Lai Yee's Kitchen - Homemade Red Bean and Matcha Mochi
Jom, we go to Japan today!
Konnichiwa everyone. Who doesnt like Japan? If you have not been, let me tell you more. Japanese are super good with the pastry and confections like sweets, wagashi, mochi and many other snacks. Mochi is one of Maya's favourite dessert snacks. She will request to have Mochi every day or any other day. So I have decided to make my own today. I am not an expert, but it is fun to do!
Ingredients for 10 small mochi:
. 160g Glutinous rice flour
. 40g Corn starch
. 60g sugar
. 280g milk (I used Almond milk for this recipe)
. 20g oil (I used coconut oil)
* Mix all this together and steam for 30mins
. 4 tbsp of glutinous flour to make Cooked Flour for roling
. Red bean paste (Which I bought at Lazada under JK Bakery Shop)
* you can always make from scratch!
Hope you find this recipe easy, I like the consistency and stickiness. Will not change any of the recipe. Unless you have a better to share with me, I shall try out again. Share ok!
Miss traveling really. I went to Japan many times. Mostly for shows. 1995, i was there for Osaka Grandprix Young Designer competition and brought back Cotton Award. Then I was there in Osaka again for Sakura Collection show 2014. I used to travel to Canada via Tokyo and stopped over for a night or 2, just to enjoy the vibes and the crazy fashion streets there. It was so fun and cool. Japan is filled with kawaii stuff which none of us should say NO to. Eye candies everywhere really!

[Recipe] Easy Matcha Coconut Chestnut Kueh Pudding 抹茶椰子布丁粿 🍵 🌴
Not sure if you have tried Kuih Tako- a Thai two-layer dessert comprising of coconut milk and pandan served in a squarish pandan leaf box. It is typically filled with water chestnuts which brings about a refreshing crunchiness.
Here I am giving it a spin by using Japanese green tea instead of Pandan—not only saving the time for extracting Pandan juice but the bittersweet tea taste also makes it less cloying. Texture wise, it falls between a pudding and a Kueh. For the water chestnuts, I use Milli water chestnuts which makes preparation more convenient without compromising on the quality. No sugar is added to the coconut milk layer, but feel free to add them if you like it sweeter. You can also make this in glasses besides jelly mold
Ingredients (makes 16 jellies) :
Set A Coconut layer:
200ml Kara low fat coconut milk
100ml low fat milk
25g mung bean flour
1/4 tsp salt
Set B Matcha Layer:
5pcs Milli Water Chestnuts
10g matcha
25g mung bean flour
35g sugar
250ml water
Steps:
Combine Set A ingredients in a pot and stir well. Heat and whisk till thicken. Pour into jelly molds, filling them only halfway.
Cut water chestnuts into dices and fill them on the cooled coconut layer
Combine Set B ingredients in a pot and stir well. Heat and whisk till thicken. Pour into the jelly molds to fill as the remaining half.
Chill in fridge for 3-4 hours. Unmold and serve

Taneya's Kanten agar-agar jelly 'Taneya Kanten'. It looks like a square raindrop cake, doesn't it? Taneya is famous Japanese traditional sweets shop. The pulling out is interesting, isn't it? The Kanten jelly has basically no distinctive flavor, it's like a water jelly. So it goes with various sauces. The sauce is Azuki red bean paste, Kuromitsu Kinako(brown sugar syrup and roasted soybean flour), bitter summer orange. Which do you like? I like Azuki best, because it's my familiar taste.

Mizu-Yokan (Soft Azuki Bean Jelly) is a typical Japanese summer treat. Cold, smooth and refreshing! The recipe is EASY but to make it into 2 layers, you want to pour in the second layer just before the first layer hardens.
Kids say it looks like Minecraft. LOL

2-Layer Mizu-Yokan (Matcha and Azuki Bean Jelly)
Difficulty: EASY
Time: 20min + 2hrs cooling time
Number of Servings: 8 servings
Necessary Equipment:
18cm (7inch) square cake pan
Ingredients:
((Soft Azuki Bean Jelly))
400g (14oz.) Koshi-an (sweet Azuki red bean paste without skins)
300ml water
4g (2 tsp.) Kanten powder (agar-agar powder)
a pinch of salt
((Matcha Jelly))
1 tbsp. Matcha green tea powder
2g (1 tsp.) Kanten powder (agar-agar powder)
2 tbsp. granulated sugar
250ml water
Directions:
1. Mix water and Kanten powder (agar-agar powder) very well in a pot. Bring to a boil and boil on low for 2 minutes. *or use as directed on its package
2. Stop the heat, add Koshi-an and mix well. Add a pinch of salt to taste and mix well.
3. Pour it into a square cake pan (or any container). Then immediately start making Matcha jelly.
4. In a bowl, put Kanten powder (agar-agar powder), granulated sugar, and sift in Matcha powder. Then mix well with a spoon. Put in a pot, add water, and mix well. Bring to a boil and boil on low for 2 minutes.
5. When the skin forms (before it gets firm) pour in the Matcha jelly liquid. Leave to cool and firm at the room temperature (do not move too soon or layers will be mixed). Then put in the fridge to cool for about 2 hours.
