隨着年紀增長,新陳代謝減慢,如食量與年輕時不變,當然容易變胖。而從中醫角度來看,肝、脾、腎虛弱都會引致中年男士害怕面對的問題:肝血不足腎氣虛,頭髮容易變白或脫落,脾虛濕盛則容易變胖、水腫、疲倦不願動。至於面油問題則是濕熱體質人士的症狀,他們怕熱又易出汗,汗液比較黃而多帶有臭味。肝脾腎需慢慢調理,先解決濕熱問題吧!飲食宜清淡,多吃祛濕食物如薏米、赤小豆、綠豆、苦瓜等;避免喝咖啡、奶茶、啤酒;減少油膩感,人都精神一點。
食材小貼士:
茯苓性平,有利水滲濕、健脾安神的作用,適合各種體質人士。
節瓜荷葉薏米花生湯
功效:清熱利濕,消腫減肥,紓緩身體四肢困重、肥胖等症狀。
材料:節瓜2個、荷葉30克、乾海帶約60克(或新鮮海帶一塊)、生薏米30克、茯苓15克、赤小豆40克、花生30克
做法:
1. 所有材料洗淨,乾海帶泡水備用,節瓜去皮切大塊備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Soup to eliminate ‘greasiness’, avoid being an oily middle-aged man
Do you have the impression that all middle-aged men look the same? They have become plumper, with a beer belly and a receding hairline. Besides experiencing balding at the crown, some of their faces look oily too. Do all middle-aged men really look like this?
As we age, our metabolism reduces. If we still maintain the dietary habits that we had in our youth, we can gain weight easily. From the perspective of Chinese Medicine, weakness in the liver, spleen and kidneys is the primary cause for middle-aged men’s problems.
The lack of blood in the liver and the weakness of qi in the kidneys would cause hair to turn gray or drop easily. Weakness in the spleen and the accumulation of dampness in the body can cause us to look plump, experience fatigue and water retention. As for individuals with oily faces, that is related to damp heat body constitution. They have aversion to heat and sweat easily, and their sweat would leave a yellow stain with a bad odor on their clothes.
It is important to care for the liver, spleen and kidneys. Since we are in the summer season, let us solve the damp heat problem first! Start by eating a lighter diet and consume ingredients that can dispel dampness from the body, such as coix seed, rice bean, green bean, and bitter gourd. Avoid drinking coffee, milk tea, and beer. By cutting down on greasy food, we should become more energetic.
Tip on the ingredients:
Poria with hostwood is mild in nature. It helps to promote diuresis, dispel dampness, strengthen the spleen and calm the mind. Suitable for all body types.
Hairy gourds and lotus leaf soup with coix seeds and peanuts
Effects: Clears heat and dispels dampness, reduces swelling and aids weight loss. Relieves heaviness in body and limbs, obesity.
Ingredients:
2 hairy gourds, 30g lotus leaf, 60g dried seaweed(or 1 piece of fresh seaweed), 30g coix seeds, 15g poria with hostwood, 40g rice beans, 30g peanuts
Preparation:
1. Rinse all ingredients thoroughly. Soak the dried seaweed. Cut the peeled hairy gourds into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

露營時大多以燒烤為主,容易上火,試想想最後有一碗湯有助消化又好味的熱湯,感覺很幸福吧!露營時煮的湯以簡單為主,蔬菜味噌湯是日本人的家常菜,材料豐富,配碗白飯已可成簡單的一餐,從中醫角度來看,味噌有補中益氣、滋養心腎功效,由於味噌是發酵食品,含有豐富益生菌、及抗氧化功效,加入能有助消化的白蘿蔔更適合!要注意不要把味噌於烹調時最後才加進去,因為味噌加熱過久會令香味流失。
食材小貼士:
白蘿蔔 — 性寒,具健胃消食、化痰止咳、清熱利尿、生津止渴的功效,可紓緩消化不良、胃脹腹脹等症狀。
蔬菜味噌湯
功效:健胃消食,紓緩消化不良、胃脹、便秘等症狀。
材料:白蘿蔔半條、洋蔥半個、乾海帶適量、鮮菇1包、蒟蒻1件、味噌5湯匙、蔥花適量
做法:
1. 所有材料洗淨,洋蔥去皮切塊;白蘿蔔去皮切薄片;蒟蒻切片備用。
2. 熱鍋下油,加入洋蔥、白蘿蔔炒至稍為軟身、再加入鮮菇及蒟蒻炒香。
3. 加入水份足夠蓋過所有食材,武火煮至水滾,調文火煮10分鐘,將味噌過篩加入,最後灑上蔥花即可。
注意:每款味噌鹹度不同,加入部份味噌後宜先試味再決定份量。

Miso soup with vegetables

Ingredients: 1/2 white radish, 1/2 onion, dried kelp, 1 pack fresh mushroom, 1 piece konjac, 5 tablespoon miso, chopped spring onion to taste
1. Rinse all ingredients thoroughly. Cut peeled onion into pieces. Cut peeled white radish into thin slices. Cut konjac into pieces.
2. Heat the pot with oil, add onion, white radish and cook until softened. Add fresh mushroom and konjac and cook until fragrant.
3. Add enough water to cover all ingredients. Cook on high heat until boiling. Turn to low heat and simmer for 10 minutes. Add miso by straining over a fine-mesh sieve. Sprinkle with chopped spring onion to finish.
Note: Each miso has a different levels of saltiness. After adding some miso, you should taste it first before deciding on the amount to use.

眼屎為眼睛的分泌物,由油脂、淚液、灰塵等結合而成,偶爾出現屬正常,但如果眼屎出現次數增多就要注意,中醫角度認為眼屎多是一種症狀,反映身體有熱,例如工作忙碌、經常熬夜晚睡,就會導致肝火上升以致眼屎增多。如果身體有濕熱,眼屎更會變得較黏稠。想紓緩眼垢多的症狀,飲食宜清淡,少吃生冷、辛辣、煙、酒、濃茶咖啡等刺激性及重口味食物,適量進食有清熱祛濕功效的食物和飲用湯水。
如果眼屎變成黃色,伴有雙眼通紅、痕癢或赤痛等症狀,有機會是眼睛受細菌或病毒感染,宜就醫處理。而嬰兒多眼屎情況很普遍,因為嬰兒淚腺發育未健全,多注意清潔,隨著長大情況會逐漸改善,如果情況持續宜諮詢專業人士意見。
清熱祛濕湯水小貼士:
適當地添加清熱祛濕的食材如荷葉、生薏米、綠豆、土茯苓等。
霸王花老黃瓜章魚湯
功效:清熱祛濕,紓緩眼垢多、多面油、口臭、嗜睡等症狀。
材料:乾霸王花2朵 (或鮮霸王花1-2朵)、老黃瓜1個、海帶60克、花生30克、章魚乾1塊、蜜棗2枚
做法:
1. 所有材料洗淨,章魚乾切條,霸王花用水泡洗乾淨後切段;海帶泡水15分鐘;老黃瓜切塊
2. 2. 鍋中加入2500毫升水,放入全部材料,海帶連水加入鍋中,武火煮至水滾,隨個人喜好把海帶取出,調文火煮2小時,最後下鹽調味即可。
3. 注意:脾胃虛寒者容易腹瀉不宜飲用。

Clear heat and dampness to clear your eye boogers
Eye boogers are the discharge from the eyes. They are mainly made up of fats, tears and dusts. It is normal if they appear occasionally, but we need to take note of it if the frequency increases.
Chinese Medicine opined that eye boogers are a symptom that reflects body heat, which is a result of a hectic work schedule and staying up late. The increase in eye boogers is due to the accumulation of body heat in the liver. If an individual has damp-heat body condition, his or her eye boogers will become thicker and stickier.
In order to improve the condition, eat light and clear food, avoid eating raw, cold, spicy and heavily seasoned food; avoid drinking alcohol and concentrated coffee; avoid smoking. Consume food that can clear heat and dampness, and drink more soup as well.
If the eye boogers turn yellow, coupled with conditions like redness, itch or pain in the eyes, it could mean bacterial and viral infection. Individuals with these eye conditions should seek immediate treatment. This is common among toddlers, as their tear ducts have yet to fully develop, therefore, we need to be mindful of their hygiene. As toddlers grow older, the situation should improve; but if the same condition persists, do seek professional medical advice.
Tips for soup to clear heat and dispel dampness:
Appropriately add in ingredients such as lotus leaf, coix seed, munk bean, smilax etc.
Night-blooming cereus soup with old cucumber and dried octopus
Effects: clears heat and dispels dampness. Suitable for frequent eye discharge, oily face, bad breath and lethargy
Ingredients: 2 dried night-blooming cereus (or 1-2 fresh night-blooming cereus), 1 old cucumber, 60g seaweed, 30g peanut, 1 dried octopus, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Slice dried octopus. Cut night-blooming cereus. Soak seaweed for 15 minutes. Peel and cut old cucumber into pieces.
2. Combine all ingredients with 2500ml of water, add seaweed with water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hour. Add salt to taste.
Note: Not suitable for those asthenic cold spleen and stomach, and those prone to diarrhea.

そうめんアレンジ2選
各2人分
そうめんチャンプルー
材料:
そうめん(乾麺) 100g
サラダ油(そうめんにまぶす用) 大さじ1/2
スパム(ひと口大) 200g
ニラ(3cm幅) 50g
卵 2個
酒 大さじ1
しょうゆ 大さじ1
塩 少々
コショウ 少々
サラダ油 大さじ1
かつお節 適量
作り方:
1.沸騰した湯にそうめんを入れ、袋の表記時間より30秒短く茹でる。ザルに上げ、流水で洗ってぬめりを取り、水気をしっかり切ってサラダ油をまぶす。
2.ボウルに卵を溶きほぐし、塩、コショウを加えて混ぜる。
3.フライパンにサラダ油を入れて中火に熱し、卵液を流し入れる。大きくかき混ぜながら半熟状になったら、一旦皿に取り出す。
4.(3)のフライパンの汚れを拭き取って再び中火に熱し、スパムを炒める。焼き色が付いたらニラを加えてサッと炒め、(1)を加えて混ぜ合わせる。
5.酒、しょうゆ、塩、コショウを加えて調味し、(3)を戻し入れて混ぜ合わせる。
6.器に盛り、かつお節をのせたら、完成!
お好み焼き風そうめん
材料:
そうめん(乾麺) 100g
キャベツ(みじん切り) 100g
豚バラ肉薄切り 120g
卵 1個
薄力粉 大さじ3
水 大さじ3
塩 少々
サラダ油 大さじ1
お好みソース 適量
マヨネーズ 適量
青のり 適量
かつお節 適量
作り方:
1.沸騰した湯にそうめんを入れ、袋の表記時間通り茹でる。ザルに上げ、流水で洗ってぬめりを取り、水気をしっかり切って食べやすい長さに切る。
2.ボウルに卵を溶きほぐし、薄力粉、水、塩を加えて混ぜ、(1)、キャベツを加えてさっくりと混ぜる。
3.フライパンにサラダ油を入れて中火に熱し、(2)の半量を入れて丸く形を整え、豚バラ肉をのせる。
4.焼き色が付いたら裏返し、蓋をして5分ほど蒸し焼きにする。(同様にもう1枚焼く。)
5.器に盛り、お好みソースを塗ってマヨネーズをかけ、青のり、かつお節をかけたら、完成!

Stir fry somen
INGREDIENTS
100g somen
1/2 tablespoon vegetable oil (to mix with somen)
200g spam meat (bite size pieces)
50g Chinese chive
2 eggs
1 tablespoon sake
1 tablespoon soy sauce
A pinch of salt
A pinch of pepper
1 tablespoon vegetable oil
Some bonito flakes
PREPARATION
1. Add somen to boiling water, cook 30 seconds less than the instruction. Transfer the somen to a fine mesh colander, rinse with running water, drain well. Mix with oil.
2. Beat eggs in a bowl and season with salt and pepper.
3. Heat oil in a pan over medium heat, add beaten eggs. Stir until it's cooked half way. Transfer eggs to a plate.
4. Wipe the pan with a paper towel. Bring the heat back to medium and stir-fry spam meat. Add Chinese chives to stir lightly, then put the somen (1) and mix.
5. Add sake, soy sauce, salt, and pepper. Bring eggs (3) back into the pan.
6. Transfer the somen to a plate, sprinkle bonito flakes.
Okonimiyaki somen
INGREDIENTS
100g somen
100g cabbage (chopped)
120g pork belly slice
1 egg
3 tablespoons soft flour
3 tablespoons water
A pinch of salt
1 tablespoon vegetable oil
Some okonomi sauce
Some mayonnaise
Some dried seaweed flakes
Some bonito flakes
PREPARATION
1. Add somen to boiling water, cook as the instruction. Transfer the somen to a fine mesh colander, rinse with running water, drain well. Cut the somen into bite size pieces.
2. Beat an egg in a bowl, then add soft flour, water, salt, the somen (1) and cabbage to mix.
3. Heat oil in a pan over medium heat, pour the half of somen mixture (2), make a round shape, and place pork belly on top.
4. When the bottom part is browned and cooked, it's time to flip. Smother for 5 minutes with lid. (Repeat the process to make one more okonomiyaki-somen.)
5. Transfer the okonomiyaki-somen to a plate. Spread okonomi sauce, add some mayonnaise and sprinkle dried seaweed flakes and bonito flakes. Enjoy!
