Been whipping up a lot of quick meal at home and steaming is one of my favourite cooking method. Fast and easy, steamed food is a healthier alternative as you don’t need oil and food retain its nutrients.

{Recipe} Steamed Abalones in Chicken Essence and Garlic Sauce
One of the simplest way to enjoy abalones is simply by steaming it. These New Moon Australian Abalones make a good choice for this kind of cooking method as they are individually quick frozen and thus their freshness is well preserved. In fact they can be enjoyed raw as sashimi.
Ingredients (Serving size: 10 abalones)
6 cloves garlic, minced
20g ginger, minced
2 stalks spring onion, diced to small pieces
2 box New Moon Australian Abalones (IQF Individually Quick Frozen from LIVE)
For the sauce:
1/2 bottle New Moon Chicken Essence
3TB Shao Xing Wine
1TB New Moon Light Soy Sauce
1 Tsp sesame oil
1 TB sugar
Method:
1. Prepare sauce by heating the sauce ingredients in a pot until sugar is melted.
2. Set abalones in a steaming plate. Spoon roughly 1 Tb of sauce into each abalone and steam for 3min.
3. Heat a nonstick or cast iron pan over medium high heat. Add 3 tablespoon oil and fry the ginger, follow by garlic and spring onion till fragrant.
4. Pour the cooked garlic oil mixture onto the abalones. Serve

蒜蓉蒸大龍躉翅
材料:
大龍躉翅1斤4兩
薑1小舊
蔥1條
辣椒仔1隻
蒜頭5粒
處理:
1. 薑,去皮,洗淨,刴碎。
蔥,切去兩端,洗淨,切粒。
蒜頭,去皮,刴碎。
辣椒仔,洗淨,切粒。
2. 龍躉翅,切件,清水洗淨,擎乾水,放碟上。
3. 龍躉件,加入:
a. 生粉1湯匙
b. 油半湯匙
c. 薑蓉1湯匙
d. 蒜蓉1湯匙
e. 糖半湯匙
f. 雞汁1湯匙
撈勻,排好在碟上。
烹調:
1. 大火在鑊中煲滾1鑊水。
2. 大火蒸龍躉翅10分鐘。
3. 蒸好,灑上蔥粒及辣椒粒。
4. 完成,可享用。
Steam fins of giant grouper with garlics sauce:
Ingredients:
Fins of giant grouper 1.25 catty
Ginger (small) 1 No.
Green onion 1 No.
Chili 1 No.
Garlics 5 Nos.
Preparation:
1. Ginger, get it peeled and rinsed, then chop well.
Green onion, cut both ends. Rinse and dice it.

Chili, get it rinsed and diced.
2. Fins of giant grouper, cut in pieces. Rinse it with tap water. Drain. Put in rows on plate.
3. Pieces of giant grouper, add in:
a. Tapioca starch 1 tbsp
b. Oil 0.5 tbsp
c. Ginger sauce 1 tbsp
d. Garlics sauce 1 tbsp
e. Sugar 0.5 tbsp
f. Chicken sauce 1 tbsp
Mix well. Put in rows on plate.
Steps:
1. Heat up a wok of water at high flame.
2. Steam the fish at high flame for 20 minutes.
3. Steam well. Put green onion and red chili cubes on top.
4. Complete. Serve.

鹹魚仔蒸豬肉
材料:
豬冧肉12兩
薑1舊
鹹魚仔1碗
處理:
1. 鹹魚仔,清水浸2~3分鐘,清水沖洗乾淨,擎乾水。
2. 豬冧肉,洗淨,切薄片,放碗內。
3. 薑,去皮,切絲,放豬肉內,加入調味料:
a. 生粉2茶匙
b. 油2茶匙
c. 蠔油1茶匙
d. 生抽1茶匙
e. 糖1茶匙
加入鹹魚仔,撈勻,鋪平在碟上。
烹調:
1. 大火煲滾1鑊水。
2. 大火蒸豬肉20分鐘或以上。
3. 蒸好,完成,可享用。
Steam pork meat with dried salted baby fish
Ingredients:
Pork rum meat 12 taels
Ginger 1 No.
Dried salted baby fish 1 bowl
Preparation:
1. Dried salted baby fish, soak in tap water for 2~3 minutes. Rinse thoroughly. Drain.
2. The pork, get it rinsed. Thinly slice. Put in a bowl.
3. Ginger, get it peeled and shredded. Mix with pork meat. Add seasoning.
a. Tapioca starch 2 tsp
b. Oil 2 tsp
c. Oyster sauce 1 tsp
d. Light soya sauce 1 tsp
e. Sugar 1 tsp
Add in dried baby salted fish. Mix well. Flatten it on plate.
Steps:
1. Heat up a wok of water at high flame.
2. Steam the pork at high flame 20 minutes or more.
3. Steam well. Complete. Serve

BREAKFAST - Mushroom Egg Muffins (6 muffins)
1) 6 Eggs - 468cals
2) 1/2 Red Bell Pepper, diced
3) 1/4 cup Mushroom, diced
4) 1/2 can of Tuna
5) 1/2 tsp. Cajun Seasoning
6) Salt & Pepper to taste
Per Egg Muffin - 94Cals
LUNCH - Asian Salmon Stir Fry (serves 2)
1) 1 Salmon Fillet, cut into cubes
2) 1/2 cup Green Beans, trimmed & sliced
3) 1 cup Mushrooms, sliced
4) 2 garlic Cloves, minced
5) 1 tbsp. Soy Sauce, divided
6) 1 tsp. Sesame Oil
7) Spring Onions, chopped
Soba Noodles & Edamame Salad (Serves 2)
1) 90g uncooked soba noodles
2) 1/4 cup Edamame, unshelled
3) 1/2 tbsp. Sesame Seeds
4) 1 tsp. Sesame Oil
5) 1 tsp. Chilli Flakes
6) Spring Onions
TOTAL LUNCH CALORIES - 470Cals
DINNER - Steamed Soy Ginger Barramundi (serves 2)
1) 1 Barramundi Fillet (about 12oz), or other white fish of your choice
2) 1/4 cup Ginger, finely sliced
3) 1/4 cup Spring Onions, sliced
4) 2 Small Chillies, chopped
5) 1 tsp. Sesame Oil
6) 1 tsp. Soy Sauce
Stir-Fried Mixed Vegetables (serves 3)
1) 1 Head Broccoli, cut into florets
2) 1 Carrot, thinly sliced
3) 1/2 Red Bell Pepper, sliced
4) 2 Garlic Cloves
5) 1/2 tsp. Sesame Oil
6) 1/2 tsp. Soy Sauce
7) 1/2 tsp. Chili flakes
Total Dinner Calories (including 1 bowl of white rice) - 500Cals
