Lượng protein có trong các loại đậu tuy khác nhau nhưng mỗi loại lại có giá trị dinh dưỡng đa dạng khác nên tốt nhất là nên cố gắng ăn đa dạng các loại đậu trong thực đơn.
Đậu lăng (Lentils) có đa dạng nhiều màu như xanh, đỏ, vàng, nâu, đen cũng cung cấp rất nhiều đạm với gần 17g cho 1 ly đầy.
Về chất lượng protein: khi được cơ thể tiêu hoá thì protein sẽ được phân giải để cung cấp peptides cho cơ thể ( các nhóm amino acids nhỏ ). Giá trị dinh dưỡng của thực phẩm giàu đạm sẽ dựa trên số lượng và chất lượng protein. Chất lượng của protein được quyết định bởi các amino acid trong thức ăn đó và protein từ đậu cũng có giới hạn về số amino acid có thể cung cấp.
Vì vậy hãy ăn đa dạng không chỉ các loại đậu mà các loại thực vật giàu protein khác để cung cấp đủ amino acid cần thiết cho cơ thể.

200g chickpea pulp
100g quinoa
2 tbsp flax seeds
60g maple syrup
80g oil
60g cane sugar
50g cacao powder
1 tbsp baking powder
140g chocolate chips
300g coconut milk
Instructions:
1. make quinoa and flaxseeds into flour with blender.
2. put all the ingredients together and mix well.
3. pour into muffin pan and bake at 350F/180C for 30 minutes.

【作り方】
1、キヌアとフラックスシードをブレンダーなどで粉状にします。
2、残りの材料全てと混ぜ合わせ、マフィン型に流し入れる。
