Wonder how I keep myself healthy and energetic?
Another secret besides having good soup often is super juice in the morning on an empty stomach. I have been taking healthy green juices for many years now. No breakfast but juice. It has improved my digestion system tremendously.
So this morning I thought I should share this little secret of mine with you all.
Many years ago, I started juicing with bittergourd, green apple, celery, ginger, cucumber and lemon which helps in managing the levels of blood sugars, cleanses liver, boost immune systerm and aids in weight loss. Then I have changed to juice without the bittergourd but everything else and sometimes with kale. 3 years ago, I started adding beetroot into my green juices. Beetroot is a good source of potassium, it helps to control blood pressure, control muscle power, slow down dementia, may prevent cancer, keep your liver healthy, reduce cholesterol and control healthy weight too! It is also a good source of iron, folate, magnesium zinc, sodium. It has been great.
* Fun fact of consuming beetroot : Your urine and stools may turn red or pinkish after eating beets. This condition is known as beeturia, is harmless! 😛
Ingredients for Mel's Super Power Juice :
. 4 celery stalks
. 1/3 of a beetroot
. 2 green apples
. one whole lemon
. 1 to 1.5 inches of Ginger
. small piece of turmeric
* Note: Do try having the small bittergourd and kale into your juice too. But do it alternately.
Lala's Power Booster Juice ingredients:
. 1 carrots or more
. 2 oranges
. 1 green apple
. one slice of lemon

Day 24 (Saturday - Intermittent Fasting)
Lunch: Mum’s homemade Chinese Style Soup with Apple, Almonds, Figs and White Fungus蘋果雪耳無花果杏仁湯 + Green Tea Soba Noodles + Yellow Bell Peppers + Green Beans + Chicken & Veggies Dumplings
Dinner (Eating out for “Cheat Meal” but actually not super unhealthy): Thin Noodles in Seafood Soup with Scallops, Crab Meat & Prawns
Day 25 (Sunday)
Breakfast: Purple Sweet Potatoes + Eggs + Cherry Tomatoes + Cucumbers
Lunch: Broccoli + Seaweed Noodles + Same Dumplings as Day before
Afternoon Snack: Homemade Lentils & Vegetable Soup
Dinner: Tempe with Tofu and Bell Peppers + Fish + Veggies with Egg White + Rice with Quinoa
Day 26 (Monday)
Breakfast: Same as day before
Lunch: Same as dinner the day before
Dinner: Silver Fish + Broccoli + Mushroom with Chicken, Fish Skin & Fish Maw + Rice & Quinoa & Spinach Noodles
As you can see, we always cook extra food for next day to save time & meal prep for work😆 and no I don’t get sick of eating the same food because they are yummy and I know they are good for me! Plus I am lazy (and cheap ass) to buy food from outside myself😂 Just very very grateful already to have such amazing meals everyday! @ Singapore

Breakfast: Purple Sweet Potato + Scrambled Eggs + Veggies + Chinese Style Carrots Soup with Mixed Beans & Dates
Lunch: Fish + Tofu with Corn & Pork Sausage (Cheat Food) + Veggies + Rice
Dinner: Veggies + Silver Fish Omelette + Beef Ribs + Rice
Night Snack: Stole 2 bites of Dad’s homemade bread because it smelled tooooo good fresh out from the bread machine😂
Day 23 (Friday)
Breakfast: Banana + Carrot Soup (same as yesterday) + Veggies + Cherry Tomatoes + Udon + Handmade Fishballs (sooo many of you asked about how to make these😂 a lady from the market nearby made them and we bought from her)
Lunch: Cheat Meal! Went to buffet lunch at Google office and had 3 rounds in total😆
1st round: Vegetable soup + Quinoa + Bell Peppers + Tofu + Tomatoes + Kimchi + Cold Cuts + Different Salad Veggies
2nd Round: Avocado Quesadilla + Pumpkin + Salmon + Beef in Gravy + Brown Rice with Chicken + Pork + Chinese Style Soup
3rd Round: Dragon Fruit + Watermelon + Grapes + Pineapple + Brie Cheese + Blueberry Cheesecake + 1/3 of the Walnut Muffin
Afternoon Snack: Happy Hour at the office with alll the yummy junk food everywhere! 😻 had to try a bit of everything 😳
Dinner: Only Green Beans & Yellow Bell Peppers because I ate way too much during the day😇

Hello friends! Today we're going to show you how to make Spanish classic chilled soup for summer: Gazpacho(and yes, it's vegan ❤️ ).
Gazpacho is one of the best known Spanish dishes. It originates from the South of Spain, the Andalusia area. In there, most gazpacho recipes include stale bread, tomato, cucumbers, onion, green bell pepper, garlic, olive oil, sherry vinegar, water, and salt. Especially during hot summer days, cold gazpacho is ideally to enjoy as an appetizer.
Today, gazpacho has different varieties. But in this video, we wanna show you the most popular and classic tomato based version. Served cold and enjoy with homemade croutons, it’s so good in summer. Enjoy. :)

How to make Spanish Gazpacho Soup,
Spanish Gazpacho cold Soup Recipe
☞ Yield: 4~5 servings, 150ml/cup
✎ Ingredients
beef tomatoes & cherry tomatoes 420g
cucumber 75g
green bell pepper, 35g
red bell pepper, 35g
red onion 20g
garlic 2g
old bread 2 slices (22g)
olive oil 12g (1.5 tbsp)
sherry vinegar 12g (1tbsp, vinagre de Jerez)
salt Q.S.
a pinch of black pepper
homemade croutons Q.S.
Instructions
1. Cut the baguette slices into small pieces. Set aside.
2. Slice off the stem-end of the green bell pepper, remove the ribs, veins and seeds away, then cut into small pieces. Repeat the process for red bell pepper.
3. Cut the onion into thin slices.
4. Cut off the root end, and peel the skin from the clove. Slice the clove into thin pieces.
5. Cut off the stems of cucumber, then peel the skin and slice into a platter.
6. Cut the tomato in half, and remove the stem and core. Cut the tomato into small wedges.
7. Place the tomatoes, peppers, onion, garlic into a food processor or blender, blend until very smooth.
8. Add baguette bread and
soak completely with vegetable puree until soft. Season with salt and black pepper, drizzle olive oil as you like, and add the sherry vinegar. Cover the lid and blend until well combined.
9. Taste and adjust the seasoning as necessary. 10. Strain the mixture through a strainer, pushing all the liquid through with a spatula and discard the solids. Chill until very cold for hours or overnight.
11. Cut the baguette in half, then cut in half lengthwise and slice into bite-size. Set aside.
12. Mince garlic. Combine olive oil and minced garlic, and then drizzle (the bread) with oil evenly.
13. Place the breads onto a baking sheet. Season with black pepper and Parmesan. If you like, you can season with salt.
14. Preheat oven to 170C, bake for 12-14 mins or golden brown.
15. Remove the croutons from oven, let cool.
16. To serve, pour gazpacho into a cup or a bowl, put some ice cubes, garnish with tomatoes, chopped cucumber, homemade croutons and a drizzle of olive oil.

【材料】
中華生麺(太麺)…2玉
鶏もも肉(唐揚げ用)…200g
-酒…大さじ1、塩・こしょう…少々
紫玉ねぎ…1/4個
パクチー…適量
レモン…1/4個
グリーンカレーペースト…20g
油…適量
粗びき黒コショウ…適量
【A】
ナンプラー…大さじ1
カレー粉…大さじ1
砂糖…大さじ1
鶏ガラスープの素…小さじ1
ココナッツミルク…200ml
水…300ml
【作り方】
1, 鶏肉は酒、塩・こしょうを振る。紫玉ねぎは繊維に沿って薄切りにするパクチーは2-3㎝幅に、レモンはくし形切りにする
2, 鍋に油を熱し、麺の1/4量を揚げる。
3, 別の鍋に油、グリーンカレーペーストを熱し、鶏肉を炒める。
4, 鶏肉が白っぽくなってきたら【A】を入れ、極弱火で10分ほど煮る。
5, 麺を茹でて器に盛り、③のスープを入れる。揚げ麺、紫玉ねぎ、パクチー、レモンをトッピングする。お好みで粗びき黒コショウをかける。

Chinese raw noodles (thick noodles) ... 2 balls
Chicken thigh meat (for deep-fried chicken) ... 200g
-Sake ... 1 tbsp. Salt, pepper ... a little
Purple onion ... 1/4
Pakchi ... moderate amount
Lemon ... 1/4
Green curry paste ... 20g
Oil ... appropriate
Coarse black pepper ... moderate amount
[A]
Nampler ... 1 tbsp.
Curry powder ... 1 tbsp
Sugar ... 1 tbsp
Chicken glass soup base ... 1 teaspoon
Coconut milk ... 200 ml
Water ... 300 ml
[How to make]
1, Shake the chicken with sake, salt and pepper. Cut the purple onion into thin slices along the fiber, and cut the parsley into a width of 2-3 cm, and cut the lemon into a comb.
2. Heat the oil in a pan and fry 1/4 of the noodles.
3. Heat the oil and green curry paste in another pan and fry the chicken.
4, When chicken becomes whitish, add [A] and simmer for 10 minutes on extremely low heat.
5, Boil the noodles and serve in a bowl, and add the soup from step 3. Top with fried noodles, purple onions, bakchee, and lemon. Sprinkle coarse black pepper if desired.
