As the Tokyo Olympics came to a close over the weekend, 120 boys from 12 different refugee camps gathered on Saturday for their own version of the Games in Syria's last major rebel stronghold of Idlib.
For the children wearing the colour of their camp, it was their turn to be the star athletes.
The 8 to 14-year-olds competed in a host of disciplines including martial arts, javelin, discus, high jump, hurdles, gymnastics, volleyball, badminton, football, running and even "horse racing" — using cutouts of horse's heads.
The Idlib region is home to nearly three million people, two-thirds of them displaced from other parts of Syria over the course of the country's 10-year-old conflict.
The majority of those who have lost their homes live in camps and are dependent on humanitarian aid to survive.
Organiser Ibrahim Sarmini, a representative of Syrian charity Benefits, told AFP that the event aimed to give the children some hope, but also draw the attention of the international community to their plight.
We wanted "to introduce the kids to different kinds of sports that we, as a society, hadn't really tried before", he said.
"The main aim was to shine a light on the camp residents, children and adults, who are living a very tough life."
A decade of war in Syria has left nearly half a million people dead, the Syrian Observatory for Human Rights said earlier this year, in a new toll that includes 100,000 recently confirmed deaths.
At the Tokyo Olympics, Syrian athletes competed as part of two teams, with six on the national team representing the Damascus government, and nine on the international Olympic Refugee Team.
This created a situation in which two brothers competed on different Olympic teams, with swimmer Alaa Maso on the international refugee team and his brother Mohammed, a triathlete, in the official Syrian team.
The two brothers from Aleppo now both live in Germany, having fled in 2015 from the ongoing Syrian civil war.

●みりん：大さじ2
●生姜：小さじ2
●にんにく：小さじ2（無くても十分美味しいよ）
●ごま油：大さじ1（油でコーティングしてあげると変色防止にもなります）
●ブラックペッパー
●米油（普通の油でもOKだけど米油を使うとヘルシーになるよ）
お好みでマヨネーズ、七味唐辛子
※ナンプラーが苦手だったり、無い方は醤油を大さじ1追加して下さい。
※にんにくと生姜はフレッシュタイプにするとより香りが良くなって美味しいです。

衣サクサク、中とろとろ♪この食感だけでもたまらなく美味しいんですが
噛んだ瞬間、茄子から溢れ出る２種類の魚の旨味と風味がとにかく最高にやみつきで
一度食べだしたらマジ止められない…まさにこれぞ無限茄子！！！
揚げてるとは思えないくらいあっさりヘルシーなのも夏には最高なんですよね♪
簡単な上にお財布にも優しい、ばあちゃんの美味しい知恵が沢山詰まった自慢のレシピです。

思った以上に食べれちゃうので多めに作る事をオススメしますｗ
[Ingredients]
● Eggplants: 8
● Soy sauce: 2 tablespoons
● Potato starch: 6 tablespoons
● Flour: 3 tablespoons
● Fish Stock: 1 teaspoon (4 times concentrated)
● Nam Pla: 1 tablespoon (I recommend it because it adds a tremendous depth of flavor)
● Mirin: 2 tablespoons
● Ginger: 2 teaspoons
● Garlic: 2 teaspoons (it's delicious without it)
● Sesame oil: 1 tablespoon (Coating with oil helps prevent discoloration)
● Black pepper
● Rice oil (You can use regular oil, but rice oil will make it healthier)
Mayonnaise and 7-flavor spices to taste
※If you don't like Nam Pla or don't have it, add a tablespoon of soy sauce.
※Fresh garlic and ginger are more fragrant and delicious.

【材料】
●鶏もも肉：2枚(約550g)
●お好みの青菜（今回は小松菜使ってます）
●長ねぎの青い部分：1本
●生姜
●八角（無くても十分美味しいよ）
●水：500ml
●醤油：100ml
●紹興酒：100ml（普通のお酒でも大丈夫）
●みりん：50ml
●はちみつ：大さじ1
●米酢：大さじ1（穀物酢でも大丈夫）
[やみつきにんにくダレ]
●にんにく：2片
●米酢：大さじ4
●豆板醤：小さじ1/2

鶏もも肉と半熟卵の中華風やみつき醤油煮を作りました。
鹵水鶏（ろうすいけい）という料理で八角というスパイスを使った鶏の醤油煮ですね
お酢を使って漬け込む事によって鶏肉がより柔らかくなり
醤油ベースの甘みのあるやみつきなタレもよりあっさりするんです。
そして今回のポイントとなる八角。この八角の甘い芳香な香りがとにかく良い！！
一度ハマるとこの香りがたまらなくやみつきになるんですよ♪
それからオマケで作った大蒜ダレ！！
これがまたほのかなの酸味と辛み、そしてにんにくの香りが
甘みのある醤油ベースのタレをより引き立ててくれて
あっさりなんだけど更にやみつきになる味に変わるんです！
照り焼きチキンが好きな方は絶対大好きな味付けになってるんですが
八角がはいると全然違った風味になってたまらんので是非試して欲しいです。
ちなみになんですが成城石井さんのシンガポール風ソイソースチキンヌードル！
これが好きな方にはドンピシャな料理になってますよ♪
そして最後、お腹に余裕がある場合は
ご飯の上に半熟煮卵を乗せて、二種類のタレをかけて食べて下さいね。
一つの料理で何度も楽しめる最高の鶏肉料理になってます。
しかも作り方は漬けて煮るだけ♪

[Ingredients]
● chicken thighs: 2 (about 550g)
● Green vegetables of your choice (I used komatsu-na)
● Green part of spring onion: 1 stick
● Ginger
● Hakkaku (star anis) (it's delicious without it)
● Water: 500ml
● Soy sauce: 100ml
● Shoko-shu (regular wine will also work): 100ml
● Mirin: 50ml
● Honey: 1 tablespoon
● Rice vinegar: 1 tablespoon (grain vinegar will also work)
[Addictive Garlic sauce]
● Garlic: 2 cloves
● Rice vinegar: 4 tablespoons
● Soy sauce: 1/2 teaspoon

I made Chinese-style simmered chicken thighs and half-boiled egg with
addictive soy sauce!
It's a dish called "Lo-soi-kai", which is chicken stewed in soy sauce
with a spice called "Hakkaku".
By marinating the chicken in vinegar, the chicken becomes more tender
and the sweet and addictive soy sauce-based sauce becomes lighter.
The Hakkaku is the key to this dish. The sweet aromatic scent of it is
just wonderful!
Once you get hooked on it, you'll be addicted to its fragrance ♪
Then there is the garlic sauce that I made as a bonus!!
Once you get into it, you will be addicted to its aroma.
The garlic and garlic flavor enhances the sweet soy sauce based sauce.
It's light, but it turns into an even more addictive taste!
If you like teriyaki chicken, you will absolutely love this flavor.
But with the Hakkaku, you'll love the completely different flavor.
By the way, Seijo Ishii's Singapore-style Soy Sauce Chicken Noodle!
If you like this, this is the perfect dish for you ♪
And finally, if you have room in your stomach, put a half-boiled egg
on top of the rice and pour the two kinds of sauce over it.
