聖誕前重新整理了一下這個皇牌食譜給大家🥰早前還因為這個西班牙海鮮飯被飲食男女邀請了做人物專訪🤣現在回想起也很有趣~
真的所有人都對這個西班牙海鮮飯的香味和味道讚不絕口~希望大家喜歡😍
𝑴𝒆𝒓𝒓𝒚 𝑪𝒉𝒓𝒊𝒔𝒕𝒎𝒂𝒔🎄✨
🔸材料(2-3人份)🔸
1. 西班牙米 3杯(約240毫升)
2. 大蝦 6條
3. 大青口 6隻
4. 魷魚 1條
5. 蕃茄 2個
6. 迷你小紅黃椒 3粒
7. 洋蔥 1/4個
8. 西班牙臘腸Chorizo 50克
🔸調味料🔸
1. 水 30毫升
2. 牛油 8-10克
3. 大蒜 2-3瓣
4. 雞汁 10毫升
5. 魚露 10毫升
6. 鹽 1茶匙
7. 甜椒粉 Paprika 1-2茶匙
8. 白酒 50毫升
9. 番紅花 1撮(可用3-4茶匙薑黃粉代替)
10. 香葉 3片
🔸伴碟🔸
1. 檸檬
2. 蕃茜
🔸做法🔸
1. 把一撮番紅花和香葉泡水。
2. 海鮮洗淨,蝦眼蝦刺蝦腳蝦尾剪掉,挑走蝦腸。需要吐沙的貝類海鮮請提前準備。
3. 魷魚處理乾淨後切圈。
4. 海鮮瀝乾水後用鹽和胡椒醃好備用。
5. 蔬菜及米洗淨,蔬菜切粒並瀝水待用。蕃茄上下𠝹十字,用熱水焗幾分鐘然後去皮。
6. 把番紅花和香葉水用小火加熱。出現水泡後關火。稍稍待涼後加入甜椒粉、雞汁、魚露、牛油拌勻成為已調味的番紅花水。
7. 下油開鍋。
8. 加入蝦頭煎香,同時用工具按壓蝦頭擠壓蝦膏和蝦汁,大約煎5分鐘。
9. 加入洋葱和蒜蓉煎香及煎至金黃色帶點焦糖化。
10. 加入白酒煎香。
11. 把蝦頭放入篩內,用力把蝦汁和白酒按壓出來。
12. 加入西班牙臘腸碎煎香。
13. 再把蝦頭按壓多一次出蝦汁。
14. 加入蕃茄和紅黃椒粒炒香,這時候蔬菜會出水,成為高湯。
15. 加入已調味的番紅花水拌勻。
16. 加入米,輕輕拌勻。這時米和水應該剛好拌成濕米,用工具撥開米的時候不見有任何水跡。
17. 熄火,鋪上海鮮及香葉並合上蓋子。按照以下焗爐/ 爐頭版繼續加熱。
🔹焗爐版🔹
1. 放入已預熱的焗爐用180度焗30分鐘。
2. 最後加上香草和檸檬伴碟。
🔹爐頭版🔹
1. 小火加熱20分鐘,熄火焗10分鐘。
2. 最後加上香草和檸檬伴碟。
🔹小TIPS🔹
1. 薑黃粉是番紅花的替代品,味道相近。
2. 懷孕的女生不能吃番紅花。
3. 如果有蘑菇及貝類海鮮,本身水份高,可以不用額外加水。米:水=1:1.2。
4. 如果用蝦/魚高湯代替水,再加月桂葉和番紅花煮會更佳。

🔸Ingredients (2-3 servings)🔸
1. Spanish rice 3 cups (around 240g)
2. Prawns 6
3. Mussels 6
4. Squid 1
5. Tomatoes 2
6. Mini Red and Yellow Pepper 3
7. Onions 1/4
8. Spanish Chorizo 50g
🔸Seasoning🔸
1. Water 30 ml
2. Butter 8-10g
3. Garlic 2-3 petals
4. Chicken essence sauce 10 ml
5. Fish sauce 10 ml
6. Salt 1 teaspoon
7. Paprika 1-2 teaspoons
8. White Wine Chardonnay 50 ml
9. Saffron 0.5-1 teaspoon
10. Bay leaves 3 pieces
🔸Garnish🔸
1. Lemon
2. Parsley
🔸Steps🔸
1. Soak saffron and bay leaves in water.
2. Clean and devein the prawns. Peel it if necessary.
3. Clean the squid and cut into round pieces.
4. Sautee the seafood with salt and pepper.
5. Clean the veggie and rice if necessary and set aside. Cut the top and bottom of tomato and soak in hot water before peeling the skins.
6. Chop the chorizos into pieces.
7. Heat the saffron and bay leaves water in low heat. Turn it off when there is water bubbles. Add paprika, chicken essence sauce, fish sauce and butter inside after cooling down.
8. Heat the pan with oil.
9. Fry the prawns head around 5 minutes and squeeze the prawns head juice with tools.
10. Fry the onions and garlic into golden color.
11. Add white wine.
12. Squeeze the prawns head in the sieve for the last time.
13. Fry the chorizos.
14. Fry the tomatoes and mini peppers until the veggie juice mix with the sauce.
15. Add the seasoned saffron and bay leaves water.
16. Add the rice and stir it evenly with the sauce lightly. The rice and the sauce are well mixed together and there is no water on the pan when you stir the rice.
17. Turn off the fire, put the seafood and bay leaves on the rice. Cover it with the lid.
18. Cook it with oven or cast iron pot.
🔹Oven🔹
Preheat the oven at 180‘C and bake with 30 minutes.
🔹Cast iron pot🔹
Cook the paella in low heat for 20 minutes. Turn it off and leave it for 10 minutes.
19. Garnish with herbs and lemon and then you are ready to serve your guests 😀

Housed in Le Embassy Hotel, a sharp-looking boutique hotel at the junction of Burmah Road and Transfer Road; "Catch" is a new venture by DAM D' Chef Dining, offering a big Western-styled Seafood menu (with a small Non-Seafood choices). The interior decor and setting is as neat and tidy as a restaurant should be, with tables are well-spaced apart. There is also a bar counter in the middle with a few seats for those who prefer to be seated near the bar. The place however, is dimly lit and offers a cozy-romantic setting to diners. On the menu, diners get to choose the main with a choice to upgrade it to a 4-course meal (a-la carte is available nevertheless) which features a Salad, a Soup, a Main and a Dessert (usually Cakes); the menu has a good selection of mains which cover mostly Fish and Seafood, with a few choices of meat. The alcohol menu is relatively big too, if you must know.

Since I'm been challenged by @the.threelittlebears to do a salmon dish, I decided to do a simple and idiot-proof dish - Baked Honey 🍯 Lemon 🍋 Salmon.⠀

This is a perfect dish for kids and people who are scared of fishy smell. Wrapping up the salmon helps it to bake evenly and lock in the fish juice. This makes your salmon fish soft and the sauce is perfect to drizzle on your rice! 🤤⠀

Since I am also a local Malaysian brand. I like to support local products from the local farmers, stores and brands. Today I have Ayam Kampung (village free range chicken) from Ah Lau @Ahlaufking the famous violinist @dennisviolin .. Very healthy looking chicken. Not much fat and affordable, NICE!
So I thought of sharing this recipe with you all. My Poh Poh used to make us stuffed mackerel fish, stuffed chicken and stuffed veggie, which I plan to show soon in the next IGTVs.
You need to prepare this a day ahead. Debone the chicken from the bottom up (by still keeping the whole chicken in shape, don't cut the body), marinate it overnight before you stuff the fillings the next day.
Ingredients :
. one whole chicken
MARINATION-
. 4 Cloves garlic
. lemon juice
. small piece galangal
. 3 tsp soya sauce
. black pepper
. ginger juice
- Grind them to a smooth paste -
FOR THE STUFFING-
. 1kg of minced chicken, it is also depending on the size of your chicken
. Cut spring onions
. Chop 1 big red onion
. Shredded carrot
. Green peas
. 2 cloves chopped garlic
. Sesame Oil
. Salt
. Black Pepper
. Pounded curry leaves
. Chopped coriander
-Mix them all up and leave overnight or at least few hours before using-
FOR ROASTING- You will need some oil or butter , baking paper, black pepper and Thyme.
FOR GARNISHING - use any type of vegetable, or fruits like berries and pineapple or orange.
You may also prepare a sauce of your choice to serve. I like to eat them with my own Mel's Kidnap Me Hot Sauce (you want to know how I make it?)

材料 Ingredients
一人份量 One serving
香煎嫩滑三文魚配青豆薄荷醬 Pan Fried Salmon on Minted Peas
三文魚排 300g Salmon fillet
青豆 200g Green peas
新鮮薄荷葉 Fresh mint leaves
無鹽牛油 45g Unsalted butter
芥花籽油 Canola Oil
鹽 Salt
檸檬酸豆牛油 Lemon Caper butter
酸豆 3 茶匙 3 tablespoon Capers
無鹽牛油 25g Unsalted butter
檸檬 1/2 Lemon
鹽 Salt
風琴焗薯 Hasselback Potato
薯仔 1 Potato
百里香 Thyme
橄欖油 Olive Oil
鹽 Salt
風琴焗薯 Hasselback Potato
1. 焗爐預熱185度。
Preheat over to 185c.
2. 將薯仔切成風琴狀,每層約2mm厚。底部預留1.5cm,不要切斷。
Slice the potato the same way as the video, about 2mm between each cut. Do not cut to the bottom, about 1.5cm from the bottom usually works well.
3. 薯仔放置焗盆上,淋上適量橄欖油。加份鹽調味後,放入焗爐。
Place the potato on a baking tray, drizzle a good amount of olive oil on the potato. Sprinkle some salt and place in oven.
4. 185度焗60分鐘至金黃色。
Bake 60mins until the potato is crispy on the edges.
5. 焗好後放上新鮮百里香。
Add some fresh thyme to the potato before eating.
青豆薄荷醬 Minted Peas Sauce
1. 青豆加入講量鹽煮熟後,瀝乾及放入攪拌機。
Boil some frozen peas in salted water. Remove from water and put into a blender.
2. 加入薄荷葉、牛油及適量鹽。攪拌至蓉狀。
Add mint leaves, butter and salt, blend.
檸檬酸豆牛油 Lemon Caper butter
1. 加熱平底鑊。檸檬切半後,放至熱鑊上,煎至表面呈焦糖色。
Cut half a lemon and place it on a hot pan until it is slightly caramelized.
2. 牛油放入另一平底鍋內。
Add butter into a saucepan.
3. 酸豆搾乾水份,加入平底鍋內。煮一分鐘後放置。
Squeeze the water from the capers and add into butter, set aside after about 1min of cooking.
香煎嫩滑三文魚 Pan Fried Salmon
1. 三文魚排清洗乾淨及抹乾,放置室溫。
Clean and dry the piece of salmon fillet and make sure it is at room temperature before you start cooking it.
2. 熱平底鑊加入芥花籽油。
Heat pan and add Canola oil.
3. 芥花籽油加熱後,放入三文魚排,魚皮一面朝下。
When the oil is very hot, place salmon skin side down.
4. 灑上鹽調味。
You can salt the salmon now.
5. 煎約2分鐘後反面。
Flip over after about 2mins.
6. 魚皮面灑上適量鹽調味。將熱油淋上魚皮面,繼續煎香。
Salt the skin side and spoon hot oil over the fish and keep cooking.
7. 煎約3分鐘後,盛起三文魚排,放置。
Total cooking time is usually around 5mins. Set fish aside once done.
8. 將三文魚放於青豆醬上。淋上酸豆牛油及擠檸檬汁。
Add minted peas to plate, place salmon fillet on top, spoon on the capers and butter mixture. Add a squeeze of the lemon.
Notes from Eddie:
1. Make sure the salmon fillet is in room temperature before you start cooking. I would bring out the fish about an hour before I start cooking.
2. Make sure the fillet is quite dry before you cook. Use a knife to scrape off any excess moisture from the skin.
3. You can use fresh peas if you can find, but frozen one is also fine.
4. Use Canola oil for panfrying salmon fillet. It is better for the recipe as the oil has a higher burning point.
5. While frying the fish, I usually lift the fish to check the skin, you want it to turn golden brown.
關於此食譜 About:
This is one of my favourite ways to eat Salmon. I also like it because it’s quite simple to make. Try your best to buy some good quality salmon, my favourite is King Salmon from New Zealand. My favourite part of the salmon is the belly so make sure you get a piece that includes some belly parts. The most important part of this salmon is making sure that its quite dry before you cook. There is a lot of moisture in the skin and I find the best way is to scrape it off with a knife. Keep scraping till no more moisture comes off the skin of the fish. Dry the other side with some kitchen towel. I prefer not to salt the fish until I cook it as more moisture will come off the fish if you salt it too early.

Resepi Homemade Seafood Selambak
Bahan-bahan
makanan laut (ketam, udang dan lala)
2 batang lobak merah (dipotong)
1 brokoli (dipotong)
tomato ceri (pilihan)
1 biji lemon (pilihan)
2 tongkol jagung (dipotong 3)
Bahan-bahan (Kuah Seafood Selambak)
2 biji bawang merah
5 ulas bawang putih
1 inci halia
1 inci belacan
1 cwn air
5 tangkai cili padi
3 sb mentega
2 tangkai serai (diketuk)
2 tangkai daun kari
3 sb cili boh
3 sb serbuk kari ikan
2 sb sos tiram
2 sb sos cili
2 sb sos ikan
1/2 sk garam
1/2 sk lada hitam
1 sb serbuk stok ayam
Cara memasak
1. Kisar halus bawang merah, bawang putih, halia, cili padi, dan belacan bersama sedikit air. Ketepikan.
2. Rebus/celur sayur-sayuran seperti brokoli, lobak merah dan jagung sehingga empuk. Ketepikan.
3. Dengan mengunakan air rebusan yang sama, rebus ketam, udang dan lala. Simpan 3 senduk air rebusan. Ketepikan.
4. Cairkan mentega dan tumis serai yang telah diketuk, daun kari, bahan kisar dan cili boh sehingga pecah minyak.
5. Masukkan rempah kari ikan, sos cili, sos tiram dan sos ikan. Gaul sebati.
6. Tuangkan air rebusan dan perasakan dengan garam, lada hitam dan stok serbuk ayam secukup rasa.
7. Masak sehingga reneh dan menggelegak.
8. Susun sayur, tomato ceri dan seafood di atas dulang dan tuangkan kuah di atasnya.
9. Perahkan lemon dan Homemade Seafood Selambak siap untuk dihidangkan bersama nasi panas.

Homemade Selambak Seafood Recipe
Ingredients
seafood (crabs, squids, prawn, and clams)
2 carrots (cut)
1 broccoli (cut)
cherry tomatoes (optional)
1 whole lemon (optional)
2 corn (cut into 3)
Ingredients (Selambak Seafood’s Broth)
2 whole onions
5 cloves garlic
1 inch of ginger
1 inch of shrimp paste
1 cup of water
5 bird’s eye chili
2 stalks lemongrass (bruised)
2 stalks curry leaves
3 tbsp of chili paste
2 tbsp of oyster sauce
2 tbsp of chili sauce
2 tbsp of fish sauce
3 tbsp of fish curry powder
3 tbsp of butter
1/2 tsp of salt
1/2 tsp black pepper
1 tbsp chicken stock powder
Cooking methods
1. Blend onion, garlic, ginger, birds’ eye chili, and shrimp paste with some water until smooth. Set aside.
2. Boil vegetables such as broccoli, carrots, and corn until soft. Set aside.
3. Using the same boiled water, boil crabs, shrimps, and clams. Reserve 3 cups of the stock. Set aside.
4. Melt butter and saute bruised lemongrass, curry leaves, ground material, and chili paste until oil break.
5. Add in fish curry powder, chili sauce, oyster sauce, and fish sauce. Mix well.
6. Pour in stock and season with salt, black pepper, and chicken stock powder to taste.
7. Cook until simmer and bubbling.
8. Arrange boiled vegetables, cherry tomatoes, and seafood on the tray and pour the sauce on top.
9. Squeezed lemon and Homemade Selambak Seafood is ready to be served with hot rice.
