☘️ Hot and Sour Soup

Here, I would like to share this super easy, yet absolutely delicious recipe with you. I hope you’ll have a go at making it.
The main ingredients for this soup are tofu, bamboo shoots, dried shiitake mushrooms, dried wood ear mushrooms, carrots, mung bean vermicelli (glass noodles), chilli bean paste, vinegar etc; cooked in a clear soup. The dish is characterised by it's sour, spicy, fresh, salty and fragrant flavours.
This soup is rich in nutrients such as protein, calcium, iron, dietary fiber, minerals, and vitamins. It is an indispensable and appetising healthy food which will helps to relieve heat in the hot summer.
Since dried shiitake mushrooms and dried wood ear mushrooms may not be something that people in the UK are familiar with, I have used fresh shiitake mushrooms in this recipe instead, and omitted the dried wood ear mushrooms. However, the traditional ingredients can be found in any Chinese supermarket, Amazon, and Sous Chef.
Shiitake mushrooms are one of the most popular mushrooms worldwide. They are prized for their rich, savory taste and diverse health benefits. Compounds in shiitake may help fight cancer, boost immunity, and support heart health.
You’ll only need 4-5 dried shiitake mushrooms (乾香菇) and 1 piece of dried wood ear mushrooms (木耳). The cooking method for these two ingredients are different to the fresh alternatives, if you have managed to find them and want to use them, let me know and I’ll be happy to explain.
I have found all the suppliers for the above ingredients and have attached the images in the comments below if you do want to give them a go.
You can get the fresh shiitake mushrooms, bamboo shoots and mung bean vermicelli from Tesco, just make sure you search online to ensure they stock them in the branch that you visit.

✳️ Ingredients:
(serves 4)
200g medium firm tofu
250g fresh shiitake mushrooms
1/2 medium carrot
60g tinned bamboo shoots
50g mung bean vermicelli
4 slices ginger
1 tbsp sunflower oil
coriander- washed and chopped to garnish
✳️ Seasonings:
* 1 tsp salt
* 1 tbsp light soy sauce
* 1/2 tsp ground white pepper
* 2 tsp sugar
* 2 tsp sesame oil
* 3 tbsp dark balsamic vinegar
* 2 tbsp white balsamic vinegar
* 1 tbsp chilli bean paste (豆瓣醬 Doubanjiang - you can add more if you can handle the heat)
* 2000ml water
* 1 tbsp vegan oyster sauce / vegan stir-fry sauce
* 3 tbsp corn flour
* 3 tbsp water
✳️ Method:
1. Soak the mung bean vermicelli in warm water until soft, then use scissors to cut into sections.
2. Gently wash and pat dry the tofu and fresh shiitake mushrooms and cut both into thick strips.
3. Peel the carrot, and cut into thin strips. Drain the bamboo shoots, rinse and cut into thin strips.
4. Cut the ginger slices into thin strips then finely dice into small cubes.
5. Mix the corn flour and water together to make a slurry and leave to one side.
6. Heat a large saucepan over medium heat, add oil, then add ginger and fry until slightly brown, stirring gently. Next, add the bamboo shoots and carrots, stir-fry together for a while, add salt, soy sauce, pepper, sugar and sesame oil, and fry until soft.
7. Pour in the black vinegar, white vinegar, vegan oyster sauce and chilli bean sauce. Then, add water and bring to a boil. Turn to low heat and continue to cook for 5 minutes.
8. Put the tofu and shiitake mushrooms in, gently move around with chopsticks or wooden spoon, and add the vermicelli, stirring everything around. Turn to medium-high heat and bring to a boil.
9. Whisk the corn flour water into the soup, a little bit at a time until you reach the desired consistency. If you like it thicker, add a bit more, or if you prefer thinner, add a bit less. After the soup is boiled, taste it and adjust the seasoning, then garnish with coriander.

疫情前跟朋友約了一間新開的店面「The Soup Spoon匙碗湯」✌️
聽說這是在新加坡超級有名的湯品專賣店喔!!!
我覺得超級適合我這種起床後第一餐都吃不太多的人🥰 因為它的湯可以選擇大碗或小碗
不用擔心吃不完會浪費
我們三個人分別點了三種不同口味的湯來喝
我朋友超級推薦 #匈牙利牛肉燉湯 的哈哈哈(他說他朋友有來吃過叫 他一定要點來試看看
我自己是點了 #東京雞肉燉湯 味道很不錯欸😋😋 不會太油膩喔~我個人認為是很清澈的一個雞湯!雞肉也很多
另外一個朋友則是點 #新加坡叻沙雞肉湯 我有給她偷喝了幾口哈哈哈 味道真的很道地欸!但是怕辣的朋友就不推薦哦
還有一個飯食類的 #辣螃蟹蛋拌飯 也真的蠻辣的🤣🤣🤣喜歡吃辣的 可以選湯加上這個組合~
整體來說我覺得選擇性真的算很多 你可以按照自己的當天食量去決定自己要選湯➕飯食類、沙拉類、捲 餅類還是鹹食類🤩
另外鮮食類的披薩麵包真的超級好吃!!!麵包的口感超級軟嫩 而且 裡面還有火腿和起司🧀️
吃完直接只有滿足可以形容了❤️
吃飽喝足後我還有給他加購一個蛋塔 嘿嘿😁 居然只要$20喔!!! 是不是超級划算又便宜的
重點沒有規定用餐時間可以好好享受美好的下午時光 整體環境很乾淨又很好拍照 是一個很適合和朋友聊天聚會的地點💡
如果聊天講太多話如果口渴的話只要加$30就可以多飲料可以喝哦哈 哈哈😂😂😂
所以不管你想吃甜的!還是鹹的!還是喝湯!喝飲料! 裡面應有盡有就不用擔心下一個地方要去哪裡吃吃喝喝了

Recipe: Singgang Bawal Putih (White Pomfret Sour Soup) (From The Malay Kitchen Book)

Ingredients:
50g yellow onions, cut into slices
10g garlic cloves, cut into slice
20g fresh tumeric , shredded (I didn't have any, so use 1/4 tsp tumeric powder)
2 fresh red chillies, cut into thin strips
2 fresh green chillies, cut into thin strips
30gm cooking oil (I used grapeseed oil)
2 dried tamarind pieces, rinsed or 40gm tamarind paste (I like mine sour, so I would have added another tamarind piece)
2tsp salt ( I used my homemade stock)
1/2 sugar
700gm water
700-800g pomfrets (approx 2 small pomfrets) diagonally halved across the fins
Preparation:
1. Place yellow onions, garlic cloves, ginger, tumeric, red chillies, green chillies and cooking oil into mixing bowl, saute 4mins / 120c / speed 1
2. Add dried tamarind pieces, salts, sugar and water. Boil 8min/ 100c/ speed 1
3. Add pomfrets, cook 2 mins 30 secs / Varoma / Reverse Mode / Speed spoon. Let it stand for 2 minutes. Serve hot

【材料】(保存期間:冷蔵で約4日)
●豚挽肉:約350g
●にんじん:1本
●長ねぎ:1本
●生姜
●えのき:2パック
●仙台味噌:大さじ
●お酒:大さじ4
●砂糖:大さじ2(もっと糖質を抑えたい方はラカントでもOK)
●醤油:大さじ1
●あごだしの白だし:小さじ1(干し椎茸を使わない場合は倍量くらい入れて下さい)めんつゆ、本だしでもOK
●あれば干し椎茸と戻し汁:2個くらいと100ml
●米油(普通の油でもOK)
●ブラックペッパー
●お好みで七味唐辛子(これがまためっちゃ合うんです♪)
※材料の分量を変更される方や味の濃さに不安がある方は調味料は少し少なめにして
味見をしてから足してあげると失敗しないでお好みの味の濃さに出来ますよ。

究極のご飯泥棒『やみつき肉味噌えのき』を作りました。
茸や出汁、肉や香味野菜の旨みが凝縮されていて
味の深みが凄い事になってます。
生姜やネギの香りも良いのですが
最後にかけたブラックペッパーの香りがまた
やみつきにさせてくれます♪
あまりにもご飯が進むのでご飯三合が秒で無くなりましたw
ご飯にはもちろん、パスタや中華麺に合わせても最高に美味しいですよ。
糖質制限をされている方には豆腐や焼いた厚揚げの上に乗せたり
油揚げの中に入れて焼いても最高に美味しいと思います。
とても簡単なので是非作って色んな物に合わせて食べてみて下さい。
[Ingredients] (Storage Period: about 4 days refrigerated)
● Minced pork: about 350g
● Carrot: 1 stick
● Leek: 1
● Ginger
● Enoki mushrooms: 2 packs
● Miso: 4 tablespoons
● Sake: 4 tablespoons
● Sugar: 2 tablespoons (you can use Lakanto if you want a lower sugar content)
● Soy sauce: 1 tablespoon
● Fish white soup stock: 1 tea spoon (if you don't use dried shiitake
mushrooms, double the amount)
● Dried shiitake mushrooms and broth (if available): about 2 and 100 ml
● Rice oil (regular oil is also OK)
● Black pepper
● Spicy powder to taste (It goes really well with it ♪ )
If you want to change the amount of ingredients, or if you are not
sure about the intensity of the flavor, use a little less seasoning.

The flavor of the mushrooms, soup stock, meat, and savory vegetables
is concentrated in this dish. The depth of flavor is amazing!
The aroma of the ginger and leek is good, but the black pepper at the
end makes it addictive ♪
It was so good that I finished three cups of rice in a second lol
It tastes great with rice, pasta or Chinese noodles.
If you are on a carbohydrate restriction diet, you can put it on top
of tofu or baked fried tofu, or bake it inside fried tofu.
It is very easy to make, so please try making it and eating it with a
variety of things.

Hello friends! Today we're going to share with you how to make a classic Thai dish: Tom Yum Goong (ต้มยำกุ้ง/ tom yam soup/ tom yum kung).
Tom yum goong is a type of sour and spicy Thai soup, usually cooked with shrimp or a mix of seafood, like squid, fish. In Thai language, tom means the boiling process, and yam means “mixed” or “salad”. The essential ingredients of tom yum are herbs such as lemongrass, galangal, kaffir lime leaves, these 3 main herbs give the soup flavor, they are absolutely necessary. The rest of the ingredients are lime juice, fish sauce, Thai Chili paste and red chili crushed. Tom Yum is spicy, sour, savory, and addictive. Hope you like this video.

How to make Tom Yum Goong Soup
Tom Yum Soup Recipe
☞ Yield: Serve 2~3
✎ Ingredients
shrimp 4, medium size
oyster mushrooms 80g
lemongrass 2 stalks
galangal 2 inch chunk
kaffir lime leaves 5
shallots 4
chilli Q.S
cilantro roots 2
Thai chilli paste 30g (1.5tbs)
fish sauce 35g (2.5tbs)
lime juice 20g (1.5tbs)
chicken stock 500ml
sugar 7g (1/2 tbs)
* If the chicken stock is unsalted, you can add 1/4 tbsp salt
*Most store-bought chicken stocks are salted, so don't need to add salt, you can mix 250ml stock with 250ml of water.
✎ Instructions
1. Use a scissor to cut the sharp point of the shrimp (telson and rostrum), but keep the head-on, also cut the antennas and legs. Then open the shell along the back of the shrimp and remove the shell and vein. Spoon the shrimp yellow in the head, it’s full of flavor, set aside.
2. Slice the galangal. Unlike ginger, galangal is too hard to cut through, so be carefully. Crush the lemongrass with the back of the knife, and cut into small chunks. Remove the thick vein from the lemon leaves, then tear into small pieces. Remove the leaves from cilantro, but keep the roots.
3. Pour oil into the skillet, add “shrimp yellow” and sauté over medium heat, add Thai chili paste, and cook until well combined.
4. Pour 500ml stock into the soup pot, bring to a boil, add cilantro roots, galango, lemongrass, shallots and lemon leaves, turn to the low heat, cook for 3 minutes.
5. Add shrimp yellow chili paste, stir slightly until well combined. Add mushrooms, cook until soft.
6. Add fish sauce, sugar and lemon juice.
7. Add shrimp and cook until they are all cooked through. Taste and add more seasoning if needed.
8. Turn off the heat and add chiles, but this is optional.
