Some IT/tech advice needed..
Feeling really down and stupid rn... I just lost over 6GB worth of photos due to a Ctrl+Z error after cutting & pasting them from my phone to PC's internal SSD 😭 and I wasn't able to undo/redo the action because I only realized the mistake many hours and actions later..
And this photo below is the only one that's intact from the batch, only because I unintentionally uploaded it to my GDrive.
I've since managed to recover some JPG files using a paid software but the recovered files are all really huge in size and are seemingly corrupted as I'm unable to open or view them at all. Anyone knows the solution to restoring JPG files after they've been recovered this way? 😢
Btw guys please be really careful and don't make the same mistake that I did. Really costly and painful lesson that I don't ever want to experience ever again 😭😭😭

A good solution for making double side table cards making
Quite troublesome to make table cards, so I made a “merge printing file collection via WORD.” Hope it helps.
Instead of using Powerpoint to print in the past, using this ready files can save you lots of time especially there are a large number of participants in the conference. The database file format is as follows and can be prepared with Notepad, which is attached as “data” file in attached links:

where ~ is a marker separating different data and better to recognize different column of data..
Copy all meeting participants list with the mentioned 3 column of data into Notepad and replace all different column of data with “~” to prepare the data.
Next, you must first decide the size of A4 or A5 you want to print. A4 is larger, and A5 is half cut of A4 size. After cutting, put it straight into the manual feed tray of printer, and then click on the “mother” merge file entitled with A4 or A5 word file. Using the first time, you need to select the directory location of the database file “data.txt.”
After clicking A4 or A5 word file,
Click “yes”
And then “Sure”
.
The format then comes out!
Then select Mailings > Preview Results
and move right and left arrows you can see preview result. It can also be printed out all as a pdf file, and be printed in one batch. The colors and borders in Word can be modified by yourself. Thank you for using.

公布 #國際雙語版湯圓食譜!(全家福 4 人份)
材料:
1. 糯米粉 600 g
2. 熱水 300 g
3. 冷水 180 g
4. 紅麴粉或紅肉火龍果少許 (染色用) (買不到可用甜菜代替)
5. 黑糖水 (黑糖 800 g + 水 2 公升 + 薑少許)
步驟:
1. 糯米粉倒入熱水攪拌均勻
2. 再倒入冷水攪拌
3. 用手揉成米麵糰直到呈「耳垂柔軟」狀態
4. 另分出一部分麵團染色
5. 將揉好的麵團搓成長條再切成一個個適當小塊
6. 將麵團塊搓成圓球即完成生湯圓
7. 煮一鍋滾水加入黑糖並放入生湯圓和薑
8. 湯圓浮起水面後 5 分鐘即可關火盛碗

Today is the #WinterSolstice, the shortest day and longest night of the year and a day when it’s traditional to eat #tangyuan (glutinous rice dumplings) to stave away the cold of winter. We thought we’d share the recipe so that everyone can get a taste of this #SweetTreat wherever they are in the world! If you do have a go, why not share a picture in the comment section below!
Ingredients (serves 4):
For Tangyuan:
Glutinous Rice Flour 600g
Hot water: 300ml
Cold water: 180ml
Pinch of monascus powder, red dragon fruit, beetroot or red food coloring (optional)
For sweet soup:
2 liters of water
800g brown sugar (adjust amount as desired)
Pinch of ground ginger (adjust amount as desired)
Recipe:
1. Pour the glutinous rice flour into the hot water and stir evenly.
2. Pour in the cold water and stir.
3. Use your hands to roll the dough into ball (it should be the consistency of your ear lobe).
4. You can split it in two at this point and add the food coloring to the second batch.
5. Roll it into a long cylinder shape, and use a knife to cut it into small pieces.
6. Roll these into small balls (about the size in the picture).
7. Bring the water for the soup to the boil and add the brown sugar, the ginger and the tangyuan.
8. Five minutes after the tangyuan have floated to the top, you can serve in a bowl.
9. Bon Appétit!

I am sure most of you have watched countless sourdough videos available out there, and most are mix by hand tutorials.
If you find joy in touching your dough and don’t mind the mess, well, good for you ??
But if you prefer a no-fuss and less messy way without compromising the end result, this recipe is for you!
See, I am impatient. I work a mentally demanding full time job, and when I make sourdough, I don’t like to fuss over them.
Normally, I maximise my yield for each batch by making 4-6 (sometimes 8!) loaves of sourdough, because making 1 or 10 loaves to me takes the same amount of preparation and effort.
Anyway, here’s the recipe.
Enjoy!
Ingredients:
300g Bob’s Artisan Bread Flour (or any high protein bread flour, at least 12-13% protein)
65g starter (tripled, use at peak)
233g water (room temperature)
6g Pink Himalayan Salt (or regular salt)
Method:
1. Autolyse 30 minutes
2. Add starter, mix, wait 15 minutes (I sometimes add salt together with starter when I am not in the mood and still get great results)
3. Add salt, mix, wait 15 minutes
4. Transfer to a bulking dish
5. Coil fold x 1
6. Coil fold x 2
7. Coil fold x 3
8. Coil fold x 4 - skip this step if your dough is strong
9. Leave to bulk
10. Total bulk 4 hours at 28C
11. Final shape
12. Cold retard overnight at 3C - make sure your fridge temperature no more than 3C!
13. Preheat oven at 250C, fan mode, for 1 hour
14. Bake at 250C, fan mode, for 35 minutes, lid close
15. And 250C, fan mode, for 5 minutes, lid off
16. Let bread cool completely before cutting, at least 1 hour

Notes:
Always begin with a strong and healthy starter.
Make sure your dough has increased 50% in size.
As beginners, I know it is very hard to determine if your dough has finished its bulk fermentation based on the look and feel, due to the lack of experience. I know that feeling very well, because I was once that lost, clueless beginner myself.
After tinkering with sourdough for about a year, I have come up with a rough timing guide for bulk fermentation based on room/kitchen temperature, well, sort of like a cheat sheet, so you can get the hang of sourdough bread making and get good results every time.
Remember, bulk fermentation starts when starter is mixed into the dough.

One day I saw Bibimbap on my daughter's elementary school lunch menu and wondered how they serve it. I asked her teacher and learned that they make it in one pot!
It is a great idea if you quickly want to make it in a large batch for your family 😉

One-Pot Bibimbap (Korean Mixed Rice with Meat and Vegetables in a Japanese school lunch style)
Difficulty: Easy
Time: 30min
Number of servings: 4 servings
Ingredients:
200g(7oz.) pork or beef slices (or ground meat is ok)
200g(7oz.) bean sprouts
200g(7oz.) spinach
100g(3.5oz.) carrot
1 clove grated garlic
1 tbsp. grated ginger
* 2 tbsp. soy sauce
* 2 tbsp. sugar
* 1 tbsp. Sake (white wine or you can skip it)
* 1 tbsp. chicken soup stock powder
* 1 tbsp. Miso
* 1 tsp. Gochujang (you can skip it if you think it is too hot for kids)
cooking oil
sesame oil
toasted white sesame seeds
2 eggs
800g(1.7lb.) cooked white rice
Directions:
1. Cut meat into bite-size pieces. Cut carrot into thin strips. Cut spinach into an inch pieces. Wash bean sprouts and drain well.
2. In a deep frying pan or a pot, heat 1 tbsp. of cooking oil and make scrambled eggs. Mix in rice and set aside.
3. In the same pan, bring water to a boil and parboil carrot strips, spinach, and bean sprouts. Drain well and set aside.
4. In the same pan, heat 1 tbsp. of cooking oil and heat garlic and ginger until fragrant. Then add meat and cook until no longer pink.
5. Add the vegetables. Mix the seasonings * and add into the pan. Season with salt and pepper if necessary. Finish with 1 tbsp. of sesame oil.
6. Serve the meat and vegetables on top of the rice with scrambled eggs. Garnish with toasted white sesame seeds to finish.
