Steamed Kueh Lapis (九层糕) is a popular Nyonya snacks in Malaysia and Singapore and it literally means layer cake in Malay.
Ingredients:
Rice Flour 200gm
Corn Starch 100gm
Water 400ml
Sugar 150gm
Coconut milk 400ml
Pinch of salt (add into coconut milk)
Food colouring
A little bit of cooking oil
Tools:
One 7-inches square or round pan
Steamer
Measurement cup
Steps:
S1 - In a small pot, boil the water, pour in sugar, boil until sugar dissolved
S2 - Add in coconut milk. Stir well. Leave aside to cool.
S3 - Mix rice flour and corn starch together.
S4 - Gradually blend into coconut milk with hand whisk
S5 - Strain mixture through a sieve to ensure it is free from lumps
S6 - Divide mixture into 3 portions. Add desire food colouring into 2 portions
S7 - Grease a 7-inches square pan
S8 - Place in steaming pot for few minutes over high heat
S9 - Pour about 100ml of white liquid into the heated pan.
S10 - and steam at high heat about 4 minutes.
S11 - Then add 100ml of coloured batter onto it and steam for another 4 minutes.
S12 - Repeat the steps, alternating pink and white until all the batter is used up
S13 - Leave the kueh lapis to cool completely
S14 - Brush a little of oil on the surface as gloss finishing
S16 - Grease a plastic knife with little oil before cutting
S17 - The yummy Kueh Lapis is done~
