(思忖著父親節)我來台灣快10年了,由於距離太遠我爸至今沒能來看我。他的身體不好,加上飲食的問題,長途飛行對他來說將會是一場噩夢,所以我總是回到美國,從沒想過要他飛來台灣。不過,在他 2017 年再婚後,飛來台灣成為可能的事,兩個人一起旅行比一個人旅行容易多了,因此他們計劃拜訪我,並打算在去年三月第一次拜訪台灣。不幸的是,幾乎所有航班都在 2020 年春季取消,因此這次旅行並沒有成形,且可能不再有下一次機會......我昨晚和他談過,明年也許我可能會飛回美國,至少我們還能在美國團聚,他不再單單只是個父親,而是一個祖父,我哥哥已經生了兩個小孩,我還沒有見過他們,雖然現在仍然不是一個很好的旅遊時機,但我們希望明年疫情會好轉。
我想作為父親是一項艱鉅的工作。回想起來,我知道我沒有讓它變得容易。他大部分時間也是單親父親,在我母親去世 22 年後,他終於再婚了,非常恭喜他!我最後一次見到他,還是在這張四年前的他的婚禮上(照片中)。再過3天我父親將滿 70 歲,祝福我的爸爸和所有的爸爸,尤其是所有的單身爸爸,父親節快樂。

(Fathers Day Musings) I've been in Taiwan for almost 10 years now, but my dad has so far been unable to visit me here. He's in poor health and has a lot of food issues that make plane travel a logistical nightmare. So I always went back to the USA and never expected him to be able to come here. After he married in 2017 though, it became a real possibility. Traveling together is easier than traveling alone, so they made plans to visit me and had intended to arrive in Taiwan for the first time in March of last year. Basically all travel was cancelled in spring of 2020 though, so that trip didn't happen. And it looks like it might never happen... But I talked to him last night and it seems like I might be able to go to the USA next year, so at least theres that. He's not just a father anymore, but a grandfather. My brother has two kids now that I've never seen and while it's still a terrible time to travel, we can hope that next year will be better.
It's a hard job being a father I think. Looking back I know that I didn't make it easy. He was a single father for most of it too, but 22 years after my mother died he finally remarried. So congratulations to him. The last time I saw him was at his own wedding 4 years ago. He turns 70 in 3 days. So to all the Dad's out there and especially all the single dad's out there, Happy Fathers Days.
(PS: And to all the son's out there, get your Dad something nice.

DONGZHI冬至= WINTER SOLSTICE
Winter Solstice is one of the important celebrations in Chinese culture. Traditionally, the Dongzhi Festival is also a time for the family to get together. One activity that occurs during these get-togethers (especially in the southern parts of China is the making and eating of tangyuan (湯圓) or glutinous rice balls, which symbolize reunion. Tangyuan are usually in bright colours. They are cooked in a sweet soup. It is also often served with a mildly alcoholic unfiltered rice wine containing whole grains of glutinous rice (and often also Sweet Osmanthus flowers), called jiuniang. It is going to be on 21st December this year. There is a saying if you eat the tang yuan means u are a year older. Hahaha we refused to be older but still eat them anyway as they are so chewy and yummy. I had great memories of my Poh Poh making them every year. Maya loves making them herself, so we have never failed to follow the tradition and make them every year on dongzhi. In fact, Maya was the one who will remind me about tang yuan every year since her school does tell them about the celebration.
They are so easy to prepare and cook. Within 20 mins you can actually have a nice bowl of them if you dont cook with sweet potatoes.
Ingredients for glutinous rice balls :
2 cups glutinous rice, sticky rice flour
200 ml water
food colouring (or make natural colouring from pandan, dragon fruit and so on)
*this is the usual measurements. If you are making a lot. Just add on accordingly.
Ingredients for the soup (I have a 5 litres pot) :
200 g or more ginger slices (pound), best to use Bentong Ginger if you like it spicy. If I wasnt cooking for kids, I will add double the amount
6 pandan leaves
4.5 litres of water
3 cups sweet potatoe cubes (this is an add-on)
1 pack of rock sugar (depending on sweetness)
You may also add palm sugar, peanut paste, seasame paste, red bean paste inside the tang yuan. We have tried chocolate before. They are not bad, just not traditional enough. Do try molding them into cute characters. Kids will enjoy them even more.

Double or triple this recipe to make as many as you want 😊
Whipped cream or ice cream filling is really good. It adds vanilla flavor and sweetness. Makes it moist and super delicious. Must try!
French Crullers are the top-selling donut at Mister Donut (donut shop) in Japan. Simple sugar glaze is my kids' favorite but in this video they ended up playing with the cream 😅

2-Ingredient French Crullers
Difficulty: Very Easy
Time: 15min
Number of servings: 3 (3-Inch-round 1.5-Inch-height)
Ingredients:
160g (5.6oz.) Tempura flour https://amzn.to/3BXYIMp
4 tbsp. mayonnaise https://amzn.to/3yTRmHX
100ml water
deep frying oil
powdered sugar (confectioner's sugar)
whipped cream
Directions:
1. Put Tempura flour, mayonnaise, and 100ml water in a bowl and mix well with a spatula.
2. Transfer the batter into a pastry bag fitted with a large (0.6inch) star tip (Do NOT use a round tip or the batter will explode!!!). Pipe out 2 layers of rings onto a parchment paper.
3. Deep fry in oil at 180C (350F) until crisp golden brown.
4. Dust with powdered sugar or drizzle with sugar glaze (mix 3 tbsp. powdered sugar & 1 tsp. water). You can slice and place whipped cream or ice cream between the layers if you like!
I haven't tried but I think you can bake in oven at 180C (350F) for 15 minutes.

Maguro means Tuna, Zuke means to marinate, and Don is short for Donburi which means rice bowl. Marinated fresh Sashimi-grade tuna served on a rice bowl. Quick yet delicious!
You can of course use Salmon, scallop, or any other Sashimi-grade fish instead! Enjoy :)

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl)
Difficulty: Very Easy
Time: 15min
Number of servings: 1
Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds
Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

Mizu-Yokan (Soft Azuki Bean Jelly) is a typical Japanese summer treat. Cold, smooth and refreshing! The recipe is EASY but to make it into 2 layers, you want to pour in the second layer just before the first layer hardens.
Kids say it looks like Minecraft. LOL

2-Layer Mizu-Yokan (Matcha and Azuki Bean Jelly)
Difficulty: EASY
Time: 20min + 2hrs cooling time
Number of Servings: 8 servings
Necessary Equipment:
18cm (7inch) square cake pan
Ingredients:
((Soft Azuki Bean Jelly))
400g (14oz.) Koshi-an (sweet Azuki red bean paste without skins)
300ml water
4g (2 tsp.) Kanten powder (agar-agar powder)
a pinch of salt
((Matcha Jelly))
1 tbsp. Matcha green tea powder
2g (1 tsp.) Kanten powder (agar-agar powder)
2 tbsp. granulated sugar
250ml water
Directions:
1. Mix water and Kanten powder (agar-agar powder) very well in a pot. Bring to a boil and boil on low for 2 minutes. *or use as directed on its package
2. Stop the heat, add Koshi-an and mix well. Add a pinch of salt to taste and mix well.
3. Pour it into a square cake pan (or any container). Then immediately start making Matcha jelly.
4. In a bowl, put Kanten powder (agar-agar powder), granulated sugar, and sift in Matcha powder. Then mix well with a spoon. Put in a pot, add water, and mix well. Bring to a boil and boil on low for 2 minutes.
5. When the skin forms (before it gets firm) pour in the Matcha jelly liquid. Leave to cool and firm at the room temperature (do not move too soon or layers will be mixed). Then put in the fridge to cool for about 2 hours.
