未有智能電話和社交媒體的年代,喜歡食好西的我已是「相機食先」,狂熱程度會用相機拍照再沖曬,還會寫低tasting note收藏;當時高級餐廳除媒體採訪外一般都禁止拍照,也許侍應見我是個傻大姐,對飲食充滿熱情,令我成為一個例外。
喜歡吃,更喜歡煮,看到別人吃得開心,滿足感是不能言喻。記得做model時曾因為有一個月工作太忙而未能下廚,心情極度低落,那時我才知道下廚是我快樂的來源。喜歡看cooking show,也常常翻開相薄研究擺盤,自己下廚時也會模仿一下,可能大學修讀藝術,對美學有獨特觸覺,加上累積不少下廚經驗,便膽粗粗走到香港三星米芝蓮餐廳 L'Atelier de Joel Robuchon見工做廚,但餐廳經理說我零經驗,連menu上的法文也不懂讀,要我先學習跟容人溝通,就從帶位做起,當時人工好像只有一萬三千元。
做帶位要負責落booking、將侍應記低客人的要求入guest record、出confirmation、也會聯絡到供應商,閒談間廚師們更會跟我分享煮食心得;當時一星期有兩日我會在落場後走到法國文化協會學法文,緊接晚上再上班,生活忙卻充實。在Robuchon短短工作四個月卻獲益良多,為之後經營Ta Pantry私房菜奠下基礎。
一間餐廳最忌是沒有winning dish,慶幸當時Ta Pantry有兩個:鵝肝蒸蛋,海膽意粉;經營了半年私房菜,生意是不錯,卻發現自己很多不足,因此再自薦到香港置地文華東方酒店法國餐廳 Amber 跟名廚 Richard Ekkebus學師。從小到大我都是異類,沒有團體生活,與professional kitchen緣起於一次在Amber上cooking class,看到廚房出單,廚師們的拼勁,那種節奏和氣氛令我深深愛上廚房。某次聽food talk碰到Richard,我跟他分享已展開私房菜工作卻有感不足,他立即安排我到Amber工作,還幫我計劃學習歷程,要我先在甜品部從低做起;當時甜品部一位十分豪氣的女廚師還叫我盡情copy;當我打算放棄用pastry bag,另一位廚師迫我學懂,我說想學開生蠔,Richard讓我放題式開蠔;還能親嚐食法國抵港1000蚊 1kg 的士多啤梨,我是幸運的一位。後來工作太忙,去Amber學師的時間越來越少,不敢埋station,但我個性冷靜、好記性又夠手定,所以擔當砌盤,又是另一種學習。
那時的我入手了不少名廚的cook book,某天Amber一位廚師跟我說 “Be careful not to lose yourself” 不論待人處事、工作,還是育兒上,這句說話到今天依然受用。

Whipped cream or ice cream filling is really good. It adds vanilla flavor and sweetness. Makes it moist and super delicious. Must try!
French Crullers are the top-selling donut at Mister Donut (donut shop) in Japan. Simple sugar glaze is my kids' favorite but in this video they ended up playing with the cream 😅

2-Ingredient French Crullers
Difficulty: Very Easy
Time: 15min
Number of servings: 3 (3-Inch-round 1.5-Inch-height)
Ingredients:
160g (5.6oz.) Tempura flour https://amzn.to/3BXYIMp
4 tbsp. mayonnaise https://amzn.to/3yTRmHX
100ml water
deep frying oil
powdered sugar (confectioner's sugar)
whipped cream
Directions:
1. Put Tempura flour, mayonnaise, and 100ml water in a bowl and mix well with a spatula.
2. Transfer the batter into a pastry bag fitted with a large (0.6inch) star tip (Do NOT use a round tip or the batter will explode!!!). Pipe out 2 layers of rings onto a parchment paper.
3. Deep fry in oil at 180C (350F) until crisp golden brown.
4. Dust with powdered sugar or drizzle with sugar glaze (mix 3 tbsp. powdered sugar & 1 tsp. water). You can slice and place whipped cream or ice cream between the layers if you like!
I haven't tried but I think you can bake in oven at 180C (350F) for 15 minutes.

久しぶりに絞り出しクッキーを焼いたら、絞るのが楽しすぎました。
くるんと絞った生地はそのまま冷凍庫へ。
生地の周囲を冷やし固めてから焼くと綺麗に焼き上がります。
サクサクの生地はアーモンドプードル入り。
たっぷりのココアでほろ苦いココア味を楽しみます。
ただ甘いだけではない大人のクッキー♪
クッキーに合わせて小さな紙袋も作ってみました。
クッキーとの雰囲気もバッチリ!
小さなことでも、何かを楽しむのはすごくいい^^

【Ingredients】4.5cm×12
50g Unsalted butter
50g Powdered sugar
25g Whole egg (room temperature)
*Beat the egg well
★50g Cake flour
★15g Cocoa powder
★20g Almond flour
For Toppings:
12 Almonds
【Directions】
①Place the butter, and sugar in a bowl,mix well.
②Beat with whisk until combined.
③Add the whole egg little by little.
④Add all the dry ingredients(★). Don't forget to sift them.
⑤Fold it until the lumps are formed.
Mix while pressing for 30-40 sec to make smooth. If your batter is solidified and hard to squeeze, let the batter sit at room temperature for 5-10 mins and then mix it again to smooth and soft.
⑥Place the dough into a pastry bag with a star tip, and pipe onto a lined baking sheet.
⑦Put Almond in the middle dent.
⑧Leave in a Freezer for 15min.
⑨Preheat the oven at 338 °F/170℃, turn the degree down to 320°F/ 160℃, and bake them for 20 mins.
⑩Let them cool completely (on the tray is fine), and enjoy!
【材料】4.5×12個
無塩バター 50g
粉糖 50g
全卵 25g(室温)
*よく溶いてから量る
★薄力粉 50g
★ココアパウダー 15g
★アーモンドプードル 20g
トッピング:
アーモンド 12粒
【作り方】
①ボウルにバターと砂糖を入れてゴムベラで良く混ぜる。
②泡立て器に持ち替えてよく混ぜる。
③全卵を少しずつ加えてその都度よく混ぜる。
***冷たいまま加えると分離しますので必ず室温に戻しましょう。
④★印の材料をふるって加える。
⑤ゴムベラに持ち替えて、切るように混ぜ下から返すようにしながら切り混ぜを繰り返し、ボウルに押し付けるように30-40秒ほど滑らかになるまで混ぜる。
***暑い日はバターが溶けすぎないように気を付けます。
寒い季節は生地が固くなり絞りにくくなりますので、暖かい部屋に置き生地を柔らかくしてください。
⑥生地を口金を付けた絞り袋に入れ、クッキングシートを敷いた天板に丸く絞る。(直径4.5cm)
***口金は大き目の方が絞りやすいです。
⑦真ん中のくぼんだ所にアーモンドを軽く押し付けながら乗せる。
⑧冷凍庫に15分ほど入れて冷やす。
***こうすると絞った形のまま焼き上がります。
⑨オーブンを170℃に予熱して、160℃に下げてから20分焼く。
⑩焼き上がったら天板ごと完全に冷まして出来上がり!
***絞り袋はセリアさんのものを使っています、サイドにつなぎ目がないのでとっても使いやすくおススメ!
ポイント
◎絞り終えたら天板ごと冷凍庫に入れてしっかりと冷やすと、綺麗な形のまま焼き上がります。
◎天板ごと冷凍庫で冷やすのが大変な時はオーブンシートなどに絞ったものをまな板などに乗せてから冷凍庫へ。
オーブンシートを小分けにカットして冷凍庫の空いているスペースで冷やすなど工夫してみてください。

100g (3.5oz.) soft Tofu
1 egg
Directions:
1. Put everything in a bowl and mix well.
2. Put the batter in a pastry bag fitted with a large (0.6inch) star tip, then pipe out onto the parchment papers.
3. Deep fry in oil at 180C (350F) until crisp golden brown.
4. While warm, dust with cinnamon sugar or sugar to finish.
You can bake in oven at 180C (350F) for 15 minutes.
