This Sago Pudding with Gula Melaka is Roland's childhood dessert. He made this yummy dessert to celebrate Mother's Day with his Mom last week. As he and his sister were eating the pudding, the both of them took turn to say "oh this is the taste - yes this is the taste" ? I didn't understand the hooha with this simple pudding until I took the first mouth. It was simple and yet delish at the same time. How can something so simple be so yummy?

Ingredients
Serves 10
400g sago
6 pandan leaves
300g of gula melaka also known as palm sugar (can be reduced to half)
1 cup of water to be boiled with gula melaka (cut to half if gula melak is halved)
500ml of coconut milk or coconut cream (can be reduced to half)
1 cup of water to be added to coconut milk (cut to half of your coconut milk is halved)
1 teaspoon of salt (cut to half if your coconut milk is cut by half)

Apam balik (English: 'turnover pancake') is a type of griddle pancake common in Southeast Asia. It is usually sold at specialist roadside stalls throughout Brunei, Indonesia, Singapore and Malaysia.
The pancake's batter is made from a mixture of flour, eggs, sugar, baking soda, coconut milk and water. The batter is cooked upon a thick round iron frying pan in plenty of palm margarine to avoid it sticking to the pan. Then other ingredients are sprinkled as filling; the most common or traditional is crushed peanut granules with sugar and sweetcorn kernels (available from cans), but modern innovations such as chocolate sprinkles and cheddar cheese are also available. Then, the pancake is folded (hence the name: "turnover pancake") and cut into several pieces.
The texture of the apam balik can vary depending on the amount of batter and type of pan used, from one that is akin to a crispier form of crumpets to small thin light pancake shells that break when bitten (the latter is usually called apam balik nipis, 'thin apam balik').
The dish has been declared a heritage food by the Malaysian Department of National Heritage.
There is a Peranakan variant, the apom balik, that closely resembles the Indonesian Serabi.
The dessert is also known by various names depending on the region. Some of them are: Martabak Manis (lit: sweet murtabak); Terang Bulan, because of the big round pancake resembling the shape of a full moon prior to folding; Apam Pulau Pinang; Kue Bandung (in Semarang, Java and its surrounding areas) Kuih Haji (in certain areas), Min Chiang Kueh;
Hok Lo Pan; Ban Jian Kuih, or; Chin Loong Pau.

Cendol is a traditional dessert originating from Indonesia which is popular in Southeast Asia such as : Malaysia, Singapore, Brunei, Cambodia, East Timor, Vietnam, Thailand and Burma. Also known as Chendol, lot chong (Thailand), bánh lọt (Vietnam), and mont let saung (Burma). The dessert's basic ingredients are coconut milk, jelly noodles made from rice flour with green food coloring (usually derived from the pandan leaf), shaved ice and palm sugar. Other ingredients such as red beans, glutinous rice, grass jelly, creamed corn, might also be included.
Ais kacang, literally meaning "ice beans", also commonly known as ABC (acronym for Air Batu Campur, meaning "mixed ice"), is a Malaysian dessert which is also common in Singapore (where it is called ice kacang) and Brunei. In Malaysia, almost all variants now contain a large serving of attap chee (palm seed), red beans, sweet corn, grass jelly and cubes of agar agar as common ingredients. Other less-common ingredients include aloe vera, cendol, nata de coco, or ice cream. A final topping of evaporated milk, condensed milk, or coconut milk is drizzled over the mountain of ice along with red rose syrup and sarsi syrup.
