Stay home Christmas Eve dinner with the family 🎄 featuring a mix of East and West cuisine starting from Lady Boss soy sauce chicken and scallion noodles. Even though the chicken was cold by the time we had it, it was still tender and flavorful. But for me, it was the scallion noodles which stole the show ❤️

It’s been a while since the family dine out for Japanese meal and we decided to head for Okinawan Ryouri!
Hits and misses, I say. The buta kakuni (braised pork belly) was no doubt melty and tender but the sauce was too sweet, just like the claypot miso eggplant from the set meal.
Stir fry bittergourd is a classic and of cos must order, even those who don’t usually like bittergourd can take it. Another must try is the Peanut Tofu. It isn’t tofu drenched in what peanut sauce but super creamy tofu that boasts a nutty flavor and served with shoyu. Portions for the starters like mosugu, marinated pork ear, seasoned kelp are pretty small for the price. The cold tofu with salted mackerel and bonito are quite fishy so I guessed that’s an acquired taste.
Desserts took extremely long to arrive so good luck on the waiting time if u like to end this place on a sweet note.

呢款甜品見到ig上人人都order,所以未去到就已經決定要叫。黑芝麻麻糬蛋糕既形狀幾似厥餅,但口感煙韌得來較為紮實,由於黑芝麻味很濃,所以我們是分開吃豆腐雪糕的,不然豆腐味就會被黑芝麻味所掩過。第一次試味噌焦糖醬,味道都幾有趣,其樣子像焦糖醬,但又甜中帶鹹,幾有層次。

全餐飯最最最喜歡的一款!超開心食到hidden menu既蛋糕,本身仲擔心我地係全日最後一輪既客人會唔會賣哂,好彩仲有!雖然係重芝士蛋糕,但係口感非常軟滑,唔會好似newyorkcheesecake咁dense,質感介乎basque burnt cheesecake 同日式芝士蛋糕中間,加埋鳳梨內餡更為清新,炎炎夏日食真係一流,味道方而好有層次,除左表面有黑椒味,更配上海鹽cream同橄欖油。
冷素麵 Cold Somen Noodles ($72)
本身打算淨係食甜品,但係天氣實在太熱,所以都係叫個冷麵消消暑。素麵非常幼身,而且口感偏硬身,食落完全無一般麵食果種飽滯感,食完感覺好清涼,雖然素麵,但味道方面一d都唔平素無奇,特別係有溏心蛋既配合!平時好少係cafe叫主食,真係估唔到有驚喜!

This is an easy and very tasty rice bowl that you don't need to cook during the hot season. You can just arrange what you have in the refrigerator on the rice bowl.

[Tofu Don (Tofu Bowl)]
Steamed Rice, as much as you like
Used Katsuobushi (Bonito Flakes), saved after making the dashi stock
200g Soft Silken Tofu, 1/2 pack (7.1 oz)
1 Egg Yolk, optional
20g Soft Shirasu Whitebait, kamaage shirasu (0.7 oz)
20g Takanazuke, pickled takana leaves fermented with lactic acid, substitute: suguki, nozawana or hiroshima pickles (0.7 oz)
Tenkasu, crunchy bits of deep fried flour-batter
Spring Onion Leaves
Toasted White Sesame Seeds
[Dashi Soy Sauce] (about 150 ml/5.1 fl oz, substitute: regular soy sauce or mentsuyu, noodle soup base)
80ml Mirin (2.7 fl oz)
100ml Soy Sauce (3.4 fl oz)
50ml Water (1.7 fl oz)
3g Dashi Kombu Seaweed, shredded used kombu can be used in miso soup (0.11 oz)
10g Katsuobushi (Bonito Flakes) (0.35 oz)
Recipe Notes:
As a substitute for the takana pickle, there are lactic acid fermented pickles such as Kyoto's Suguki, Hiroshimana, and Nozawana pickles.
When using this dashi soy sauce as a dipping sauce for soba or udon noodles, dilute 1 part dashi soy sauce with 2 parts cold water.
When making the dashi soy sauce, you can add sake to the mirin instead of the water and evaporate the alcohol together. The sake will add a savory flavor to the dashi soy sauce, making it even more delicious.
You can store the chopped spring onions in the refrigerator for 3 to 4 days. Line a paper towel in a food storage container and place the spring onions in it.

●水:約350ml(お湯と水合わせた量)
●お好みでブラックペッパー、ホワイトペッパー、小葱、ラー油
※味の濃さは350ml足した後に味見してからお好みに調整して下さい。
※辛みが苦手な方は豆板醤を味噌に変えてもOK
※鶏油は温度が低いと固まってしまうのでスープを冷蔵保存する場合や氷で冷やす場合は食べる直前にかけて下さい。(冷蔵で約1か月保存可能です)

時間がある場合は鶏ハム(サラダチキン)や鶏油も是非作ってみてね!
[Ingredients]
● Somen noodles: 200g
● Mirin: 2 tablespoons
● Soy sauce: 2 tablespoons
● Chicken broth: 2 teaspoons
● SOMI shantung: 1 teaspoon (you can also use Weipa)
● Sugar: 1 teaspoon (you can use lakanto to reduce the sugar content)
● Dou ban jiang: 1 teaspoon (gochujang is also okay)
● Bonito powder: 1 to 2 teaspoons
● Chicken oil or sesame oil: as desired
● Water: About 350ml (hot and cold water combined)
● Black pepper, white pepper, small green onion, Ra-yu to taste
※Taste after adding 350ml and adjust the taste to your liking.
※If you don't like the spiciness, you can replace Dou ban jiang with miso.
※Chicken oil hardens at low temperatures, so if you refrigerate it, pour it over the soup just before eating. (It can be refrigerated for about a month)

It has a deep flavor and richness that you can't believe it was made in just 3 minutes, yet it's super light, healthy, and the most addictive soup that you can eat every day and never get tired of.
This is a recipe that I am proud to recommend to everyone who has tried it, and I have been told many times that they have never had such a delicious somen dish♪
It tastes great with just the soup and somen, and of course it tastes great with Chinese noodles too.
