小朋友返學成日要諗整咩茶點,教大家一個簡單又健康既pancake 😋 Purple sweet potato (Yam) pancakes… suitable from 6months to 100 year old 😂😂
材料:
1 杯紫薯
1 湯匙 椰子粉
1/4 茶匙梳打粉
1/4 茶匙肉桂粉
2 隻蛋
1-2滴 雲呢拿油
Ingredients
1 cup cooked sweet potato, soft and mashed
2 eggs
1 tbsp coconut flour
1 1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp vanilla
coconut oil, for pan
做法
1)所有材料放入攪拌機攪拌
2)攪拌均勻後,就可以煎
1) Blend all ingredients in blender
2) Pan fry in low heat til golden

{Recipe} Laksa Seafood Pancake
Inspired by the Korean kimchi pancake, this laksa seafood pancake is spicy and delicious thanks to New Moon Laksa Paste which is full of oomph and kick. I used the king top shell which is a good source of protein as it is actually low in fat and trans-fat free. Feel free to add prawns or squid to your liking.
Ingredients (Makes 2 large 20-cm pancakes)
2 Tb Sesame Oil
1 medium sized red pepper, sliced
2 stalks thai spring onion, cut into about 5-cm in length
1 New Moon Braised King Top Shell, cut each slice by half
1 cup all purpose flour
1/4 cup corn starch
40g New Moon Laksa Paste
200ml water (feel free to use coconut milk)
1 tsp white sesame, toasted
For the dipping sauce:
2 Tb soy sauce
2 Tb white rice vinegar
Method
1. In a large bowl, combine the flour, corn starch, water and laksa paste till well-combined. Add in spring onion, red pepper and braised king top shell slices.
2. Heat a nonstick or cast iron pan over medium high heat. Add 1 tablespoon oil and add the batter to the pan, spreading it in an even layer. Fry until browned on one side. Flip the pancake and continue to cook until browned on the other side.
3. Assemble the dipping sauce by combining the sauce ingredients in a small bowl. Serve alongside the pancake.

One of our favourite traditional Malaysian dishes is Pek Nga or Lempeng Kelapa 🥥🌴 These chewy pancakes are made using freshly grated young coconut and wheat flour, and are usually eaten with sticky rice, dried fish and fish curry for breakfast!

昨天做巴斯克芋泥起士蛋糕剩下的芋泥可以做什麼呢?
除了可以做芋泥吐司夾肉鬆或蛋等,還可以做成鬆餅噢!

What can we do with the leftover mashed taro? I have made the taro sandwich before and this morning I utilised the leftover mashed taro and turned it into a taro pancake😋😋 It turned out so tasty and you guys must try!!
☆Here is the recipe:
1.Plain flour 2tbs + baking powder 1/4tsp
or
2.Self-raising flour (if you are not using plain flour)
3. Egg 1
4. Mashed taro 1 scoop (40ml)
5. Maple syrup
6. Coconut spray oil or butter
*This recipe can make 2 pancakes and it is one serving.

Fluffy Gluten Free/Sugar Free Pancakes
- Separate 2 egg yolks from white & put in 2 different mixing bowls
- Beat egg yolks & sift all 3 flours (20g Almond Flour, 10g Coconut Flour, 1 teaspoon Baking Powder)
- Add 3 tablespoon of Almond Milk
- Add some Vanilla Extract and beat until it's mixed well
- Add salt to the egg white and beat with a hand mixer, slowly add 25 grams of sweetener
- Slowly combine the egg white mixture into the other bowl until it's mixed in well into a pancake mixture
- Spray some oil on pan or you can use butter
- Cook pancakes on low heat, 10 mins first side, 3 mins on other
- Serve with Butter, Maple Syrup, and Berries
Eggplant & Tofu Sandwich
- Lay out Tofu and Bell peppers on tray, salt/pepper, lightly roast
- Chop up and cook some Red Cabbages
- Chop up eggplant, cook over stove with some water
- Add 1 tablespoon Miso to 200ml water, stir and add to pan
- Add 1 teaspoon Coconut Aminos to cooked Eggplant
- Build sandwich: Tofu | Eggplant | Bell Peppers | Cabbage | Tofu
- Season with Gomasio, Salt, Pepper, Sriracha Sauce
Black Pepper Chicken
- Dice up 1kg of Chicken
- Marinate with Ginger Powder (2 teaspoon ), Mirin (2 tablespoon), Coconut Aminos (2-3 tablespoon), Tamari (optional), and some Salt.
- Stir fry chicken
- Add potato starch (optional)
- Add Pepper when almost ready to serve
- Add Sesame Oil
- Serve with Rice and Vege
