{Recipe} Laksa Seafood Pancake
Inspired by the Korean kimchi pancake, this laksa seafood pancake is spicy and delicious thanks to New Moon Laksa Paste which is full of oomph and kick. I used the king top shell which is a good source of protein as it is actually low in fat and trans-fat free. Feel free to add prawns or squid to your liking.
Ingredients (Makes 2 large 20-cm pancakes)
2 Tb Sesame Oil
1 medium sized red pepper, sliced
2 stalks thai spring onion, cut into about 5-cm in length
1 New Moon Braised King Top Shell, cut each slice by half
1 cup all purpose flour
1/4 cup corn starch
40g New Moon Laksa Paste
200ml water (feel free to use coconut milk)
1 tsp white sesame, toasted
For the dipping sauce:
2 Tb soy sauce
2 Tb white rice vinegar
Method
1. In a large bowl, combine the flour, corn starch, water and laksa paste till well-combined. Add in spring onion, red pepper and braised king top shell slices.
2. Heat a nonstick or cast iron pan over medium high heat. Add 1 tablespoon oil and add the batter to the pan, spreading it in an even layer. Fry until browned on one side. Flip the pancake and continue to cook until browned on the other side.
3. Assemble the dipping sauce by combining the sauce ingredients in a small bowl. Serve alongside the pancake.

VHC NoLa Chargrilled Oysters (sò nướng phô mai và bơ) Recipe
Ingredients:
12 medium oysters
1 stick unsalted butter ( room temperature)
1/2 tsp cajun seasoning
1/2 tsp fresh cracked black pepper
1 tbsp minced garlic
1 tsp chopped curly parsley
2 tbsp Romano cheese
2 tbsp Parmesan cheese
Toppings: extra Romano cheese, Parmesan cheese and parsley
Steps:
1. Shuck oysters and keep them on the half shell.
2. Add butter, cajun seasoning, black pepper, garlic, parsley, Romano cheese and Parmesan cheese in a small mixing bowl. Mix well until all ingredients are combined.
3. Add a spoonful of the butter mixture to each oyster.
4. Sprinkle with extra cheese and parsley.
5. Grill oysters on medium heat until they are bubbly and the cheese has melted (about 6-8 minutes).
Optional: I placed my oysters in the oven at 350F for 5 minutes to help open the oysters for easy shucking.

MY BTS Burger Recipe
BTS 開心餐就嚟出啦! 一位 ARMY 之一我都好想整過 BTS 漢堡包去加入佢哋嘅餐. If I were to help them create a Mcdees burger, this is what I would make to celebrate Korean flavours and BTS’ explosive performances.
A. Bulgogi glazed Cheeseburger (not spicy)
B. Cheeseburger with Green horn peppers cooked in Kimchi, minced beef (nice and spicy)
Recipes:
A. Bulgogi Cheeseburger with Caramelized Bulgogi Onions
1 quarter pounder Angus burger, seasoned (or 1 impossible burger patty) 漢堡扒
1 burger bun 漢堡包
Tomato slice 蕃茄
2 slices Edam cheese or Mozarella 芝士
Bulgogi sauce:
6 Tbsp Japanese soy sauce 醬油
3 Tbsp brown sugar 黑糖
2 Tbsp mirin
2 tablespoons sesame oil 麻油
155 g Asian pear 雪梨
80 g onions 洋蔥
1 Tbsp minced garlic 蒜蓉
1 tsp minced ginger 薑
Blend all the sauce ingredients.
Caramelised the onions in a pan and then add 2-3 tablespoon of bulgogi sauce. Set aside.
Cook the burger, when ready add a little sauce to glaze. Add butter if you like. Baste.
Assemble the burger.
Recipe: B. Cheeseburger with Green horn peppers cooked in Kimchi, minced beef

Butter lettuce 生菜
2 slices Edam cheese or Mozarella 芝士
100g Kimchi 泡菜
3-4 Green horned peppers 青辣椒(大大隻)
1/2 cup Water 💦 水
1 tablespoon Ssamjang 韓燒辣醬
Caramelise the green horned peppers
Add some water and kimchi and ssamjang. Cook for 3 minutes. Set aside
Cool the patty on one side, flip and Olaf style cheese on top. Cover the pan with a lid to let the cheese melt.
Assemble and enjoy!

A豚バラ肉(4cm幅に切る)90g
Aピザ用チーズ 80g
ごま油 大さじ2
マヨネーズ 適量
糸唐辛子 適量
インスタントラーメン付属の粉末・かやく
作り方:
1.キムチ入りインスタントラーメンを半分に割り、固めに1分ほどゆで、ザルに取り出す。
2.ボウルにA、キムチ入りインスタントラーメンの付属の粉末とかやくを入れて混ぜ、(1)を入れ、全体をよく混ぜる。
3.フライパンにごま油を熱し、(2)を入れて強火で揚げ焼きにし、ひっくり返して中火にし、裏面も抑えながらよく焼く。
4.器に盛り、マヨネーズをかけ、糸唐辛子をのせて完成!

Spicy Ramen Pancakes
Servings: 2
INGREDIENTS
1pack Spicy Ramen
A
2 tablespoons flour
1 egg
1/2 bunch Chinese chives (cut into 3cm pieces)
70g kimchi (cut into bite-sized pieces)
90g pork belly (cut into 4cm pieces)
80g shredded mozzarella
Spicy Ramen spice (powdered soup base) & dried flakes
2 tablespoons sesame oil
Some mayonnaise
Some chili threads
PREPARATION
1. Break spicy ramen noodles into halves, then cook for 1 minute. Drain water.
2. Mix all A ingredients, spicy ramen spice (powdered soup base), and dried flakes in a bowl. Add cooked noodles (1) into the bowl and combine.
3. Heat sesame oil in a pan. Put noodles (2) into the pan and cook over high heat. Flip the noodles and cook the other side over medium heat.
4. Place noodles on a plate. Put some mayonnaise and chili threads on top.
5. Enjoy!

■長芋と梅干しとなめ茸
材料:
ごはん 200g
長芋 100g
梅干し 2粒
なめ茸 大さじ1
しょうゆ 大さじ1/2
白ごま 適量
万能ねぎ 1本分
油揚げ 1/2枚
A緑茶 200ml
A白だし 大さじ1/2
作り方:
1. Aの緑茶と白だしは合わせて冷蔵庫で冷やしておく。
2. 梅干しは種を取って包丁でたたいておく。油揚げは1cm角に切ってフライパンで焦げ目がつくまでカリカリに焼いて、万能ねぎは小口切りにする。
3. 長芋をビニール袋に入れて麺棒などでたたき、(2)の梅干し、しょうゆ、なめ茸を加え揉む。
4. 茶碗にごはんをよそって(3)を盛り付け、(2)の油揚げも添えて、万能ねぎと白ごまをちらし、(1)を注いで完成!
■梅干しとささみキムチと塩揉みきゅうり
2人分
材料:
ごはん 200g
キムチ 35g
鶏ささみ 1本
塩 少々
酒 小さじ1
梅干し 2粒
きゅうり 1本
塩 1つまみ
ごま油 大さじ1
白ごま 大さじ1
水 200ml
梅昆布茶 スプーン2杯分
作り方:
1. 水に梅昆布茶を溶かし、冷蔵庫で冷やしておく。
(溶けにくいときは先に少しのお湯で溶く)
2. きゅうりを薄切りにして塩をまぶし、10分置く。
3. 鶏ささみに塩と酒をふり、ラップでふんわり包んで600Wの電子レンジで30秒、裏返してさらに30秒加熱し、あら熱が取れたら手でほぐす。
4. キムチを刻み(3)と和える。
5. (2)がしんなりしたら水気をしっかり絞り、ごま油と白ごまを和える。
6. 茶碗にごはんをよそい、(3)と(4)を盛り付け梅干しをのせて(1)の梅昆布茶を注いで完成!

2 Ways to Enjoy Cold Plum Chazuke
Servings: 2
◆Plum with Chinese yum and Namesake mushrooms
INGREDIENTS
200g steamed rice
100g Chinese yam
2 umeboshi plums
1 tablespoon nametake mushrooms
1/2 tablespoon soy sauce
Some white sesame seeds
1 string scallion
1/2 dried tofu
200ml green tea
1/2 tablespoon shiro-dashi
PREPARATION
1. Mix green tea and shiro-dashi. Cool in the refrigerator.
2. Remove plum seeds and chop. Cut dried tofu into 1cm pieces, and cook in a pan until golden and crunchy. Chop scallion.
3. Put Chinese yam in a plastic bag, break wth a rolling pin. Add chopped plums (2), soy sauce, and namesake mushrooms into the bag and mix.
4. Put steamed rice in a bowl. Place some mixed yam (3) and dried tofu (2). Sprinkle with some scallions and sesame seeds on top. Pour the green tea (1) over the rice.
5. Enjoy!
◆Plum with kimchi chicken and salted cucumber
INGREDIENTS
200g steamed rice
35g kimchi
1 chicken tenderlion
Some salt
1 teaspoon sake
2 umeboshi plums
1 cucumber
1 tablespoon sesame oil
1 tablespoon white sesame seeds
200ml water
2 spoons plum-kelp-tea (umekobucha)
PREPARATION
1. Melt plum-kelp-tea in the water. Cool in the refrigerator.
2. Slice the cucumber thinly and rub with salt. Leave for 10 minutes.
3. Season the chicken with salt and sake and wrap loosely with a plastic wrap. Microwave at 600W for 30 seconds. Flip the chicken and microwave another 30 seconds. Let cool. Shred the chicken with hands.
4. Chop kimchi and mix with the chicken (3).
5. When cucumber slices (2) are soften, drain water. Mix with sesame seeds and sesame oil.
6. Put steamed rice in a bowl. Place some kimchi chicken (3) and cucumber slices (5), and top with some plums. Pour the ume-kelp-tea (1) over the rice.
7. Enjoy!

ココットオムライスでぶつかり稽古【どすこいすしずもう】コラボ第3弾
8.5cmココット型 2個分
材料:
玉ねぎ(みじん切り)1/8個
ベーコン 1枚
バター 10g
ごはん 200g
トマトケチャップ 大さじ3
塩コショウ 少々
卵 1個
サラダ油 小さじ1
塩 少々
赤パプリカ 1/4個
トマトケチャップ (仕上げ用)適量
作り方:
1. フライパンにバターを入れて弱火にかけ、バターが溶けたら玉ねぎを入れて炒める。
2. 玉ねぎが透き通ってきたら、1cm幅にカットしたベーコン、トマトケチャップ、塩コショウを加えて炒める。
3. ごはんを加えて炒め、全体がむらなく混ざったら火を止めて、ココットに詰める。
4. ボウルに卵を割り入れ、塩を加えてよく溶きほぐす。
5. フライパンにサラダ油をひいて(4) を流し入れ、焼き色がつかないように両面を焼く。まな板に移し、ココットをおいて丸くくり抜いたら(3) にのせる。
絞り袋にケチャップを入れてサーモンざくらとあまえびおうの顔を描く。
6. 赤パプリカをサーモンざくらの鼻と、あまえびおうのえびのしっぽの形にカットして、それぞれ飾ったら、完成!

Omurice en Cocotte
Servings: 2 (8.5cm cocotte)
INGREDIENTS
1/8 onion (chopped)
1 slice bacon
10g butter
200g steamed rice
3 tablespoons ketchup
Some salt and pepper
1 egg
1 teaspoon vegetable oil
Some salt
1/4 red bell pepper
Some ketchup (for decorations)
PREPARATION
1. Melt butter in a pan over low heat. Add chopped onion and stir.
2. Add bacon pieces (cut into 1cm pieces), ketchup, salt, and pepper.
3. Add rice and combine well. Transfer the rice into the cocottes.
4. Beat the egg in a bowl. Add some salt.
5. Heat a lightly oiled pan. Pour the beaten egg into the pan. Flip the egg crape and make sure to cook both sides. Transfer the egg crepe to a cutting board. Using the cocotte, cut the egg crepe into circles. Place them on the rice (3).
6. Using a piping bag, draw fun faces with ketchup! You can also use some red bell pepper pieces as face parts.
7. Enjoy!
