is not your typical Thai styled pork collar. It came with a roasted tomato and chilli dipping sauce and was surprisingly juicy and not oily at all despite being deep-fried. The Chopped Duck Salad with Fresh Thai Herbs (HKD118) was for me, the highlight of the night. The “salad” was impeccably seasoned and the combination of the different herbs and spices totally transported me to Thailand. The tender meat was mixed with crispy pork rinds which, when eaten with the iceberg lettuce gave such a refreshing feeling. And last but not least, the signature dish of Samsen - The Wagyu Beef Soup Noodle (HKD138). The dark aromatic soup is very rich and I can definitely appreciate the many hours of preparation that has gone into it. The noodles are also heaped with 3 styles of meat - Beef Brisket, Beef Ball and Wagyu Beef Slices which were all exquisite. They were all very “beefy” in flavour and each had their own distinct mouthfeel - a wonderful end to a weekday dinner. Despite my initial thoughts, I can now definitely see why this place has been named as a Michelin Bib Gourmand restaurant.

Hello friends! Today we're going to share with you how to make lemon bars with buttery crust and smooth citrus  filling. They are so good.

Lemon is the most popular fruit in the world. It can make everything better. Lemon wedges and slices are often served with seafood and as a garnish for a drink. Lemon juice can be used raw in drinks, dishes, and desserts in recipes, like lemon bar.

This recipe is pretty simple, the flavor of crust and lemon filling is so yummy and so balanced. In this video we’re showing you step by step. If you are a fan of lemon, this lemon bar recipe is a MUST-TRY! So take some fresh lemons, yellow or green are both OK. Just bake it. :)

How to make lemon bars

☞ Baking pan size:18x18x5 cm

✎ Ingredients
📍 crust
all-purpose flour 120g
powdered sugar 40g
frozen unsalted butter 90g, cut into small cubes
salt 1g

📍 lemon filling
medium size egg 2
granulated sugar 160g
fresh lemon juice 80g
all-purpose flour 50g

✎ Instructions
1. Butter the pan, and line the bottom and sides with parchment paper.
2. Sieve the flour and powdered sugar, then add them and cold butter and salt to the food processor. Pulse the mixture until you have a crumb like mixture.
3. Place crumb dough in a baking pan and use fingers or any tools to flatten into the prepared pan.
4. Preheat the oven to 170°C, bake for 20 minutes or until the edges are lightly browned.
5. While baking, In another mixing bowl, beat together  2 eggs and granulated sugar until combined.
6. Sieve the flour into the bowl until mixed well.
7. Pour the fresh lemon juice and whisk until all combined.
8. Once the crust is done. Pour lemon filling mixture into the prepared crust directly out of the oven. Return to the oven and bake for 10 minutes. (170°C), then cover the pan with foil and bake for an additional 10 minutes.
9. Once baked, Let cool completely on a wire rack. Then fridge for at least one hour.
10. Before serving, cut the outer edge off of each side, dust with powdered sugar and cut into bar shape or square shape as you like.

横須賀で人気の家系ラーメンに再訪！神奈川県横須賀市、新大津駅『大津家』に伺ってきました。横須賀でNo.1の家系を目指している、というこだわりの家系ラーメン店で、創業以来変わらぬ製法で濃厚かつコクのあるスープを目指しているそう。麺は直営「飯島製麺所」の麺を使用。何度も試食を重ねて作り上げたこだわりの麺だそう。野菜は甘みの強い厳選されたものを使い、バランスの良い味わいに仕上がっていました。今回は再訪ということでチャーハンも頂きました。こちら大津の本店と金沢文庫にも支店があるとのことですので、機会があれば行かれてみてはいかがでしょうか！では早速ご覧ください！

Revisit the popular Iekei Ramen in Yokosuka! I visited the "Otsu-ya" at Shin-Otsu Station in Yokosuka City, Kanagawa Prefecture. It is a ramen shop with a particular iekei ramen that aims to be the No. 1 iekei in Yokosuka, and it seems that it is aiming for a rich and rich soup with the same manufacturing method since its establishment. The noodles used are those from the directly managed "Iijima Noodle Factory". It seems that the noodles are made by tasting many times. We used carefully selected vegetables with a strong sweetness and finished them with a well-balanced taste. This time I got fried rice because it was a revisit. It is said that there are branches in the main store in Otsu and Kanazawa Bunko, so why not go if you have the opportunity! Please have a look!
